Golden raisins and lemon zest give this broccoli salad its fruity appeal. (We think its flavor is pretty golden, too!)

Number Of Ingredients 6

5 cups broccoli florets
1/2 cup KRAFT Classic Ranch Dressing
1/4 cup golden raisins
2 Tbsp. finely chopped red onions
1/2 tsp. grated lemon zest
2 Tbsp. chopped pecans

Steps:

  • Cook broccoli in boiling water 1 min. Rinse with cold water; drain well.
  • Toss broccoli with dressing, raisins, onions and lemon peel in large bowl; cover.
  • Refrigerate at least 30 min. Sprinkle with pecans just before serving.

1 (16 ounce) package frozen chopped broccoli
1 (7 1/2 ounce) can semicondensed cream of mushroom soup
1/4 cup shredded American cheese
2 tablespoons milk
1 tablespoon mayonnaise
2 tablespoons crushed crackers

Steps:

  • Cook frozen broccoli according to package directions; drain.
  • Transfer to a 1-1/2 quart casserole.
  • Combine soup, cheese, milk, mayonnaise.
  • Stir into broccoli.
  • Top with crushed crackers.
  • Bake at 350* for 30 minutes.

My sister-in-law Mindy invited me over for lunch one day and served this. It was delicious. She passed away from breast cancer last year, so when I make this I always think of our wonderful day together and her teaching me to make a good pie crust.

1 1/2 lbs fresh broccoli
1 (10 3/4 ounce) can cream of mushroom soup
1/4 cup mayonnaise
1/4 cup shredded sharp American cheese
1 tablespoon chopped pimiento
1 teaspoon lemon juice
1/3 cup crushed cheese crackers

Steps:

  • Cut up broccoli to make about 6 cups.
  • Cook in covered saucepan in a small amount of boiling salted water for 10-15 minutes.
  • Drain well.
  • Pour into a 1-1/2 quart casserole.
  • Mix soup, mayo, cheese, pimiento, and lemon juice together.
  • Pour over broccoli and top with crushed crackers.
  • Bake uncovered at 350 for 35 minutes.

I absolutely love the nutty flavor of gruyere cheese and the parmesan/panko topping is delish.

kosher salt
2 lb broccoli
2 Tbsp unsalted butter
1/4 c all-purpose flour
2 c milk
1/2 small yellow onion, thinly sliced
1 bay leaf
1 c gruyere cheese, grated
freshly ground black pepper
1 c panko breadcrumbs
1/4 c parmigiano-reggiano cheese, grated
2 Tbsp olive oil

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Bring a large saucepan of well-salted water to a boil over high heat. Cut the heads from the broccoli stalks and cut the heads into small florets. Peel the stalks and thinly slice. Add the broccoli to the boiling water and cook 2 minutes. Transfer the broccoli to a bowl filled with ice water, then drain well.
  • 3. In a 10-inch fry pan, melt butter over medium heat. Add the flour and stir until well incorporated and fragrant, 1-2 minutes. Slowly whisk in the milk and bring to a boil. Reduce heat to low, add the onion and bay leaf and simmer, stirring frequently, until the mixture thickens, about 8 minutes. Remove and discard the bay leaf and add the cheese, stirring until the cheese is melted. Season with salt and pepper. Carefully fold in the broccoli and spread in an even layer in a well greased baking dish.
  • 4. In a small bowl, stir together the panko, parmesan cheese and olive oil - season with salt and pepper. Sprinkle the panko mixture over the broccoli mixture. Bake until the gratin is golden and bubbly - 40=45 minutes. Let rest for 15 minutes before serving.

I absolutely love the Golden Broccoli Cheese soup at Subway. This is the closest recipe I've found to the real deal. Enjoy!

2 teaspoons onions
2 teaspoons melted butter
3 tablespoons flour
1/4 teaspoon pepper
2 cups milk
1 cup grated cheddar cheese (I use white cheddar)
3 chicken bouillon cubes
1 1/2 cups boiling water
1 (10 ounce) package frozen broccoli

Steps:

  • Cook onion in butter until it's tender.
  • Stir in flour and pepper; add milk.
  • Cook over medium heat until thickened to make the roux.
  • Slowly add cheese.
  • In another pan, dissolve bouillon cubes in boiling water.
  • Add broccoli. Cook until tender.
  • Add to cheese mixture and stir well.
  • Note: You may want to chop up broccoli into finer pieces depending on your preference.

Copycat Subway Golden Creamy Broccoli Soup image

I have fallen in love with the Subway golden broccoli soup. However I found that it was high in fat. I found a recipe of a copy cat on the internet and tweaked to fit my low fat/ calorie lifestyle. 2/16/10 I tried making this soup again this time I didn't use preshredded reduced fat cheese. I grated my own using cracker barrell 2% sharp chedder. This made a huge difference the cheese integrated nicely and the soup was smooth.

2 tablespoons Smart Balance light butter spread
1 medium onion
2 stalks celery
2 carrots
2 tablespoons all-purpose flour
3 cups reduced-sodium fat-free chicken broth
1 cup 1% low-fat milk
1 (10 ounce) bag frozen broccoli
1 1/2 cups reduced-fat cheddar cheese

Steps:

  • Saute onion, celery and carrots in margarine until tender.
  • Add flour to make roux. cook 5 minutes.
  • Add chicken stock slowly and stir to avoid lumps.
  • Add frozen broccoli. I usually use the steam fresh and cook it in the microwave first.
  • Let simmer 15 minutes.
  • Add milk slowly, make sure your soup is not boiling hot because your milk will curdle.
  • Add shredded cheddar.
  • Simmer 30 minutes and enjoy!
  • Makes 4 hearty servings.
