GLUTEN FREE GINGERBREAD COOKIES W/ SEA SALT CARAMEL RUM RAISIN FILLING
These Gluten Free Gingerbread Cookies with Sea Salt Caramel Rum Raisin Filling are absolutely scrumptious. Soft, moist, and delicately spiced, they're a delicious holiday treat!

- Pre-heat oven to 350 degrees.
- Place raisins and 2 cups of water in a medium size mixing bowl. Heat for 3 minutes in microwave, let sit for 5 minutes to soften, then drain.
- While the raisins are soaking, combine 2 cups of the walnuts, flax meal, sorghum flour, maple syrup, spices, and baking soda, and 1/8 teaspoon of salt in a food processor. Add 1/2 cup of softened raisins, and process the ingredients in the food processor until moist and mixture starts to pull away from the sides of the bowl.
- Divide dough into 16 balls and place on un-greased baking sheet. Use your thumb to press each cookie ball, then bake for 8-10 minutes, or until cookies are lightly browned around the edges. Allow cookies to cool completely before removing from the baking sheet.
- Make the sea salt rum raisin caramel filling while the cookies are baking, by combining the remaining 1/2 cup of raisins and 1/4 cup of walnuts, and 1/8 teaspoon of salt with the rum (or vanilla) and coconut oil in a small food processor or blender, and processing, scraping the sides of the food processor or blender as needed, until mixture is relatively smooth.
- Spoon 1 teaspoon filling onto each cookie, and serve.

- Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Combine almond flour, arrowroot, ginger, salt, cinnamon, and baking soda in a bowl. Add melted coconut oil, brown sugar, and molasses; mix well until a soft, sticky dough is formed. Wrap in plastic wrap and chill in the freezer for 40 minutes.
- Roll out dough on a work surface dusted with arrowroot to 1/4 to 1/2-inch thickness. Dip cookie cutter in arrowroot, cut out cookies, and place on the prepared baking sheets.
- Bake in the preheated oven until lightly golden, 8 to 10 minutes.

- In a small pan heat the butter, syrup and sugar together until melted, stirring occasionally. Set to one side to cool slightly. In a large bowl mix together the bicarb, ginger, cinnamon and flour. Pour in the melted butter mixture and stir to combine and using your hands, bring together to form a dough. This will be soft but will set up in the fridge.
- Take 2 sheets of greaseproof paper, lay the dough down on one, shape it into a rectangle and place the other sheet on top of it. Roll the dough out to 1/2 cm thick and put flat in the fridge for 1 hour to set and firm up.
- Heat the oven to 190C/170C fan/gas 5 and line a large baking tray with non-stick greaseproof paper. Take the rolled dough out of the fridge and cut out shapes from it. We did 9cm stars, but you can also choose any shape, depending on the size it will need a few mins less/more in the oven. We also did some with, smaller stars cut out the centre of them.
- Meanwhile make the icing, combine the icing sugar with 1 - 2 tbsp water, until it's thick and pipeable but not thin enough that it will run. Decorate the cooled biscuits with whatever designs

- Beat together the butter, treacle, brown sugar and salt in a large mixing bowl. Add the egg, then beat through all of the remaining dry ingredients apart from the caster sugar. Chill the mixture in the fridge for 1 hr.
- Heat the oven to 200C/180C fan/gas 4. Line two baking sheets with baking parchment. Roll the mixture into 20 even-sized balls (weighing for accuracy, if you like). Tip the caster sugar onto a small plate, then add each ball and roll around to coat. Space each ball out on the baking sheets. Bake for 9-10 mins until golden brown. Leave to cool completely on a wire rack.

- In a bowl cream the butter and brown sugar.
- Add golden syrup and egg and mix till combined.
- In a seperate bowl sift together all the dry ingredients, then add to the wet ingredients.
- Mix together and then refrigerate for 1 hour.
- Remove dough from refrigerator and place onto a floured surface and knead lightly.
- roll out to 5mm thickness and then cut into shapes using cookie cutters.
- Bake in 170 degree celsius oven for approx 15 minutes or till well browned.
- Leave to cool on trays for 5 minutes then transfer to cooking racks.

- Prepare the Dough. Whisk together gluten-free flour, ground ginger, ground cinnamon, baking powder, salt, and ground clove. Set aside.
- Cream together butter and dark brown sugar until a thick paste forms, about 30 seconds. Add egg and molasses. Blend until combined. Stop mixer and scrape down the bottom and sides of the bowl. Run mixer for a few seconds after scraping the bowl. Add dry ingredients. Blend until a dough forms.
- Chill Dough. Lightly dust your countertop with gluten-free flour. Turn dough out onto counter and pat into a round. Wrap tightly with plastic wrap. Chill for several hours or overnight.
- Bake Cookies. Preheat oven to 350°F. Line one or two baking sheets with parchment paper and set aside. Remove dough from the refrigerator and allow to stand for about 15 minutes. This allows the dough to soften a little, making it easier to roll. Divide dough in half and roll out to about 1/4-inch thickness on a generously rice floured countertop. Cut into shapes. Place cookies on a parchment-lined baking sheet. Bake until edges are golden-brown and aromatic, about 12 minutes. Repeat with remaining dough. Be sure to allow the baking sheet to cool between batches to prevent the cookies from spreading.
