This wonderful bread, made from my grandmother's recipe, won Best of Show at the New Mexico State Fair. It's so good! -Marjorie Rose, Albequerque, New Mexico

Yield 1 loaf (16 slices).

Number Of Ingredients 11

1/2 cup shortening
3/4 cup sugar
2 large eggs, room temperature
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup 2% milk
GLAZE:
1/2 cup confectioners' sugar
2 teaspoons grated lemon zest
2 to 3 tablespoons lemon juice

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. , Pour into a greased 9x5-in. loaf pan. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack., Combine the glaze ingredients; immediately pour over warm bread. Cool completely before removing from pan.

1 ¾ cups all-purpose flour
¾ cup sugar or sugar substitute blend equivalent to 3/4 cup sugar (see Tip)
2 teaspoons baking powder
¼ teaspoon salt
¼ cup refrigerated or frozen egg product, thawed, or 1 lightly beaten egg
1 cup fat-free milk
¼ cup cooking oil or melted butter
2 teaspoons finely shredded lemon peel
1 tablespoon lemon juice
½ cup chopped toasted almonds or walnuts (see Tip)
2 tablespoons lemon juice
1 tablespoon sugar

Steps:

  • Preheat oven to 350 degrees F. Grease the bottom and 1/2 inch up sides of an 8x4x2-inch loaf pan; set aside. In a medium bowl stir together flour, 3/4 cup sugar, the baking powder, and salt. Make a well in center of flour mixture; set aside.
  • In another medium bowl combine the egg, milk, oil, lemon peel, and the 1 tablespoon lemon juice. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in nuts. Spoon batter into prepared pan.
  • Bake for 45 to 55 minutes or until a wooden toothpick inserted near center comes out clean. If desired, stir together the 2 tablespoons lemon juice and the 1 tablespoon sugar. While bread is still in the pan, brush lemon-sugar mixture over the top of the loaf. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on a wire rack. Wrap and store overnight before serving.

1 cup powdered sugar
1 Tablespoon lemon juice

Steps:

  • Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan and line with parchment paper. In a medium sized bowl sift together flour, baking soda, baking powder, and salt. In a stand mixer add the butter and sugar and beat until creamy 1-2 minutes.
  • Add in the eggs, vanilla, lemon juice, zest, and sour cream and mix until combined. Add in the flour and mix until incorporated. Spread the batter evenly into your loaf pan. Bake for 45-50 minutes or until golden brown and toothpick inserted comes clean. Remove from oven and let cool.

6 tablespoons butter, melted
1 cup white sugar
½ cup milk
2 eggs
1 ½ cups all-purpose flour
1 teaspoon baking powder
1 tablespoon grated lemon zest
½ cup chopped walnuts
2 tablespoons lemon juice
2 tablespoons confectioners' sugar

Steps:

  • Generously grease a 9 x 5 inch loaf pan. Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine melted butter or margarine and sugar. Add eggs, and mix until light and fluffy. Add milk, baking powder, lemon rind, and chopped nuts. Mix well. Sift flour, and gradually add to mixture; mix to just combine.
  • Bake for 50 to 60 minutes, or until tester inserted in the center comes out clean.
  • While bread is baking, combine lemon juice and confectioners' sugar in small dish. Stir well before using. Immediately upon removing bread from oven, place pan on a cooling rack. Using a large fork, poke holes all over the bread. Pour lemon juice mixture over the top of the bread. Cool for 15 minutes, and then remove from pan.

