GRANDMA'S LIME GREEN JELLO SALAD RECIPE (WITH COTTAGE CHEESE & PINEAPPLE)
Grandma's Lime Green Jello Salad Recipe (with Cottage Cheese & Pineapple) is a retro lime jello salad that my husband's grandma made for many holiday meals. To continue with the tradition, I make this every Thanksgiving.

Steps:
- In a large multi-cup measuring cup (I use my 4 cup Pyrex), add all of the reserved pineapple juice and then add enough water to the juice to make a total of 2 cups. Pour into pot and bring just to a boil.
- Add the lime Jell-o mixes to the boiling pineapple juice/water and stir until dissolved. Remove from heat, allow to cool just slightly.
- In a mixing bowl, stir together the mayo and evaporated milk. Combine until very smooth. Slowly stir in the Jell-o mixture until all is incorporated with the mayo/milk mixture. Stir in the crushed pineapple, cottage cheese, and walnuts.
- Pour mixture into an 8×8″ glass casserole pan. Cover and refrigerate for at least 4 hours or overnight (preferred).
GREEN JELLO SALAD RECIPE

- Dissolve the gelatin in 2 cups boiling water, about 2 minutes. Vigorously whisk in the cream cheese until well blended. Small pieces may remain. Mix in the crushed pineapple (along with the juices) and 1/2 cup cold water. Pour into desired serving dish. Cover and refrigerate at least 2 hours, or until set. Garnish with pecans, if desired.

GRANDMA VI'S GREEN JELLO SALAD
Served at my grandma's house for every holiday occasion as long as I can remember. You wouldn't know there is cabbage in this unless you saw the ingredient list! Tastes like fruit and whipped cream!

Steps:
- Drain juice from can of crushed pineapple into a measuring cup.
- Add enough pineapple juice to make 2 cups.
- Bring the 2 cups of juice to a boil.
- Remove from heat and dissolve completely 2 pkgs.
- of lime jello in the juice, stir, stir, stir.
- Add all the cream cheese pieces using a gravy whip to blend.
- Add 6 ice cubes and pineapple, stir until ice dissolves.
- Put in the freezer until cool and syrup-like.
- Fold in chopped nuts, cabbage (shredded very fine), and Cool Whip.
- Refrigerate several hours.
GRANDMA MAX'S LAYERED JELLO SALAD
This is one of my favourite memories from going to my Grandma's house. She would make this every Thanksgiving and Christmas holiday and there were hardly any leftovers. My Grandma passed away in 2003 and now her recipe has become a staple in my house during those occasions. I hope you enjoy it has much as my family does!

Steps:
- Prepare the cherry jello powder according to the directions on the package in a glass mixing bowl. Put it in the fridge and let it set.
- Once set, prepare the dream whip according to the package and cut the cream cheese into small chunks, (if you're not a fan of chunks, you could whip it all together). Mix the cream cheese into the dream whip and layer it on top of the cherry jello. Let it set in the fridge.
- *You could save yourself time if you do step 1 and step 2 together and let both set in the fridge at the same time.*.
- Drain the crushed pineapple and rinse with cold water approximately 3-4 times to remove most of the acidic juice. Make sure to squeeze out the excess water with your hands.
- Make the lemon jello powder according to directions and let it partially set.
- Mix the pineapple into the lemon jello and layer over top of the dream whip mixture.
- Let set in the fridge and serve. (For the best results, put saran wrap over the salad and let it set overnight).
- Note: The dream whip should be one of the small envelopes.

GREEN JELLO SALAD
This is a refreshing jello salad that is a staple of our family get togethers. This is a recipe from my Grandmother. We now joke about making this jello months in advance (don't do it!!), because my Grandmother brought it for a family dinner and said she had made it weeks before - we could not eat it, but did not have the heart to tell her. It was the beginning signs of Alzheimer's :( for her. I hope she is not spinning in her grave since I am sharing this recipe. We miss her and think of her when we have this jello for Thanksgiving and Christmas.

Steps:
- Dissolve gelatin in 2 1/4 cup boiling water.
- Drain pineapple and add 1/4 cup of the pineapple liquid to the gelatin mixture.
- Add pineapple to gelatin.
- Pour into 9 x 13 glass casserole and refrigerate until soft set.
- Mix the softened cream cheese and milk together until combined.
- Add the nuts to cheese/milk mixture.
- Mix the jello mixture and cream cheese mixture together.
- Refrigerate overnight and cut into squares to serve.
GRANDMA'S JELLO SALAD
When ever I serve this dish I get rave reviews. My grandma used to make this for our holiday meals; it was the only thing that NEVER had leftovers. When most people hear the ingredients. they are often skeptical until they try it. So far it has won over everyone that has tried it. It is so simple to make that you can have it any night. Prep time is time to combine items and cook time is time to chill. Servings are approx.

- Mix jello powder and whipped cream in bowl until jello is evenly dissolved.
- Add cottage cheese, 1/2 mandarin oranges (1 can), whole can of fruit cocktail, and walnuts stir until well mixed.

- Whisk in mayonnaise until combined. Chill until slightly set.

GRANDMA NORMA'S JELL-O SALAD (CRANBERRY-APPLE JELL-O SALAD)
This is called "Grandma Norma's Jell-o" in my family because my cousins' Grandma Norma used to make it for holiday dinners. Now that Grandma Norma hasn't been with us for many years, the tradition lives on as my Grandma Katie makes it each Thanksgiving. It's my favorite part of the Thanksgiving dinner, and I always get to take home all the leftovers. Last year Grandma Katie finally gave me the recipe, so I thought I'd share it with you all. Do it in a nice cut glass bowl for easy serving, or use a mold if desired. The walnuts are nice but not necessary, and we don't use them if small children will be dining with us. Cook time is chill time.

GRANDMA'S MOLDED TOMATO SALAD
I used to joke with my Mother about Grandma's "Moldy" Tomato salad. If you have heard of tomato aspic, this is somewhat of a variation of that dish. It is very easy and really so tasty. One of my favorite Jello Salads.

Steps:
- In a medium to large saucepan, heat tomatoes to just boiling and add gelatin. Stir until gelatin is dissolved. Remove from heat and chill until slightly thickened, usually between 45 minutes to one hour. Check occasionally so it doesn't set too much.
- When thickened, stir in the remaining ingredients thoroughly and pour into a lightly oiled 6 cup mold or 9x15 baking pan. Chill til completely set.
- To serve, unmold on lettuce leaf lined plate. Or if in a baking pan, cut into squares and serve.
