2 1/4 cups whole wheat flour
1 3/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 beaten eggs
2 cups buttermilk
1/2 cup molasses
1/3 cup honey
2 teaspoons finely shredded oranges or 2 teaspoons finely shredded lemons, rind of
1 cup chopped walnuts
3/4 cup raisins

Steps:

  • In a large bowl stir together flours, soda, and salt, set aside.
  • In separate bowl combine eggs, buttermilk, molasses, honey and citrus peel, add to dry ingreadients, stirring'til blended.
  • Stir in nuts and raisins.
  • turn into two greased 8 x 4 x 2 inch loaf pans.
  • Bake in 350 degree oven for 55 minutes, covering with foil the last 15 to 20 minutes.
  • Remove from pans and cool on wire rack.

1 cup sugar
2 eggs
2 large bananas
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup chopped nuts

Steps:

  • Mix together butter, sugar, eggs, and bananas.
  • Add the rest of the ingredients and blend.
  • Spray a 9x5 inch pan with oil spray.
  • Add mix to pan and bake at 350 degrees for 50 minutes or until toothpick comes out clean.
  • After removing from oven, allow to cool for 5 minutes then let finish cooling on a cooling rack.

1 1/2 c raisins
2 Tbsp butter
2 tsp baking soda
1 c hot water
1 large egg, beaten
2 c flour
2/3 c sugar

Steps:

  • 1. Spray or grease 3 clean #3 cans (like from corn or beans). Sprinkle a couple of spoons of flour in one and roll around to coat. Pour the flour into the next one and repeat. Continue this with the third can. Discard reamining flour. Place cans in a cake pan. Preheat oven to 350 degrees.
  • 2. Combine raisins, and soda. Add butter. Pour over the 1 cup of hot water and stir. Let set until cool.
  • 3. Add reamining ingredients and mix until smooth.
  • 4. Divide batter amongst the three cans. Bake at 350 degrees for 20-25 minutes until a toothpick or cake tester comes out clean.
  • 5. Remove from oven and let cool for a few minutes in the cans. Run a knife around the outside of the can and invert onto a clean dishtowel. Finish cooling.
  • 6. If the bread does not come out, punch a hole in the bottom of the can to release the vacuum.

This is the recipe for date-nut bread that my grandmother always made around Christmas time. Definitely a family favorite! For best results don't use a glass pan.

½ cup raisins
1 ½ cups boiling water
2 teaspoons butter, or as needed
1 teaspoon baking soda
1 cup chopped pitted dates
7 pitted prunes, chopped
¼ cup unsalted butter, softened
1 cup sugar
1 teaspoon vanilla extract
1 egg, well-beaten
1 ¾ cups all-purpose flour
½ teaspoon salt
1 cup chopped walnuts

Steps:

  • Put raisins in a bowl. Pour boiling water over raisins; soak until raisins have flavored the water, about 20 minutes. Drain raisins, reserving the water. Discard raisins.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan with butter.
  • Bring reserved water to a boil in a small saucepan. Measure 3/4 cup boiling water into a bowl. Stir baking soda into water.
  • Put dates and prunes in a large bowl. Pour baking soda-water over dates and prunes; add unsalted butter and stir until melted. Stir sugar and vanilla extract into the fruit mixture; let cool to room temperature.
  • Stir egg into the fruit mixture to evenly coat. Mix flour and salt together in a small bowl; add to fruit mixture and stir. Fold walnuts into the mixture and pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 to 65 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

1 teaspoon salt

2 cups sour milk (2 T vinegar, add milk to measure 2 cups)
1/3 cup molasses
1/2 cup honey
2 teaspoons shredded orange rind
1 cup chopped walnuts
3/4 cup raisins

Steps:

  • Stir together the flours, baking soda and salt.
  • In another bowl, mix eggs, sour milk, molasses, honey, and orange peel.
  • Add to dry ingredients; stir until well mixed.
  • Fold in nuts and raisins.
  • Place into 2 greased 8in loaf pans.
  • Bake at 350* for about 55 minutes, until pick comes out clean.
  • Cool in pan 10 minutes, remove and cool completely.

GRANDMA'S BROWN BREAD (GRAHAM BREAD)

A very old-fashioned basic quick bread using graham (or whole wheat) flour. My Grandma made it at all holidays... hence the name. She was born in the mid 1880's and probably learned the recipe from her own mother. I had to write it down by standing at her elbow as she made it! Since there is no shortening in this recipe... I recommend whole milk... but skim also works. Make sure to use baking soda... NOT baking powder. Bread is moist, dense, and flavorful.

2 cups graham flour (whole wheat flour)
1 cup white flour
1 teaspoon baking soda (NOT baking powder)
1 cup molasses (dark is excellent..light OK too)
1 cup milk
1 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 300 degrees F.
  • Grease medium sized loaf pan.
  • Mix dry ingredients together.
  • Add wet ingredients to dry.
  • Fold in nuts if desired.
  • Batter will be thick.
  • Bake in very slow 300 degree oven for about 55-60 minutes. Test near center with wooden skewer.
  • Serve warm or room temperature with butter or your favorite spread. Or alone with a cuppa tea!

1 tsp salt
1 1/4 tsp baking powder
1 2/3 cups sugar
2/3 cup oil
2/3 cup buttermilk, divided
Chopped nuts - optional
1 1/4 cups ripe banana, mashed
3 eggs

Steps:

  • Preheat oven to 350 degrees F. Sift dry ingredients together
  • Add oil, 1/3 cup buttermilk, chopped nuts and bananas. Beat for 2 minutes. Add eggs and remainder 1/3 cup buttermilk, beat for 2 minutes.
  • Pour into greased and floured into 13 x 9 baking dish.
  • Bake for 45-50 minutes.

4 teaspoons baking powder
1 1/2 teaspoons salt
1 teaspoon baking soda
2 cups sugar
1 cup Crisco (Butter Flavor)
4 eggs

1 1/2 cups walnuts (Chopped)

Steps:

  • Sift flour, baking powder, salt and sugar together in a bowl.
  • Add eggs, Crisco and 1 cup of the ripened, mashed bananas.

My mother, Belen, who passed away at the age of 100 had been making this for as long as I can remember. Please follow the instructions regarding putting the vinegar in the milk in one cup and the baking soda in warm water in another before mixing it with other ingredients. It makes a difference.

1-1/2 cups boiling water
1 tablespoon butter
2 teaspoons salt
1/2 cup sugar
1 cup old-fashioned oats
2 packages (1/4 ounce each) active dry yeast
3/4 cup warm water (110° to 115°)
1/4 cup molasses
1/4 cup packed brown sugar
6 to 6-1/2 cups all-purpose flour, divided

Steps:

  • In a small bowl, combine the boiling water, butter, salt and sugar. Stir in oats; cool to lukewarm. In a large bowl, dissolve yeast in warm water. Stir in the molasses, brown sugar and 1 cup flour. Beat until smooth.
