3 cups graham cracker crumbs (2 ½ to 3 sleeves of graham crackers, crushed)
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup (2 sticks) unsalted butter, softened to room temperature
1 cup granulated sugar
1 cup brown sugar
1 tablespoon vanilla extract
2 large eggs
2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F. Line cookie sheet(s) with parchment paper. Set aside.
  • In a bowl, whisk together graham cracker crumbs, flour, baking soda and salt. Set aside.
  • In a large mixing bowl, beat butter and sugars on medium-high speed until light and creamy.
  • Add vanilla and eggs to butter mixture and beat again until well combined.
  • With the mixer on low speed, gradually add the flour mixture to the wet mixture, increasing speed as needed. Mix only until just combined.
  • Fold in chocolate chips, mixing to evenly distribute. (The cookie dough may feel drier than most other chocolate chip cookie batters, but it should hold together if you press it with your fingers.)
  • Using a 1 ounce scoop, place balls of cookie dough onto the prepared cookie sheets.
  • Bake 8 to 10 minutes. The edges of the cookies will be slightly golden and the centers still soft.
  • Cool cookies on the cookie sheet for 5 minutes, then transfer to a cooling rack to finish cooling. (The cookies will firm up as they cool.)

1 egg
1 teaspoon vanilla extract
1 ¼ cups all-purpose flour
1 cup graham cracker crumbs
½ teaspoon salt
½ teaspoon baking soda
¾ cup candy-coated milk chocolate pieces
2 cups semisweet chocolate chips
½ cup chopped pecans

Steps:

  • Beat together margarine and sugars until light and fluffy. Blend in egg and vanilla. Add combined flour, graham cracker crumbs, baking soda and salt. Mix well. Stir in chocolate chips , M & M's, and nuts.
  • Drop dough by heaping tablespoonfuls onto greased cookie sheets about 3 inches apart . Press 2 or 3 additional M & M candies on top of cookies if desired.
  • Bake in pre-heated oven 375 degrees F (190 degrees C) for 8-10 minutes or until lightly browned. Cool on sheet about 3 minute and remove to wire racks.

1 1/3 cups sweetened flaked coconut
1 cup walnuts, chopped

Steps:

  • Preheat oven to 375 degrees.
  • In a bowl, mix together graham cracker crumbs, flour and baking powder.
  • In a bowl beat milk and butter until smooth.
  • Add in the crumb mixture; mix well.
  • Stir in chips, coconut and walnut.
  • Drop by tablespoonfuls onto lightly greased cookie sheet.
  • Bake for 9-10 minutes, or until lightly browned.
  • Cool for 2-3 minutes.
  • Remove to wire rack.
  • Store loosely, covered at room temperature.

4 graham crackers, crushed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Whisk white sugar, brown sugar, butter, and egg together in a large bowl. Stir flour, baking soda, and salt into sugar mixture until batter is just mixed; fold in chocolate chips. Roll dough into 1-inch balls.
  • Pour graham cracker crumbs into a resealable bag. Place each dough ball, 1 at a time, into the bag and shake until completely coated in graham cracker crumbs. Arrange coated dough balls on a baking sheet.

These are so rich and decadent. They are very moist, not a crisp cookie ever! They do not go stale quickly so they travel nicely. Great for holidays and special occasions. I have omitted the coconut before with out any problems.

1 1/2 cups graham cracker crumbs
1/2 cup flour
2 teaspoons baking powder
1 (14 ounce) can sweetened condensed milk
1/2 cup margarine
1 1/3 cups coconut
2 cups chocolate chips
loosely chopped pecans

Steps:

  • Mix first 6 ingredients till well blended.
  • Add chips and nuts; mix again.
  • Bake 8-10 minutes on greased cookie sheet, being careful not to overcook.
  • Watch the temp on your oven, should bake between 350-375°F .
  • NOTE: If you are finding they are baking to quickly and/or burning just turn down your oven temperature (the sweetened condensed milk can cause burning around edges if temp is to high, I cook mine at 350°F).
  • These are better the second day!

Feb 23, 2014 - Not long ago, I pinned these gooey S'mores Cookies, and I just could't stop thinking about them. I wanted to create my own version, one without marshmallows. Not that I have anything against marshmallows. I just wanted to keep it simple, like a plain old chocolate chip cookie with a little graham cracker surprise.
