SPINACH AND GOAT CHEESE CROSTINI



Spinach and Goat Cheese Crostini image

Top a small toast with a garlicky spinach mixture, then sprinkle with goat cheese and bake.

Number Of Ingredients 9

4 tablespoons extra-virgin olive oil
Eighteen 1/2-inch-thick slices baguette
Kosher salt and freshly ground black pepper
2 cloves garlic, 1 whole and 1 finely chopped
2 tablespoons pine nuts
Pinch crushed red pepper flakes, plus more for garnish (optional)
8 ounces spinach, hard stems removed
1/2 teaspoon freshly grated lemon zest
3 ounces fresh goat cheese, crumbled

Steps:

  • Preheat the oven to 400 degrees F.
  • Use 2 tablespoons of the oil to brush both sides of the bread slices. Arrange on a baking sheet and sprinkle lightly with salt and pepper. Bake until golden, flipping halfway through, about 7 minutes. While the toasts are hot, rub both sides with the whole garlic clove and return the bread to the baking sheet.
  • Toast the pine nuts in a large skillet over medium heat, swirling, until lightly golden, about 3 minutes. Transfer to a medium bowl. Add the remaining 2 tablespoons olive, minced garlic and red pepper flakes to the skillet and cook, over medium heat and stirring frequently, until the garlic is soft, about 1 minute. Add the spinach, in batches, sprinkling with salt after each new addition, until wilted and tender. Transfer to the bowl with the pine nuts, add the lemon zest and toss well. Drain the mixture in a colander and then roughly chop it.
  • Divide the spinach mixture among the toasts and top each with some crumbled goat cheese. Bake just until cheese starts to melt, 3 to 5 minutes. Sprinkle with more red pepper flakes if using and serve warm.

1 tablespoon unsalted butter
2 cloves garlic, thinly sliced
1 5-ounce package chopped mixed winter greens, such as kale and/or chard (about 8 cups)
Kosher salt
1 sheet frozen puff pastry, thawed (half of a 17-ounce package)
All-purpose flour, for dusting
5 ounces goat cheese, crumbled (about 3/4 cup)
1/2 cup grated Parmesan cheese (about 1 ounce)
4 large eggs
1 cup heavy cream
1/4 teaspoon ground nutmeg
Freshly ground pepper

Steps:

  • Preheat the oven to 425 degrees F. Heat the olive oil and butter in a large skillet over medium-high heat. Add the garlic and cook until softened, about 1 minute. Add the greens and 1/2 teaspoon salt; cook, stirring occasionally, until the greens wilt and most of the liquid evaporates, 5 to 7 minutes.
  • Meanwhile, roll out the puff pastry on a lightly floured surface until large enough to fit in a 9-inch pie plate. Ease into the pie plate and trim the edge; crimp if desired. Scatter the goat cheese and Parmesan in the crust, then top with the sauteed greens.
  • Whisk the eggs, heavy cream, nutmeg, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl; pour over the greens. Bake until the crust is golden brown and the quiche is set, about 20 minutes. Slice into wedges.

1 pinch salt
1/2 cup cold unsalted butter, cut into small pieces
1 large egg
2 tablespoons ice water
1 lb spinach, large stems discarded, leaves rinsed but not dried
1 garlic clove, minced
1 cup milk
1/2 cup heavy cream
2 large eggs
2 large egg yolks
1 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
1/2 lb goat cheese, log cut into seven 1/3-inch rounds

Steps:

