GRANDMA'S DATE FILLED COOKIES

These cookies have two layers of delicious and light sugar cookies sandwiched with date filling. I even loved these as a kid, when dates weren't COOL!

1 1/2 cups dates, cut up fine (You may use a combination of figs, raisins and dates -l/2 cup each- if you prefer)
1/2 cup sugar
1 tablespoon flour
1/2 cup water
2 teaspoons lemon juice
1/2 cup shortening
1 cup sugar
2 eggs
2 tablespoons heavy cream or 2 tablespoons canned milk
1 teaspoon vanilla
2 1/2 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
  • Mix together the shortening, sugar, and eggs.
  • Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
  • Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
  • Chill dough for at least 1 to 2 hours.
  • Roll out dough in thin layers in small batches and cut with round cookie cutter.
  • Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
  • Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

We always make these with prunes, as they are my husband's favorite Christmas cookies. He says they taste EXACTLY like his Grandma's. Now, THAT'S a compliment!

1/2 c soft shortening
1 c sugar
2 eggs
2 1/2 c flour
1/4 tsp baking soda
1/2 tsp salt
2 Tbsp heavy cream
1 tsp vanilla
2 1/2 c dates or prunes, pitted and finely chopped
3/4 c sugar
3/4 c water
3 tsp lemon juice
1 tsp butter

Steps:

  • 1. For the dough: Mix thoroughly the shortening, 1 cup sugar, and eggs.
  • 2. Stir in cream and vanilla.
  • 3. Sift together and blend in the flour, baking soda and salt. Chill dough for about 1 hour.
  • 4. For the filling: In a heavy saucepan, mix together dates or prunes, 3/4 cup sugar, water, lemon juice, and butter.
  • 5. Cook slowly, stirring constantly until thickened. Cool to room temperature.
  • 6. Roll out the dough very thin on a lightly floured surface. Cut into 3-inch rounds with a cookie cutter or glass.
  • 7. Place on a lightly greased cookie sheet. Place a rounded teaspoon of filling in the center. Fold over like a turnover and pinch edges shut.
  • 8. Bake at 400F until delicately browned (around the edges). About 8-10 minutes. Cool on wire racks.

1 cup dates, pitted and chopped
½ cup white sugar
¾ cup water
½ cup butter, softened
½ cup packed brown sugar
1 ½ cups all-purpose flour
¼ teaspoon baking soda
1 ¼ cups rolled oats
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small saucepan over low heat, mix dates, sugar and 1/2 cup of water. Bring to a boil, and cook for 15 minutes, or until thick and smooth. Set aside to cool.
  • Cream butter and brown sugar together until smooth. Gradually mix in flour, baking soda, and salt. Add the oatmeal and mix well. Stir in 2 to 4 tablespoons of water. Form the dough into a ball and refrigerate for 15 minutes.
  • On a floured surface, roll dough to 1/8 inch thickness and cut into 2 inch rounds. Place 1/2 of the rounds on cookie sheets. Spoon date mixture in the center of each round and top with another round. Press edges firmly together.
  • Bake 15 minutes in the preheated oven, or until browned.

These are a tradition with my DH's family and really are delicious. They aren't difficult to make and look impressive on the holiday cookie platter.

1 cup sugar
3/4 cup shortening
1/4 cup butter
4 cups flour
1 teaspoon vanilla
1 teaspoon salt
1 cup brown sugar
3 eggs
1 teaspoon baking soda
1 teaspoon baking powder
1 lb dates, chopped
1/2 cup sugar
1/2 cup water
1 tablespoon cornstarch

Steps:

  • Make the date filling by heating the ingredients in a saucepan until thick, stirring the entire time to prevent scorching.
  • Mix the dough ingredients in the order given and divide into two balls. Roll out each ball to 1/2 inch thick. Spread with the date filling and roll up like a jelly roll. Put the rolls in the refrigerator overnight or for at least several hours.
  • Heat oven to 350 degrees. Working with one roll at a time, slice 1/4" to 1/2" slices and place on a greased baking sheet.
  • Bake 12 - 15 minutes until cookies are a light golden brown. Cool on cookie sheets for several minutes, then move to racks to cool completely.

Recipe came from my husband's grandmother. They are much easier to make than they sound. I have halved the recipe successfully; and I have used jam instead of the cooked dates although nothing beats the original recipe.

3/4 cup shortening
1 cup sugar (can substitute Splenda)
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 cup milk
2 cups oats
2 cups flour
1 lb dates, chopped
1/2 cup sugar (or even a little less (can substitute Splenda)
1 cup water

Steps:

  • Cook the dates in sugar and water, until tender. Cool before using.
  • Blend shortening and sugar, and then add remaining ingredients.
  • Roll out thin on a floured surface, cutting into circles.
  • Place filling on bottom circle, top with a second circle, and seal edges.
  • Bake until brown at 350 degrees - about 10 minutes, depending on the size of your circles.

