These are just delicious, got this recipe from my mom she has been making these for years. Always a crowed pleaser.

Steps:
- Mix together, 1/2 cup butter, 1/2 cup brown sugar, 1 cup flour spread into 9x10 baking pan press down bake at 350°F for 10 minutes.
- Mix together, 1 cup brown sugar, 2 eggs, 1 tsp vanilla, 1/2 tsp baking powder, 1 cup coconut, 1 cup walnuts; spread over first layer bake at 350°F for 20 minutes.
- Cut into squares while still warm and roll in powdered sugar.

My MIL makes these every Christmas, my kids love them, but they also claim that they hate dates, coconut, and walnuts! go figure! These keep for a really long time, so they are a good addition to your holiday treats to have on hand

- Mix the dry ingredients well, then add slightly beaten eggs.
- Bake in shallow greased pan in a thin layer at 325 for 25 minutes.
- Cut with a sharp knife while still warm, roll into logs, and roll in icing sugar or fruit sugar.

MICROWAVE CHINESE CHEWS
Easy, yummy cookie. I make these for the holiday cookie exchange, but I felt so guilty for making such an easy cookie, I didn't make them one year. The next year I was asked to please make them again, people were asking for them.

Steps:
- Make a clear space on your counter or table.
- Using clean newspaper, cover the space with paper.
- Melt chocolate and butterscotch (or peanutbutter) chips in a microwave safe bowl in the microwave for about 2 minutes, until smooth.
- Check and stir the chips about every 30 seconds, as needed.
- While the chips are melting, dump the whole bag of chowmein noodles into a large mixing bowl.
- When the chips are ready, quickly mix them into the chowmein noodles.
- Working quickly, place teaspoon fulls of the mixture onto newspaper to dry.
- Cookies are ready when they are dry and set.
- Enjoy.

- Sift dry ingredients into a mixing bowl.
- Stir in dates and nuts.
- Add eggs.
- Mix thoroughly and spread into a greased 15 1/2 x 10 1/2 inch cookie sheet.

GRAMMA'S CHOP SUEY
Posting this for safekeeping. It's DH's grammas recipe, made for the first time last night. It's VERY americanized, and no way shape or form authentic chinese, but reminds DH of his childhood and his gramma, so I want to make it from time to time. Just wanted to keep safe for future use.

- You can use any pork or beef, or mixture of both. I like to use boneless pork chops. Slice the pork or beef, marinate in the garlic, ginger, soy, pepper and oil for at least 2 hours or longer.
- Saute in a pan with some oil until browned. Cover and simmer for 20 minutes. Add the celery and onion with 1 cup water, and simmer for 15 minutes more. Mix the soy sauce, molasses, water and cornstarch until smooth. Add to the meat mixture and stir until thickened. Add the chinese vegetables and mix well.
- Serve over hot steamed rice with crunchy chow mein noodles.
CHINESE CHEWS
This is one of those cookie bars that you remember from your youth with such fondness. There are many recipes with the same name, but this is the one I like best. Great anytime of the year, but also a great addition to the holiday cookie trays.
