RAVIOLI WITH WALNUTS, GOAT'S CHEESE & CAVOLO NERO SAUCE

Make this pasta dish using lasagne sheets and a homemade goat's cheese paste. If you have time, it's worth using freshly shelled walnuts for a sweeter flavour

200g cavolo nero
75ml olive oil , plus extra to toss the pasta
1small garlic clove
1 lemon , juiced
8-12 fresh or dried lasagne sheets , depending on size
finely grated pecorino , parmesan or vegetarian alternative, to serve
140g walnuts
handful sage leaves , chopped
120g goat's cheese
lemon juice , to taste
50ml olive oil

Steps:

  • Bring a large pan of lightly salted water to the boil, then add the cavolo nero. Cook for 1-2 mins until the kale turns bright green and softens. Lift out with tongs into a colander, keeping the cooking water to boil the pasta. Run cold water over the kale, squeeze out any excess water, then transfer to a food processor. Add the oil, garlic, lemon juice and 1 tsp salt, then blitz to a fine pesto. Season to taste and transfer to a small pan. Gently warm over a medium-low heat.
  • Clean the food processor. For the goat's cheese paste, tip in the nuts, sage, goat's cheese, a good squeeze of lemon juice and the oil, then blitz to a paste. Season, then warm in another small pan over a medium-low heat, stirring occasionally.
  • Bring the pan of cavolo water to the boil again, adding more water if needed. Add the pasta sheets and simmer following pack instructions. Drain, keeping back a cup of the pasta water to add to the sauce (about 400ml). Cut the pasta sheets in half and toss in a little olive oil.
  • Stir the reserved pasta water through the cavolo sauce and keep on a low heat. If the sauce looks thick, thin down with a little more water, or increase the heat a little if too thin; it should be pourable like double cream. Spoon a pool of sauce onto each plate. Layer the lasagne sheets on top with spoonfuls of the goat's cheese paste in-between each layer. Top with the last sheet of pasta and ladle over a little more sauce, then scatter over the cheese. I got this from my pasta cookbook, almost any kind of nut will work in this but walnuts are the one from the recipe, plus I made this with them and it was soooo good! I used an extra 4 TB olive oil instead of butter, but I'm posting it as is from the cookbook. I used jarred parmesan for convenience. This so FAST and easy, you can make this right when the ravioli is cooking, after it's done cooking, or make it ahead of time. This matches up the best with spinach ravioli and squash ravioli.

36 pieces ravioli (6 per person)
1 1/2 cups shelled walnuts
4 tablespoons unsalted butter
200 ml olive oil
1/2 cup parmesan cheese, freshly grated (I use jarred, just as good)
100 ml heavy cream

Steps:

  • Grind up the nuts in a food processor completely.
  • Add the butter and olive oil and pulse a few times until a nice paste forms.
  • Add the cheese and pulse 2-3 times.
  • Add the cream gradually and keep it on a continual blend until smooth.
  • Put the cooked ravioli onto plates, and pour equal amounts of the sauce over it. The hot ravioli will heat up the sauce on its own after a few minutes.

Tried a goat cheese & hazelnut ravioli at a restaurant and fell in love. This was the closest recipe I could find...sounded good too! Have not tried yet but will post results when I do.

2 lbs butternut squash, seeded and halved
1 medium onion, chopped
1 1/2 teaspoons ground sage
1 tablespoon butter
1 minced garlic clove
3 ounces goat cheese, aged and grated
60 wonton wrappers, thawed
1/2 cup butter
1/3 cup hazelnuts, skinned toasted and chopped coarse

Steps:

  • Preheat oven to 425°F and lightly grease a baking sheet.
  • MAKE FILLING:.
  • Roast squash, flesh down, in center of oven for 30 mins (or til tender). Scoop & mash flesh when cool.
  • Place onion, sage, butter, salt & pepper in skillet. Cook 5 mins til onion is golden. Add garlic, cook 1 minute.
  • Combine onion mixture, squash and goat cheese.
  • Fill wonton wrapper with 1 tablespoons filling (flour surface under to prevent sticking). Wet edges and top with second wrapper. Press down around filling to seal and remove air. Place on towel to dry slightly, turning. Fill the rest of wontons the same way.
  • MAKE SAUCE:.
  • Cook butter & hazelnuts over medium heat until butter browns, about 3 minutes Remove from heat, season with salt & pepper, and keep warm.
  • COOK RAVIOLI:.
  • Gently boil 5 qts salted water in 6qt pot. Cook in 3 batches, about 6 mins each (will rise to surface). Transfer to shallow pan with some cooking water to keep raviolis warm. When all cooked, plate and top with sauce. (may also steam).
