1/4 cup maple syrup
1/4 cup ground flaxseed
1/4 teaspoon salt

Steps:

  • In a large bowl, mix all ingredients. Roll level tablespoons into balls. Place on an ungreased baking sheet; flatten with a fork., Bake at 350° for 18 minutes. Remove to a wire rack to cool.

Unsalted butter or olive oil, for greasing
2 cups coarsely ground raw cashews
1 cup turbinado sugar or coconut palm sugar
1/3 cup coarsely ground gluten-free rolled oats
1 teaspoon baking powder
1 teaspoon kosher salt
4 large eggs, beaten well
1/2 cup olive oil
1 whole vanilla bean, scraped or 1 tablespoon vanilla extract
1 teaspoon pure orange extract, optional
Confectioners' sugar, for garnish, optional

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-inch round springform pan and layer the bottom with a round of parchment paper.
  • Whisk the ground cashews, sugar, oats baking powder and salt in a large bowl. Add the beaten eggs, olive oil, vanilla bean seeds and orange extract, if using, and beat well to combine.
  • Pour the batter into the prepared pan and bake until golden and fully cooked, 25 to 30 minutes. (Note that the top will look a little bubbly--that's OK!)
  • Let cool in the pan 10 minutes, then use a knife to loosen from the sides and remove. Transfer to a rack to cool completely. Serve dusted with confectioner's sugar, if desired.

½ cup white sugar
1 egg
¼ cup salted natural peanut butter
¼ cup cashew butter
½ cup gluten free, casein free margarine
½ teaspoon baking soda
½ cup corn flour
½ cup tapioca flour
¼ cup potato flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together the margarine, brown sugar, white sugar and egg until smooth. Stir in the peanut butter and cashew butter. Combine the baking soda, corn flour, tapioca flour, and potato flour; stir into the batter to form a dough. Roll the dough into teaspoon sized balls and place them 2 inches apart onto an ungreased cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Let cool on baking sheets for a few minutes before removing to wire racks to cool completely.

  • Preheat oven to 325 degrees F, and line a cookie sheet with parchment paper or a silicone mat.
  • In a mixing bowl, stir together the cashew butter, sugar, vanilla, salt, and cashews until thoroughly combined. Add the flour and baking powder, and mix well until no visible flour remains. The dough will be very dry and thick. Add the milk, and mix again until it has been fully absorbed.
  • Using a tablespoon or a 1.5 Tbsp cookie scoop, scoop up dough and place on baking sheet. Use a fork to create a criss-cross pattern on the top of each cookie, gently pressing down to flatten into shape.
  • Bake 10 to 12 minutes, keeping a close eye on the cookies near the end. Cashew butter tends to burn quickly/easily, so a bit less done is better than overdone in this case. The cookies will be soft straight out of the oven. Immediately sprinkle with flaked sea salt, if using. Allow cookies to cool on the baking sheet for about 5 minutes, then slide the entire sheet onto a cooling rack.

  • First, you will need to make the cashew butter, unless you have a store-bought one that has no added oils/sugar/. Or if you already have a batch made, you can make them right away. See NOTES at the bottom if you don't want to use cashew butter. If making the homemade cashew butter, make sure to let it cool off before making the cookies, otherwise it will melt the chocolate chips.
  • To a large bowl, add the almond flour, oat flour, baking powder, salt and coconut sugar (if using). Whisk very well, breaking up any lumps.
