GOAT CHEESE SPREAD (FROM THORNTON WINERY)
On my first date with my husband we went wine tasting in the Temecula Valley. The Thornton Winery has a champagne tasting bar where they serve you a goat cheese spread with slices of fresh bread. When I asked about the recipe they quickly came back with a copy of it for me from behind the bar. It seems they keep a stack there due to the many requests they get. Enjoy!

- Blend together the cream cheese and goat cheese.
- Mix in the herbs, garlic, and shallots.
- Salt to taste.

FRESH GOAT CHEESE SPREAD

- In a small bowl with a fork, mash goat cheese with enough cream to make a spreadable consistency. Add basil, green onion, garlic, and salt, to taste. Mix well. Garnish with fresh nasturtium flowers, if available, and serve with warm tortillas alongside. To eat, spread a few spoonfuls of goat cheese mixture inside a tortilla and roll up.
GOAT CHEESE SPREAD WITH FRESH SPINACH AND BASIL
This is a yummy spread for crackers or toasted pita bread. Only use fresh spinach and basil. It makes a difference. Please note: Cooking time is chilling time!!

- Spoon the yogurt onto several layers of heavy-duty paper towels; spread the yogurt to a 1/2 inch thickness. Cover with additional paper towels; let stand for 5 minutes to remove the excess moisture.
- Position the knife blade in a food processor bowl; scrape yogurt into the bowl, using a rubber spatula. Add the goat cheese and olive oil; process until smooth, stopping once to scrape down the sides. Add the spinach, basil, and red pepper; process until the spinach is chopped.
- Spoon the mixture into a bowl; cover and chill at least 2 hours. Serve with assorted crackers.

MEDITERRANEAN GOAT CHEESE SPREAD (WW)
Sun-dried tomatoes are a favorite of ours, so this dip was a must. You can buy herb-flavored goat cheese and experiment with different flavors. NOTE: Gently fold the olives and tomatoes into the cheese mixture; over-mixing may turn the spread an unappetizing purplish pink color. From "WW 5-Ingredient-15 Minute Recipes" and = 1 point. - Combine tomatoes and water in a microwave-safe bowl. Microwave on HIGH one (1) minute or until water boils. Remove from microwave;' cover with plastic wrap and let stand 10 minutes to soften.
- Meanwhile, place cheese in a microwave-safe bowl; microwave on HIGH 15 seconds or until soft. Add sour cream and salt; stir until well blended. Fold in olives.
- Drain tomatoes; finely chop, and fold gently into goat cheese mixture.
- Serve immediately, or cover and chill until ready to serve.
