Number Of Ingredients 13

3 cups chopped yellow onions (2 onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 1/2 teaspoons freshly ground black pepper
3 (10-ounce) packages frozen chopped spinach, defrosted
6 extra-large eggs, beaten
2 teaspoons grated nutmeg
1/2 cup freshly grated Parmesan cheese
3 tablespoons plain dry bread crumbs
1/2 pound good feta, cut into 1/2-inch cubes
1/2 cup pignoli (pine nuts)
1/4 pound salted butter, melted
6 sheets phyllo dough, defrosted

Steps:

  • Preheat the oven to 375 degrees. In a medium saute pan on medium heat, saute the onions with the olive oil until translucent and slightly browned, 10 to 15 minutes. Add the salt and pepper and allow to cool slightly. Squeeze out and discard as much of the liquid from the spinach as possible. Put the spinach into a bowl and then gently mix in the onions, eggs, nutmeg, Parmesan cheese, bread crumbs, feta, and pignoli. Butter an ovenproof, nonstick, 8-inch saute pan and line it with 6 stacked sheets of phyllo dough, brushing each with melted butter and letting the edges hang over the pan. Pour the spinach mixture into the middle of the phyllo and neatly fold the edges up and over the top to seal in the filling. Brush the top well with melted butter. Bake for 1 hour, until the top is golden brown and the filling is set. Remove from the oven and allow to cool completely. Serve at room temperature.

I love Spinach Pie, but Being a Gluten Free eater, It took me awhile to figure out a way to make a spinach pie gluten free....how do you replace the phyllo pastry...? well I found a tasty way to do it.

lumpia skins (may be in stores as Spring roll wrappers)
1 (10 ounce) can spinach, drained
4 ounces feta cheese, pre-crumbled
2 tablespoons olive oil
1 teaspoon dill
1 tablespoon garlic powder
1 small onion, finely chopped (or shredded)
1 beaten egg
salt and pepper
4 -5 tablespoons vegetable oil

Steps:

  • 1. Heat olive oil in skillet, add onions, dill, salt and pepper, heat for about 5 minutes, just to soften onions and mix flavors. Remove from heat and let cool for a couple minutes.
  • 2. Mix all the rest of the ingredients together ecxept for Lumpia wrappers, and vegetable oil.
  • 3. To assemble --
  • 4. Lay out your wrappers, note: keep moist not sopping wet, but they are very fragile when dried out. We like to use a spray bottle just for these. Use about 2 Tblspns. of mixture, place about an inch from one end, spread out evenly, don't go all the way to the sides, you will need to fold them. Now roll up towards the center, fold in the sides, and continue until done, use an eggwash to seal.
  • .5. Heat vegetable oil in skillet at about 350 put in your rolls, and let cook for about 5 minutes, or until golden brown, roll over and make sure golden all over, don't burn.
  • 6. remove from oil and dry on paper towels. serve.
  • 7. Enjoy!

  • Wrap the spinach in several layers of paper towels (or in a clean kitchen towel) and squeeze out as much liquid as possible.
  • Sprinkle a large sheet of parchment paper lightly with flour. Roll out the dough on the parchment—lifting the dough and lightly flouring the parchment as needed to prevent sticking—into an eighth-inch thick round (it should be 11-to 12-inch inches in diameter). If the dough cracks, just patch it up as needed. Brush off any excess flour, then slide the sheet of parchment (with the dough) onto a baking sheet.
  • Pile the spinach filling onto the center of the dough and spread it in an even layer, leaving a 2-inch border. Fold up the edges of the dough, pressing them gently to seal. Refrigerate the galette for 10 minutes.