2 cups all-purpose flour (284 grams)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon lemon zest
1/2 cup unsalted butter (softened)
1 1/4 cup granulated sugar
3 eggs (room temperature)
1/2 cup lemon juice
1/2 cup milk (room temperature)
1/2 cup icing sugar (sifted)
1/4 cup lemon juice

Steps:

  • Preheat the oven to 350℉ (175°C) .
  • Grease and flour (or use non-stick spray) a 9 x 5 inch loaf pan.
  • Sift together flour, baking powder, soda, and salt. Stir in lemon zest. Set aside.
  • In a large mixing bowl of stand mixer beat butter on medium speed for 2-3 minutes.
  • Gradually add the sugar and continue beating for another 2-3 minutes.
  • Add eggs, one at a time. Make sure you scrape the bottom of your bowl.
  • Add lemon juice (the batter will curdle).
  • Alternate addition of flour and milk (in 2 additions). Mix on low speed until combined. Do not over mix.
  • If using add-ins, combine gently at this point.
  • Bake in preheated oven for 60-75 minutes until golden and cake tester comes out clean.
  • Transfer pan to a rack where it can cool down for about 10 minutes before removing loaf to cool down completely on a wire rack.

1/2 cup butter or 1/2 cup margarine, softened
1 cup granulated sugar
2 eggs
1 teaspoon finely shredded lemon peel
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 cup milk
1/2 cup chopped pecans
1/4 cup granulated sugar
3 tablespoons lemon juice
1 teaspoon finely shredded lemon peel
1 (8 ounce) package cream cheese, softened
1/4 cup sifted powdered sugar
1 tablespoon orange juice
1 teaspoon finely shredded orange rind

Steps:

  • To make the bread: Preheat the oven to 350°. Grease and flour bottom and halfway up the sides of an 8x4x2inch loaf pan; set aside.
  • In a large mixing bowl, cream the softened butter or margarine and the 1 cup granulated sugar together with an electric mixer until fluffy.
  • Add the eggs and the 1 teaspoon lemon peel. Beat the mixture well.
  • Stir together the flour and baking powder. Add the flour-baking powder mixture to the sugar mixture alternately with the milk, beating well after each addition.
  • Stir in the chopped pecans.
  • Spread the batter in the prepared loaf pan and bake in the 350° oven for 55 to 60 minutes or until a wooden toothpick inserted near the center of the bread comes out clean.
  • If necessary, cover the bread with aluminum foil for the last 15 minutes of baking to prevent overbrowning.
  • Meanwhile, to make the Lemon Glaze: Stir together the 1/4 cup granulated sugar, the lemon juice and the 1 teaspoon lemon peel. Spoon the Lemon Glaze over the hot bread. Cool in the pan for 10 minutes.
  • A very nice bread!Remove the bread from the pan and cool on a wire rack.
  • To make the Orange Cream Cheese: In a small bowl, stir together the cream cheese, powdered sugar, orange juice and orange peel until the mixture is well blended. Serve the Orange Cream Cheese with the Lemon Tea Bread.

2 1/4 cups granulated sugar
1/4 cup lemon juice
2 teaspoons lemon zest
8 ounces butter, melted
3 large eggs, room temperature
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2 1/2 cups yellow squash
1 tablespoon milk
1 teaspoon light corn syrup
1 1/4 cups powdered sugar
1 tablespoon lemon juice

Steps:

  • Heat your oven to 350 F. Grease two 8 x 4-inch loaf pans with cooking spray. Drain the yellow squash in a colander over the sink. Thoroughly combine the sugar, lemon juice, lemon zest, and melted butter in a bowl. Beat the eggs in one at a time and continue to beat for 2 to 3 minutes, until the texture is light and fluffy. Take another bowl and whisk together the flour, salt, baking soda, and baking powder. Mix the dry ingredients with the batter until only just combined. Thoroughly mix the drained squash into the batter, then divide the batter between the two pans. Bake for around 1 hour, until a toothpick inserted in the centre comes out clean (start checking after it has baked for 45 mins). Whilst the bread is baking, start making the glaze. To make the glaze, heat 1 tablespoon of milk with the corn syrup in a small saucepan until it is almost simmering. Add the powdered sugar and lemon juice and whisk until smooth. If the mixture is too thick, add a teaspoon of milk at a time. The texture should be thick but fluid. Set the glaze aside. Once the bread is cooked, place it - in its pan - on a wire rack. Brush on the lemon glaze immediately and stand for 10 minutes. Carefully run a knife around the edges of the bread and remove it from the pan. Return it to the wire rack and allow it to cool.