  • MAKE THE PASTRY: In a large bowl, whisk the flour with the salt. Using a pastry blender, cut in the butter until the mixture resembles coarse meal. Lightly beat the egg with the water and sprinkle over the flour mixture. Stir with a fork to lightly blend, then squeeze gently until a dough forms. Pat into a disk, wrap in plastic and refrigerate for at least 30 minutes.
  • Preheat the oven to 350°. On a lightly floured surface, roll out the pastry to a 14-inch round about 1/8 inch thick. Fit the round into a 12-inch tart pan with a removable bottom and trim the overhang. Refrigerate the shell for at least 20 minutes.
  • Line the tart shell with foil and fill with pie weights or rice. Bake until the pastry is firm, about 30 minutes. Remove the foil and weights and bake for about 10 minutes longer, or until golden brown. Transfer the shell to a rack to cool.
  • MAKE THE FILLING: Heat a large skillet. Add a large handful of the spinach and cook over moderately high heat, stirring, until wilted. Transfer to a colander set over a bowl. Repeat until all of the spinach has been cooked; let cool. Squeeze the spinach dry and coarsely chop it. Toss the spinach with the garlic and spread it in the cooled pastry shell.
  • In a medium bowl, whisk the milk with the cream, eggs, egg yolks, salt and pepper. Arrange the goat cheese rounds on the spinach. Pour the custard into the shell and bake for about 40 minutes, or until just set. Transfer the quiche to a rack to cool slightly. Cut into wedges and serve.

This green quiche laden with herbs and with thin slices of fresh goat cheese baked on top has a Gallic rusticity. A proper quiche (also known as a tarte salée, or savory open pie) should have really good pastry and contain a soft, tender eggy custard. It should be light enough to serve as a first course, or in larger portions for a simple main course. It should be something to sing about.

Short-crust dough (see recipe), rolled and chilled in a 9 1/2-inch tart pan
3 large eggs
1 and 1/4 cups half-and-half
1/2 teaspoon kosher salt
Black pepper, to taste
1/2 teaspoon grated lemon zest
1 teaspoon chopped fresh thyme
2 tablespoons chopped scallions
2 tablespoons chopped parsley
4 ounces fresh goat cheese, sliced into 1/4-inch rounds

Steps:

  • Bake prepared dough at 375 degrees for 15 to 20 minutes, until lightly browned. Patch any small holes with leftover dough. Cool.
  • Make the custard: in mixing bowl, beat eggs. Whisk in half-and-half, salt, pepper, lemon zest, thyme, scallions and parsley. Set aside.
  • Set tart pan on a baking sheet. Spread goat cheese slices evenly over bottom of pastry. Beat custard once more and carefully pour into shell. Bake at 375 degrees for 30 to 35 minutes, until top is golden and custard is set. Cool for 10 minutes. Serve warm or at room temperature.

  • Heat a dash of oil in a frying pan, and add the garlic and spinach. Cook for a few minutes, over a medium heat, until wilted. Set aside.
  • In a large mixing bowl, combine the eggs, cream, self-raising flour, and grated cheese. Add the dried herbs and plenty of salt and pepper, and mix thoroughly until the eggs are well mixed in.
  • Thoroughly grease a springform cake tin (mine measured 8 inches), and pour in the egg mixture. Scatter the garlic spinach on top, along with the crumbled goat's cheese. Poke them down into the egg. Place the halved tomatoes on top, and scatter over the pine nuts.

  • Preheat oven to 375°. Lay crust into pie pan, folding edges under at the rim to create a double thick edge. Press the bottom and sides of the crust against the pan firmly. Using the tines of a fork, crimp around the edges of the crust. Prick the bottom of pie crust several times with a fork. Cut a piece of parchment or aluminum foil large enough to cover the pastry and place it on top. Fill the parchment or foil with about 1 cup of dried beans or pastry weights, if you have them. Bake for 10-12 minutes until crust is slightly golden and set aside. Remove the pie weights.

(I have a gas stovetop which runs a little hot, so medium low works for me -- you may have to adjust your temperature up or down depending on your stove.) Add the shallots and spice blend and simmer the shallots until tender and translucent, about 5 minutes. Placing a lid on the pan for part of the cooking will help them soften.
  • Fill the pie shell with the quiche filling and spread it out evenly in the pie plate. Sprinkle with reserved cheeses and bake for 35 minutes or until the custard is set and the top of the quiche is starting to brown.
