GRANDMA TERRY'S SOUTHERN BEANS



Grandma Terry's Southern Beans image

There's nothing like going to Grandma Terry's a big plate of beans and fried cornbread. A simple and very inexpensive meal.

1 lb great northern bean
3 slices bacon
2 -3 quarts water
salt and pepper

Steps:

  • Start in the morning.
  • Empty bag of beans into a strainer and clean, removing any bad ones and tossing them away.
  • Pour beans and bacon to a dutch oven or stock pot. Add water til it's about 2 inch or so above the beans.
  • Cook on medium heat, stirring ocationally and adding water as needed, til beans are tender. Around 4-5 hours.
  • Lower heat to low and season to taste with salt and pepper. Continue simmering until ready to serve. Soups should thicken as it simmers.
  • Remove bacon before serving.

This is my grandma's chili recipe. It's not hot, but very tasty. I've even served it to people who said they didn't like chili, but they all liked this dish.

Number Of Ingredients 10

1 and ½ pounds ground beef, chuck preferred
1 medium green bell pepper, diced
1 small-medium onion, diced
2 large cans peeled whole tomatoes, blended
2 cans dark red kidney beans, drained
1 can condensed tomato soup
1 to 2 cloves garlic
2 tablespoons regular chili powder
¼ teaspoon crushed red pepper
to taste, salt and pepper

Steps:

  • Season the beef with salt and pepper, and brown over medium-high heat in a 5 to 6 quart dutch oven or stew pot. Add the onion and green pepper, and cook for another 5 minutes, or until the vegetables are slightly softened. Add the remaining ingredients and bring to a boil. Reduce heat to low and simmer for 45 to 60 minutes, stirring about every 15 minutes. Serve immediately or refrigerate for 24 hours for a more complex flavor. Top with shredded cheddar, crackers, or your favorite chili topping.

2 (14.5 ounce) cans stewed tomatoes, undrained

1 yellow onion, cut into 1/2-inch dice
4 cloves garlic, minced
1 (1.25 ounce) package chili seasoning mix, or to taste
1 dash hot sauce, or to taste
salt and ground black pepper to taste

Steps:

  • Cook and stir ground beef in a skillet over medium-high heat until crumbly and browned, 5 to 10 minutes. Drain.
  • Stir drained ground beef, black beans, kidney beans, tomatoes, green bell peppers, yellow onion, garlic, and chili seasoning together in a large pot over medium-high heat. Bring to a boil, reduce heat to low, and simmer, stirring occasionally, until vegetables are slightly tender and chili is heated through, 15 to 20 minutes. Season with hot sauce, salt, and ground black pepper to taste.

The "new" Recipezaar has cut off about half of my directions after step 3 during the switch. sad. sorry to any new readers. Maybe I'll have time to come back and make corrections someday, though I rarely frequent this site now because of how much more difficult it is to navigate. this is a passed down, tried and true chili recipe. i always get a ton of compliments on it. serving ideas: cheese, fritos, cornbread, saltine crackers (we love them all -- depending on our mood!)... note -- this is one of those recipes that comes from my brain and test tastes. :) so a couple of notes: -- i have found that Lawry's chili seasoning gives the best overall taste. and plus, that's just the way grandma made it! -- i use any where from one to two pounds of meat and adjust the ingredients accordingly. -- i often use nearly 1 and 1/2 packets of chili seasoning, especially if the meat portion is on the heavy side. -- i often use some of the stewed tomato juice and chili bean juice to help add flavor.

1 lb ground turkey or 1 lb ground beef
1 (1 1/4 ounce) package chili seasoning mix (mild or hot)
3 (16 ounce) cans kidney beans, drained (light or dark)
2 (15 ounce) cans hormel turkey chili with beans
1 (14 1/2 ounce) can whole tomatoes
1 teaspoon garlic powder
1 teaspoon onion powder
salt and pepper
water

Steps:

  • In a large pot, add beans, turkey chili, and using the cans, add 4 cans of water. Season with salt and pepper. Heat on medium/medium-high.
  • In a blender or processor, give a few pulses to the tomatoes until thick, leaving only a few chunks left.
  • In a large skillet, brown ground turkey, seasoning with garlic, onion and salt and pepper, until no longer pink. Drain. Return to skillet.
  • Add tomato puree and chili seasonin and bring to a boil. Then let simmer for about 20-30 minutes, letting the flavors absorb.
  • Add meat mixture to the beans, cover and simmer for atleast 30 minutes. Better to let simmer for 2-3 hours.
  • NOTE.
  • For more flavor, saute chopped onion with the meat while it's cooking. I don't cause of my husbands taste.

1 (14 1/2 ounce) can chopped tomato puree (I use large 29 oz. can crushed tomatoes)

1 onion, chopped

2 zucchini, chopped
2 stalks celery, chopped
2 garlic cloves, chopped
1 (4 ounce) can diced chilies
1 -2 jalapeno, chopped (depending on how much heat you want)
1 tablespoon chili powder
2 teaspoons cumin
1 tablespoon dried parsley
1 tablespoon dried oregano
1 tablespoon dried basil
1 tablespoon cilantro (optional)

Steps:

  • In a saucepan, saute the onion, bell pepper, zucchini, and celery for about 5 minutes.
  • In a slow cooker, combine black bean soup, kidney beans, garbanzo beans, baked beans, tomatoes, corn, onion, bell pepper, zucchini, jalapeno, chilies, and celery.
  • Season with garlic, chili powder, cumin, parsley, oregano, basil (and cilantro if using).
  • Cook for about 6 hours on low.
  • Serve with tortillas, cornbread, rice, or French bread.
  • Enjoy!
  • This freezes well!
  • Leftovers are good on top of nachos!

Pamela R. says this is an old family recipe passed down from her southern grandmother. It is a traditional old south condiment served with all kinds of meat (especially great on top of meatloaf). A good homemade chili sauce has chunks of tomatoes and a rich burgundy color.This is a medium spice level, but you can add more or leave out entirely. Traditionally it's used with fresh tomatoes, but the recipe was converted to use canned tomatoes years ago. You can store this in the refrigerator for several weeks. I found this very quick and easy to make and the flavors are outstanding. Serving size is estimated. YUM!
