5 cups cherries (frozen, pitted)
1/2 tsp cinnamon
2 tbsp corn starch
2 tbsp lemon juice
3 tbsp light brown sugar
2/3 cup gluten free all-purpose flour
1/2 cup white sugar
1/2 tsp double-acting baking powder
1/4 tsp salt
1/2 cup unsalted butter
1 large egg
1 tsp vanilla extract
1/2 tsp cinnamon

Steps:

  • Preheat oven to 375F. Grease a 9x10" baking dish and set aside.
  • In a mixing bowl combine cherries, corn starch, 1/2 tsp cinnamon, lemon juice, and brown sugar. Stir together.
  • In a separate bowl, use a mixer to cream butter and white sugar together. Add vanilla extract, egg, flour, baking powder, salt, and cinnamon.
  • Pour cherry mixture into baking dish, then dollop batter on top of cherries evenly.
  • Bake 40-45 minutes, or until topping is cooked through and starting to turn golden brown.

3 tablespoons shortening
1 large egg
3 tablespoons milk

Steps:

  • Preheat oven to 400 degrees F.
  • In a saucepan combine cherries, sugar, water, and cornstarch and cook until boiling and thickened.
  • Pour into an 8-inch square baking dish.
  • In a medium mixing bowl, stir together flour, sugars, baking powder, and cinnamon.
  • Cut in palm shortening until it is crumbly.
  • Mix together egg and milk.
  • Add to flour mixture and stir just until combined.
  • Drop topping by tablespoonfuls onto filling (about 9 mounds).
  • Bake for 22-25 minutes until cobbler is brown.
  • Remove from the oven and let cool for at least 10 minutes before serving.

Gluten Free Cherry Cobbler, made with fresh or frozen sweet cherries, is the perfect summer dessert, especially when cooked up on the grill!

6 cups cherries (sweet (not tart), pitted, either fresh or thawed frozen)
1/4 teaspoon almond extract
1 tablespoon lemon juice
3/4 cup almond flour
3/4 cup gluten free flour (okay to use all-purpose flour if gluten is okay)
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 large egg (room temperature)
1/2 cup heavy cream
1/4 teaspoon almond extract
6 tablepoons unsalted butter
1 tablespoon decorator's sugar

Steps:

  • Set Traeger to smoke with lid open for about 5 minutes. Close lid and set temperature to 375 degrees F.
  • Add cherries to a 9x13 baking dish. Toss with lemon juice and almond extract.
  • If cherries are frozen, you can set them on the grill while it is heating up.
  • In medium sized bowl, combine almond and gluten free flours, sugar, baking powder and salt. Use a whisk to combine and eliminate lumps. In a separate bowl, combine egg, heavy cream and almond extract. Pour wet ingredients into dry and mix to combine. Mixture will be crumbly. Cover cherries with this mixture.
  • Slice butter into thin slices and spread as evenly as possible on top of cobbler mixture. Sprinkle with decorator's sugar.
  • Place cobbler onto grill and close the lid.
  • Bake on preheated grill for about 60 minutes until golden brown.

1 cup gluten-free flour blend
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup plus 2 tablespoons maple sugar, plus more for sprinkling
1/2 cup unsweetened almond or cashew milk, at room temperature
1 1/2 teaspoons apple cider vinegar
1/4 cup canola oil
4 cups cherries, pitted
2 tablespoons cornstarch

Steps:

  • Preheat a grill for cooking over medium-high heat (about 375 degrees F) and grease a medium cast-iron skillet with cooking spray or butter. In a medium bowl, whisk together the flour, baking powder, salt and 1/4 cup of the maple sugar. Mix in the milk, vinegar and oil until just combined.

1 cup frozen dark sweet cherries (heaping)
1 (8 ounce) can solo almond paste
1/2 cup sugar
3 teaspoons sugar
6 tablespoons butter, melted and hot or 6 tablespoons dairy free butter substitute
3 large eggs
2 teaspoons pure vanilla extract
1 cup gluten-free flour, blend
2 tablespoons gluten-free flour, blend
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/4 cup sliced almonds

Steps:

  • Preheat oven to 375 degrees. Line a standard muffin tin with paper cupcake liners.
  • Thaw the frozen cherries in a bowl and save any juices that accumulate. (You can do this either at room temperature or in the microwave at 30 percent power for 2 - 3 minutes.) Coarsely chop the cherries.
  • Break up the almond paste into the bowl of an electric mixer preferably fitted with a paddle attachment. Beat the almond paste until it crumbles. Add ½ cup of sugar and the hot, melted butter. Beat on medium speed until smooth. Add the eggs, one at a time, and beat after each addition. Add the vanilla and mix well. Add the flour, baking powder and salt. Mix to combine, scrapping down the sides of the bowl as needed. Fold in the cherries and reserved juices. Divide the batter evenly among the prepared muffin tins. Top each muffin with some of the sliced almonds and about ¼ teaspoon of sugar. Bake for 25 - 30 minutes or until risen and golden brown.
