GRANDMA'S SECRET PIE CRUST



Grandma's Secret Pie Crust image

The secret's out! A great basic pie crust recipe.

Number Of Ingredients 6

3 cups all-purpose flour
1 teaspoon salt
1 ¼ cups shortening
1 egg, beaten
1 tablespoon distilled white vinegar
4 tablespoons water

Steps:

  • In large bowl mix flour and salt. Cut in shortening with two butter knifes.
  • In separate bowl, mix together egg, vinegar, and water. Drizzle wet mixture into dry mixture, cutting it in.
  • Roll out dough, and fit into two 9 inch pie pans.
  • Bake at 425 degrees F (220 degrees C) for 12 minutes.

This recipe is over 100 years old. My sister-in-law's grandmother said it was a no-fail recipe. It's the best I ever had.

4 cups all-purpose flour
1 ¾ cups shortening
3 tablespoons white sugar
2 teaspoons salt
1 egg
½ cup water

Steps:

  • In a large mixing bowl, combine all-purpose flour, shortening, sugar, and salt. Blend together with a pastry cutter until crumbly.
  • In a small bowl, mix egg with water. Blend into flour mixture. Chill in refrigerator until ready to use.

Number Of Ingredients 4

3/4 cups Crisco
2 cups of sifted flour
1/4- 1/3 cups cold water
1 teaspoon salt

Steps:

  • Sift and measure 2 cups of flour into large bowl. Add salt and Crisco. Remove 2 heaping tablespoons of flour and blend with the cold water with a fork. Blend flour, Crisco & salt with pastry blender until large crumbs. Add water/flour mixture. continue blending until it forms a ball. shape ball with hands, let sit 5 min. cut ball in half- makes a bottom & top. If using bottom only, you may freeze the 2nd half for later use. roll each out, fill with fruit,etc., brush with beaten egg. Bake at 450 degrees for 10 min. Lower to 350 for 40-50 min.

  • Place the water and vodka in a cup and add 1-3 ice cubes to keep cold. In a food processor fitted with the dough blade, add the butter, shortening, flour, sugar, and salt. Pulse 8 to 12 times, until the butter is the size of peas.
  • With the food processor running, pour in the water and vodka (not the ice) until it forms a ball. This should take 10-15 seconds at most.
  • On a floured surface, dump out the dough and quickly shape into a round disk. Wrap in plastic wrap and refrigerate for 30 minutes.
  • After 30 minutes, place the unwrapped disk on a floured board and gently roll into a circle starting from the center to the outside, turning a quarter turn and flouring the disk/rolling pin until the dough is larger than your pan. For a 9″ pie pan, roll into a 12″ circle. Allow to rest for 5 minutes so the gluten can relax again.

  • In the bowl of a food processor, add flour and salt and pulse to combine. Dot the cubed shortening onto the dry ingredients. Pulse until the flour mixture until it is the consistency of small peas, about 5 pulses. Do not over process. Some larger pieces are fine.
  • Add water a tablespoon at a time, just until the dough holds together. Turn the dough onto a pastry mat and knead 3 or 4 times to bring it together. Flatten into a 4- 6 inch disc, cover in cling wrap, and chill in the fridge for one hour. The dough can now be used in any recipe that calls for pie crust.
  • If baking a shell, roll to 1/8 inch thick and cover the pie plate. Prick with a fork to prevent bubbles. Cover unbaked crust with pie beads or uncooked beans to prevent bubbles as well. Bake at 450℉ for 15 minutes.
