SCALLOPED CORN
This vintage recipe is a hearty filling side dish that was a staple at many family dinners of my childhood and those of the generations before me. Great-grandma's scalloped corn is a perfect side to so many dinner entrees!

Steps:
- Combine corn, eggs and salt.
- Put half of the corn mixture in the bottom of a well greased baking dish (I used a 9x9 pan)
- Place half of the cracker crumbs on the corn
- Repeat layers and pour milk over the casserole
- It says to bake slowly for about 30 minutes. I baked it at 350 F and it took about 35 minutes to firm up

SCALLOPED CORN
Scalloped Corn is a classic side dish that pairs perfectly with almost any side dish. Made with creamed corn, sweet corn, eggs, Ritz crackers, and paprika.

Steps:
- Preheat oven to 350 degrees and spray a 2-quart baking dish with vegetable oil spray.
- In a large bowl whisk together creamed corn, canned sweet corn, eggs, 1/2 cup Ritz crackers, 1/4 cup unsalted butter, salt, paprika and black pepper.
- Pour into baking dish.
- Mix remaining 1/2 cup Ritz crackers with remaining 1/4 cup melted butter.
- Sprinkle cracker mixture over corn.
- Bake for 35-40 minutes until crackers are golden brown.

Steps:
- 1. In large mixing bowl, combine all ingredients, mix thoroughly. Spray 3.5 qt crockpot with PAM or use liner. Cover and cook on high 3 hours, or low 6 hours. It's often done early, so keep checking on it. Serve and enjoy.
- 2. To make in the oven: Oven to 375 degrees. Spray 9x13 with PAM. Bake 35-45 min until baked or until center is set and not jiggly.
- 3. I made 10.30.20, omitted the honey and baked in oven. Took 55 min

- Position a rack in the top third of the oven and preheat to 325 degrees F. Grease a 2-quart oval gratin or baking dish with 1 tablespoon of the butter.
- Whisk the eggs and half-and-half together in a large bowl. Add the sugar, corn, 1/2 cup of the crushed crackers, 1/2 cup of the Cheddar and 1 teaspoon salt. Pour the mixture into the baking dish, spreading with a spatula or spoon to make an even layer.
- Bake uncovered until the edges are set but the center is still wet, about 35 minutes. Meanwhile, melt the remaining 3 tablespoons butter in a small dish in the microwave, about 30 seconds. Mix the butter into the remaining 1 cup crushed crackers until evenly moistened. Sprinkle the remaining 1/2 cup shredded Cheddar and the buttered crackers over the corn. Continue baking until the edges are brown and the top is set and golden, 20 to 25 minutes more. Remove from the oven and let stand 5 minutes before serving.

- Saute the chopped onion in the 1/2 stick of butter or margarine.

GRANDMA MOORE'S CREAMED CORN

- In a large skillet (seasoned cast iron does well here), cook the bacon over medium-high heat until crisp. Transfer to a paper towel-lined plate; reserve the drippings in the pan.
- Cut the stalk ends of the corn to make a flat surface, then stand the ears up and shave the corn from the cobs with a chef's knife, leaving about half of each kernel on the ear. With the back of the knife, scrape the cobs over a shallow dish to extract as much liquid as possible. (You should have equal parts kernels and liquid; add water if necessary.) Return the skillet to medium-low heat and add the kernels and liquid.
- Season the corn mixture lightly with salt and pepper and cook until creamy, stirring often, 30 to 45 minutes (add water if the pan gets too dry). Serve warm or at room temperature. Crumble the bacon on top.
