True story: One reviewer told us that her sister, who doesn't like banana bread, tried this Banana Raisin Bread-then asked her for the recipe!

Steps:
- Preheat oven to 350°F. Mix cracker crumbs, flour, sugar, baking powder and salt in large bowl; set aside. Beat eggs, milk and oil in medium bowl with wire whisk until well blended. Stir in bananas. Add to flour mixture; stir just until blended. Stir in raisins.
- Spoon into greased 9x5-inch loaf pan.
- Bake 1 hour to 1 hour 10 min. or until toothpick inserted in center comes out clean. Cool in pan on wire rack 10 min. Remove from pan; cool completely. Cut into 16 slices to serve.

BANANA GRAHAM CRACKERS
This is adapted from a honey graham cracker recipe. The thought of banana graham crackers with peanut butter just sounded so good I just had to try to create this recipe.

Steps:
- Combine dry ingredients in a large bowl. Set aside.
- In a medium bowl, mix melted butter, banana, honey, and molasses; stir to mix. Add vanilla extract.
- Pour banana mixture all at once into flour mixture. Using a fork, stir until mixture is combined with all flour mixture. Knead dough in bowl until all flour is incorporated. Dough will be crumbly. Divide dough into smaller pieces; roll each piece between 2 pieces of waxed paper(or parchment paper) to 1/8" thickness.
- Cut with a 2 1/2" round cookie cutter and transfer to an ungreased baking sheet. Bake in a 325*F. oven for 15-17 minutes or until golden brown.
- Makes about 40 crackers.

BANANA AND COCONUT CREAM PIE WITH GRAHAM CRACKER CRUST
Steps:
- For the crust: Preheat the oven to 350 degrees F. Brush a 9-inch pie plate with butter to grease.
- In a medium bowl, stir to combine the melted butter, graham cracker crumbs, sugar and salt, then press into the bottom and up the sides of the prepared pie dish. Bake until lightly golden and crisp, 12 minutes. Set aside on a wire rack to cool completely.
- For the pie: Whisk the granulated sugar and flour together in a medium saucepan set over medium heat. Whisk in the milk, coconut milk, condensed milk, coconut extract and vanilla extract. Whisking occasionally, bring the mixture to a boil. Boil for 2 minutes, then temper the egg yolks: carefully remove a cup of the hot milk mixture and whisk in the beaten eggs yolks. Add the yolk mixture to the milk and then add the butter. Remove from the heat and fold in the bananas, then transfer the pie filling to the cooled graham cracker crust.
- Cover the pie with plastic wrap, placing the wrap directly onto the surface of the filling. Chill until completely set, at least 4 hours or up to overnight.
- Whip the heavy cream and confectioners' sugar until stiff peaks form, then spoon the whipped cream over the chilled pie. Garnish with toasted coconut chips and slice to serve.
BANANA PUDDING WITH GRAHAM CRACKERS
I made this recipe when I was craving banana pudding but out of the traditional Nilla® wafers. When I realized the graham crackers would make nice even layers a snap, the idea to make it in an 8x8-inch pan came quickly. It tastes amazing, and the crackers soften quicker than the wafers do. The addition of the Dream Whip® topping mix makes this very creamy and the even layering means you taste all three elements in every bite!

- Pour milk, pudding mix, and whipped topping mix into a large bowl; mix with an electric whisk or hand whisk until ingredients are combined and a thick pudding forms.
- Break graham cracker sheets in half to form squares.
- Cover the bottom of an 8-inch square baking pan with 9 graham cracker squares. Layer 1/2 of the banana slices on top in even rows and cover with 1/2 of the pudding mixture, using a spatula to spread it evenly. Repeat layers once more. Sprinkle the top with graham cracker crumbs, if desired.
- Cover and refrigerate until fully chilled, 4 hours or longer. Cut into 9 squares to serve.

I like cooking this bread in a round loaf pan or coffee can similar to old-fashioned brown bread, but it can also be cooked in a small loaf pan (8x4-inch). - Preheat oven to 350°F.
- Coat a round loaf pan or coffee can with cooking spray and dust with 4 teaspoons graham cracker crumbs.
- Alternately use 8x4-inch loaf pan.
- Combine dry ingredients (flour-salt) in large bowl.
- Cream butter or margarine in large bowl at medium speed until smooth.
- Gradually add 1 cup graham cracker crumbs, beat until combined (2 minutes).
