This is a very simple yeast bread recipe from Allergy Cooking With Ease, with no other flours than oat flour (grind oats in your blender). It turned out a little like a sponge bread in texture, but had a nice flavor and did not crumble when slicing. Has a bit of a sweet flavor (I used honey). I have tried a few gluten free breads, and this one turned out great on the first try. Didn't rise as much as I liked, but I'm wondering if that's because I used regular yeast, not quick-rise.

1 1/2 cups warm water (115 )
1/2 cup date sugar or 3 ounces raw honey
1 (1/4 ounce) package fast rise yeast or 2 1/4 teaspoons yeast
2 3/4 cups oat flour (gluten free, if preferred)
2 1/4 teaspoons guar gum
1/2 teaspoon salt
3 tablespoons oil
oatmeal (optional)

Steps:

  • Mix together the warm water, sugar or honey and yeast and let themixture stand for abotu 10 minutes or until foamy.
  • Stir together the dry ingredients in a large stand mixer bowl; Add the yeast mixture and oil and beat the dough for 3 minutes at medium speed.
  • Scrape the dough from the beaters and sides into the bottom of the bowl and cover the bowl with a towel.
  • Let rise in a warm place for 1 to 1 1/2 hours.
  • Beat the dough again for 3 minutes.
  • Oil an 8x4-inch loaf pan and coat the inside with oatmeal. Put dough in the pan and allow to rise in a warm place for about 20 minutes, or unitl it barely doubles.
  • Preheat oven to 350° F and bake the loaf for about 75 minutes, loosely covering with foil after the first 15 minutes to prevent excessive browning.

2 cups gluten-free all-purpose baking flour
1 teaspoon baking soda
1/4 teaspoon salt
4 large eggs, room temperature
2 cups mashed ripe bananas (4-5 medium)
1 cup sugar
1/2 cup unsweetened applesauce
1/3 cup canola oil
1 teaspoon vanilla extract
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, combine flour, baking soda and salt. In a small bowl, whisk eggs, bananas, sugar, applesauce, oil and vanilla. Stir into dry ingredients just until moistened., Transfer to two greased 8x4-in. loaf pans. Sprinkle with walnuts. Bake until a toothpick inserted in the center comes out clean, 45-55 minutes. Cool for 10 minutes before removing from pans to wire racks.

2 cups quick oats, blended into flour
4 large ripe bananas, 2 cups, mashed
2 eggs
2 tsp pure vanilla extract
1/2 cup coconut sugar
2 tsp ground cinnamon
1 tsp baking soda
1/2 tsp sea salt
1 tsp lemon juice, or lime juice

Steps:

  • Preheat the oven to 350 degrees F and line a 9" x 5" loaf pan with parchment paper.
  • Place the rolled oats in a blender and blend on medium speed until a flour forms (this only takes about 20 to 30 seconds. Remember, it is fine if the flour is somewhat gritty). Transfer the oat flour to a mixing bowl.
  • Add the coconut sugar, baking soda, sea salt and cinnamon and stir together until combined.
  • Mash the bananas in a separate mixing bowl then whisk in the eggs and vanilla extract.
  • Stir the dry ingredients into the bowl with the wet ingredients. Add in the lime juice and stir to incorporate.
  • Transfer the batter to the parchment-lined loaf pan and smooth into an even layer. If desired, sprinkle some whole quick oats on top for looksies.
  • Bake for 40 to 45 minutes, until banana bread has risen substantially and the top appears firm.
  • Remove from the oven and allow bread to cool at least 30 minutes. Tug on the edges of the parchment paper to lift the loaf out of the pan and place it on a cutting board. Cut thick slices and enjoy!

½ cup melted coconut oil
⅓ cup brown sugar
⅓ cup sugar
1 egg

1 ½ cups gluten-free flour blend
1 teaspoon cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 teaspoons flax meal

Steps:

  • Preheat oven to 350℉. Line a muffin tins with cupcake liners, or spray well with cooking spray.
  • In a small bowl, combine hot water and oatmeal. Set aside.
  • In the bowl of a stand mixer with the paddle attachment on, mix the coconut oil, mashed banana, brown sugar, white sugar, egg, and vanilla extract, beating for 2 minutes.
  • In a separate bowl, combine the gluten-free flour blend, cinnamon, baking powder, baking soda, salt, and flax meal.
  • Add the dry ingredients to the wet ingredients, mixing just until combined.
  • Add the soaked oatmeal and chocolate chunks to the batter, mixing well and scraping down the bowl as necessary.
  • Scoop the dough into the muffin tins, filling ¾ of the way full.
  • Bake for 25-28 minutes, until golden brown and a toothpick inserted comes out clean.

Pinch of sea salt
1 banana (sliced (divided))
1 Tablespoon chopped walnuts
2 teaspoons coconut oil
2 teaspoons maple syrup (plus more for serving)

Steps:

  • Add oats, cinnamon, vanilla, sea salt and half of the banana slices to a medium pot. Add water and stir to combine.
  • Heat over medium-high heat for 8-10 minutes. Be sure to stir the oats several times while cooking to make sure the banana slices melt into the oats and the oats don't stick to the pot. You'll know the oatmeal is done when all the liquid is absorbed and the oats are thick and fluffy.
  • While oats are cooking, heat a skillet over medium and add coconut oil and maple syrup. Add remaining banana slices and walnuts to the skillet. Cook banana slices 2 minutes on each side or until they start to get a golden crust. Heat walnuts until just toasted. Remove from heat.
  • Place cooked oats into a bowl and top with caramelized bananas and walnuts. For sweeter oats, drizzle with extra maple syrup.

Steps:

  • Preheat the oven to 350F and line a loaf pan with parchment paper or grease with oil
  • Mash ripe bananas in a large bowl with a potato mashed or the back of a fork
  • Whisk in the eggs, oil, maple syrup and vanilla extract
  • In a separate bowl combine oat flour, rolled oats, baking soda, baking powder, and salt
  • Fold dry ingredients into wet ingredients
  • Fold in chocolate chips
  • Pour into the loaf pan and top with additional chocolate chips, oats, and a sprinkle of sugar to get a glistening top
  • Place in the oven and bake for 45 minutes
  • Allow the loaf to cool completely and then slice into slices and enjoy!

1/2 cup butter, room temperature
2/3 cup brown sugar
2 eggs
3 -4 bananas, brown and mashed

1 cup gluten-free oats

1 cup pecans, chopped (optional)
2 cups gluten-free flour (I use Pamela's baking and pancake mix)

  • Preheat oven to 350 degrees.
  • Spray or prep 1-2 loaf pans. (My family prefers thin bread, so I make this into 2 loaves).
  • In small bowl, combine oats & applesauce, set aside.

  • In small bowl, mix dry ingredients (flour, baking powder, xanthan gum).

Steps:

  • Preheat the oven to 350 degrees. Spray a loaf pan with non-stick baking spray or line with parchment paper and set aside.