This is a unique family recipe that is originally from my great, great aunt. I have not tried it, but submitted it in response to a request. I'm sorry I don't know the serving size or exactly how long it takes to bake!

1/2 cup butter
1 cup sugar
2 large eggs
1 tablespoon milk
2 teaspoons baking powder
2 cups flour
1 pinch salt
1 cup chopped dates
1/2 cup water
3 teaspoons flour
1/2 cup sugar
chopped nuts, to taste

Steps:

  • Cream butter and 1 cup sugar; add eggs and beat well.
  • Add milk.
  • Sift together baking powder, 2 cups flour, and salt; add flour mixture to creamed mixture.
  • Refrigerate.
  • While dough is chilling, make filling by cooking dates, water, 3 tsp flour, and 1/2 cup sugar until thick; add chopped nuts.
  • Roll out dough; cut in rounds.
  • Mound filling in center, place another round on top and seal edges.
  • Bake at 375°F on greased cookie sheets until lightly browned.

4 cups all-purpose flour
4 cups rolled oats

Steps:

  • Cream butter and sugar together well.
  • Slowly mix in milk.
  • Add remaining ingredients.

  • Bring to a boil.
  • Simmer, stirring often, until mushy and thickened.
  • Add more water if too dry, or simmer longer if too runny.
  • Cool and spread between cookies.

Grandma made these cookies but Grandpa Carr handed them out to kids. He had a rule: If 2 cookies stick together you get them both. I usually make these with cherry or apricot filling now, but Grandma almost always used raisins.

COOKIES:
2 c sugar
2 eggs
1 c plus 2 tsp. shortening
1 tsp vanilla extract
6 c flour
4 tsp cream of tartar
2 tsp baking soda
1 tsp salt
1 c milk
FILLING:
3 c raisins, dates, or dried apricots or cherries
2 tsp flour
1 c sugar
1 c water
1/2 c finely chopped nuts (optional)

Steps:

  • 1. Cream together sugar, eggs, shortening, and vanilla. Sift together 5 cups flour, salt, cream of tartar, and soda. Add alternately with milk. Add last cup flour gradually. Dough should be soft. Chill thoroughly.
  • 2. Combine ingredients for filling in saucepan. Cook for 10-15 minutes, stirring, until thickened. Cool. After dough and filling are chilled, roll dough 1/4 inch thick on floured board. Use a 2-inch cookie cutter dipped in flour. Cut out cookies and place on lightly greased cookie sheet 2 inches apart. Place 1 heaping teaspoon of filling on cookie circle, then top with another cookie circle. Press edges together with a fork and prick top of cookies to allow steam to escape. Bake at 350 degrees for 10-15 minutes until golden brown. Time will vary by thickness of cookies and amount of filling used so watch closely while baking..

This is a very basic recipe for a rolled- up- pastry- cookie with date filling, it has many variations in Israel, I will note some here. Very sweet & tasty,yet no added sugar. The pastry is very easy to make and is called "SFM" which stands for Sour cream, Flour and Margarine(in Hebrew-"shekem") The pastry itself can also be used for quiches,pies etc.

1 cup sour cream (250ml)
350 g self raising flour
200 g margarine or 200 g butter
1 (500 g) container date spread
500 g pitted dates
2 -6 teaspoons cinnamon-sugar mixture
6 -9 tablespoons plain vanilla halva (NOT halva spread)

Steps:

  • Mix the pastry ingredients well to form a nice soft smooth dough.
  • Form ball and wrap in the paper left from margarine and refrigerate for an hour(or stick in freezer for 10 minutes,or -- don't chill at all if in a rush!).
  • Divide into three parts (each will create a "roll up").
  • On a clean,floured surface roll to a large rectangle (about 30-40cm x 20-30cm), around 2-3mm thick, with the long end parallel to you.
  • *TIP: roll the end closest to you slightly thinner and roll up from this side-this ensures pastry gets baked all the way through.
  • With a long spatula spread a third of the date spread evenly over the pastry, leaving a 5-10mm margin all around.
  • Optional additions before rolling:.
  • *cut up the date "block" into small pieces (I usually just tear little bits off by hand) and distribute a third over the date spread.
  • *sprinkle with around a teaspoon of cinnamon-and some sugar if desired.
  • *This is a delicious touch: crumble 2-3 tablespoons of plain vanilla Halva over the date spread.
  • Repeat with the other 2 parts of pastry.
  • *Now roll up tightly,place on baking paper lined cookie sheet (curve the roll if it came out too long) and bake for about 10-20 minutes -DEPENDS ON YOUR OVEN-until golden.
  • Remove tray from oven and leave to cool slightly.
  • With a sharp serated edge knife cut diagonaly into 2-3 cm slices and leve to cool completely.
  • You can sprinkle with powdered suger if desired.
  • Store in airtight cookie containers.
