Gluten-Free Soft Dinner Roll Recipe. Easy to Make. Dairy-Free Option included.

1/4 cup warm water, about 110 degrees F.
1 packet instant dry yeast
2 3/4 cups Bob's Red Mill 1:1 Gluten-Free Baking Flour ((see note for flour replacement))
2 tablespoons granulated sugar
1 teaspoon xanthan gum
1 teaspoon salt
1 cup warm whole milk, about 110 degrees F. ((see note for dairy-free))
1 large egg
2 tablespoons melted butter ((see note for dairy-free))
2 tablespoons melted butter
Kosher salt

Steps:

  • Combine water and yeast in the bowl of stand mixer. Stir to combine. Allow to stand for five minutes.
  • While the yeast dissolves, combine the gluten-free flour, granulated sugar, xanthan gum, and salt in a small bowl. Whisk.
  • Add the flour mixture to the yeast mixture. Add the milk, egg, and melted butter. Mix on medium speed until smooth, about three minutes. The dough will be very thick.
  • Scoop dough, about 1/3 cup each, onto a parchment lined baking sheet. Smooth the top of each roll with your fingers. Dip your fingers in cool water before smoothing. Cover pan with greased plastic wrap. Allow rolls to rise until double in size.
  • When rolls have almost doubled in size, preheat oven to 350 degrees F. Remove plastic wrap from pan. Bake rolls until golden brown, about 20 minutes.
  • Remove pan from oven. Brush rolls with melted butter and sprinkle with Kosher salt, if desired. (see note) Allow rolls to cool for about 15 minutes before serving.
  • Rolls are best enjoyed the day they are made. Store leftover rolls wrapped on the counter or place cooled rolls in a freezer bag and freeze for up to two months. Thaw rolls at room temperature overnight.

3 tablespoons honey
2 eggs
1 packet yeast (about 1 T)
1 cup sour cream
1/2 cup potato starch
1 cup cornstarch
1/2 teaspoon baking soda
1 tablespoon baking powder
2 teaspoons xanthan gum
3/4 teaspoon salt
3/4 teaspoon vinegar

Steps:

  • Preheat oven to 350 degrees F.
  • Combine all ingredients.
  • Mix well to remove all lumps.
  • The dough will be quite wet.
  • Wet hands to handle dough.
  • (Re-wet hands as needed.) Take about 1/4 cup of dough and shape into a ball.
  • Drop into greased baking tin.
  • (I use muffin or popover tins.).
  • Repeat until all dough is used.
  • Bake 18-20 minutes, until toothpick inserted in middle tests clean.
  • (Maybe it's my oven, but mine bake in 14 minutes.).

2 tablespoons organic canola oil, plus more for muffin tin and plastic wrap
1/2 cup millet
1 1/2 cups warm (115-degree) water
1 cup brown-rice flour
1 cup soy flour
1/2 cup tapioca flour
1/2 cup teff flour
2 envelopes (1/4 ounce each) active dry yeast
2 1/2 teaspoons xanthan gum
3 large eggs, room temperature
2 tablespoons unsulfured molasses, such as Grandma’s brand
2 teaspoons coarse salt

Steps:

  • Lightly brush a 12-cup muffin tin with oil. Combine millet and 1/2 cup warm water in a small pan. Bring to a boil, remove from heat, and let stand 30 minutes. Reserve.
  • Preheat oven to 400 degrees. In the bowl of an electric mixer, whisk together flours, yeast, and xanthan gum. In a separate bowl, whisk together eggs, molasses, salt, and oil. Add egg mixture to dry ingredients and beat with a paddle attachment until combined. Beat in remaining 1 cup warm water and the millet. Continue beating on medium-high speed for 5 minutes. The dough will be like thick elastic cake batter, not like traditional bread dough. Divide dough among muffin cups and spread evenly. Lightly drape with oiled plastic wrap and place in a warm spot until risen about 1 1/2 inches above edge of tin, about 1 hour (once dough begins to dome, remove plastic for remainder of rising time).
  • Reduce oven to 350 degrees. Place rolls in oven, and bake until dark brown and hollow-sounding when tapped, about 17 minutes. Cool in tin on rack for 10 minutes. Remove and cool completely. If necessary, run knife around the edge of the muffin cups to loosen before removing.

1 tablespoon white sugar
1 (.25 ounce) package rapid rise yeast
3 large eggs
1 ½ teaspoons canola oil

2 ½ cups gluten-free all purpose baking flour (such as Bob's Red Mill®)
2 teaspoons xanthan gum
1 teaspoon salt
2 teaspoons dried dill weed
1 ½ teaspoons minced garlic

Steps:

  • Stir warm water with sugar together in a bowl. Sprinkle yeast packet over water mixture and allow yeast to slightly foam, about 5 minutes.
  • Whisk eggs, canola oil, and vinegar together in a bowl until frothy.
  • Combine flour, xanthan gum, and salt together in a bowl until evenly mixed. Beat yeast mixture into flour mixture using an electric mixer until evenly combined. Beat egg mixture into flour mixture until just combined; stir in dill and garlic. Beat dough on high until dough holds together and is sticky, at least 4 minutes. Cover bowl with plastic wrap and set aside to slightly rise in a warm area, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10x13-inch baking dish.
  • Form dough into 12 large rolls and arrange 3/4-inch apart in the prepared baking dish.
  • Bake in the preheated oven rolls are lightly golden, 35 to 45 minutes.
