GOLDEN POTATO PATTIES
My family loves it and I make potato patties with meatloaf for dinner. It is so easy to make patties and it is so delicious and tasty.

- 1. Combine potatoes and enough water to cover in a large saucepan. Cook over medium-high heat until potatoes are tender, about 20 to 25 minutes; drain. Beat potatoes until slightly cooled. Beat 2 eggs in a small bowl. Add to potato mixture and mix well. Stir in Parmesan, parsley and salt. Shape into 15 (3-inch) patties. Combine remaining eggs and the water in a small bowl and mix well. Coat potato patties with flour, then dip in egg mixture. Coat with bread crumbs. Arrange in a single layer on a baking sheet. Chill, covered, for 1 hour. Preheat the oven to 275ºF. Preheat vegetable oil in a deep fryer. Deep-fry potato patties in hot oil until golden, about 3 minutes; drain on paper towels. Remove to a baking sheet. Bake for 10 minutes. Serve with spicy mustard, if desired.

Steps:
- Shred peeled potatoes with grater.
- Put shredded potatoes in colander, then rinse and squeeze potatoes under running cold water in sink for a minute or two.
- Squeeze out excess water until potatoes are fairly dry, then dump them into a large mixing bowl.
- Add remaining ingredients and mix with hands until incorporated.
- Pat into patties the size of your hand.
- Fry with a few tablespoons butter in a non-stick frying pan until golden, turning once.
- Serve as-is or with ketchup or a dollop of sour cream.

- Mix mashed potatoes, flour, onion, egg, black pepper, and salt together in a bowl until batter consistency.

BRATWURST WITH POTATO CAKES

- Pierce the potatoes in a few places with a fork; microwave until slightly softened, about 4 minutes, then halve lengthwise. When cool enough to handle, grate the cut sides on the large holes of a box grater into a large bowl.
- Add the sauerkraut to the grated potatoes along with the herbs, eggs, three-quarters of the scallions, 1 teaspoon salt, and pepper to taste. Stir in 1 tablespoon flour, then form into four 1/2-inch-thick patties. Sprinkle the patties with the remaining 1 tablespoon flour.
- Heat the olive oil in a medium skillet over medium heat. Pierce the bratwurst all over with a fork, add to the pan and cook, turning, until golden brown, 5 minutes per side. Meanwhile, heat 1/3 inch olive oil in a large skillet over medium heat. Add the potato patties and cook until golden, 6 minutes per side. Drain on paper towels.
- Remove the bratwurst from the skillet and reduce the heat to medium low. Add 1/2 cup water and bring to a simmer, then add the mustard and sour cream and stir until hot. Cut the bratwurst into pieces and serve with the potato cakes, sauce and the remaining scallions.

GOLDEN ROAST POTATOES

- Peel the potatoes, then cut into halves, or quarters if large. Bring a large pan of water to the boil, add a little salt, then tip the potatoes into the pan. Bring back to the boil and cook for 7 mins. Drain really well, then return to the pan and sprinkle over the flour. Place a lid on top of the pan, then pick up the pan using oven gloves or a tea towel and give it a few really hard shakes so the potatoes get bashed around (this will make them nice and crisp).
- Heat oven to 190C/fan 170C/gas 5. Spoon the goose fat or sunflower oil onto a large, lipped baking tray and leave to heat on the top shelf of the oven for 5 mins. Carefully pull out the tray, make sure its surface is evenly coated with the fat, then tip on the potatoes. Roast for 20 mins, then turn up the oven to 220C/fan 200C/gas 7 and roast for another 30 mins, turning the potatoes once, until golden and crisp. Sprinkle with a little salt and serve straight away.

POTATO RöSTI CAKES WITH SAGE LEAVES

- Squeeze any excess water out of the grated potatoes, then tip into a bowl and mix well with the egg, flour, baking powder, onion and chopped sage leaves. Season well. Heat 2 tbsp oil in a large non-stick frying pan over a medium heat, and spoon the mixture in to make 4 röstis, flattening them down with the back of a spoon into disc shapes. Cook for 5 mins each side until golden brown and crisp, then drain on kitchen paper. Can be made up to 8 hrs in advance and kept in the fridge (see tip).
- When ready to serve, heat the remaining 1 tbsp oil in the frying pan over a medium heat. Add the whole sage leaves and cook for 20 secs until crisp but still green. Drain on kitchen paper and top each rösti with a fried sage leaf.

- Up to 2 days ahead, boil the potatoes for 2 mins, then drain and leave to cool.
- Thirty mins before serving, melt the duck fat in a large frying pan and add the potatoes. Start them on a high heat to get some colour, then turn the heat down to sizzle the potatoes slowly for 20 mins, shaking the pan occasionally, until completely golden and crisp.
- Just before serving, toss through the parsley and garlic, season with salt and serve.

- Cut the potatoes into large chunks. (You can peel the potatoes if you don’t like the texture of the skins, or leave the peels on and remove some or all of the skins after peeling.)
