1 cup butter, softened
½ cup white sugar
2 cups all-purpose flour
4 eggs
1 ½ cups white sugar
¼ cup all-purpose flour
2 lemons, juiced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
  • Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
  • Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.

6 eggs
2 cups white sugar
6 Tablespoon all-purpose flour
1/2 cup freshly squeezed lemon juice
1/2 teaspoon zest
1 1/2 cup all purpose flour
2/3 cup powdered sugar
1 1/2 sticks of butter, softened
1/4 teaspoon of vanilla
1/4 teaspoon of baking soda
1/4 teaspoon zest from one lemon

Steps:

  • Preheat the oven to 350° Fahrenheit and grease a 9x13 pan with butter and set aside.
  • Add the flaky crust ingredients into the bowl and mix with a hand mixer on low speed for 2 minutes until the consistency is crumbly.
  • Add the crust mixture into the prepared pan. Use your fingers to press firmly to create a compacted even layer.
  • Bake the crust for 22 minutes until the edges are golden brown. Remove from the oven and place on a cooling rack. (The crust does not need to cool beyond the time it takes to prepare the lemon custard.)
  • In a bowl add the lemon custard ingredients. Use a hand mixer on low for 2 minutes until the consistency is smooth and silky. Pour the lemon custard over the crust.
  • Bake for 25 minutes. Use a toothpick to make sure the lemon custard comes out clean.
  • Place the 9x13 baking dish on a cooling rack for 1 hour until cooled. Transfer to the fridge for 2 hours or until chilled.

They are my favorite lemon bar ever- I think it's the lemon frosting on top. If you are a lemon-lover like myself, you have to give these a try!

15.25 ounces lemon cake mix
½ cup butter
1 egg (slightly beaten)
3 cups powdered sugar
4 Tablespoons butter (softened)
lemon juice
3-5 drops yellow food coloring
8 ounces cream cheese (softened)
2 eggs

Steps:

  • Preheat oven to 350 degrees F.
  • Combine all of the ingredients for the cake layer in a mixing bowl. Press down in a 9x13-inch baking pan sprayed with nonstick cooking spray; set aside.
  • In a large bowl combine powdered sugar and butter.
  • Add enough lemon juice to form the consistency of a thick frosting.
  • Beat in cream cheese and yellow food coloring until smooth.
  • Set aside 1 cup of frosting to spread on top after baking (be sure to not skip this step!).
  • Add eggs to remaining frosting mixture and beat until fluffy.
  • Spread on top of cake mix in the pan and bake for 25-30 minutes, or until barely golden brown.
  • Let cool completely and then spread reserved frosting mixture on top and serve.
