1 cup packed brown sugar
3/4 cup shortening
1/4 cup molasses
1 egg
2 1/4 cups Gold Medal™ all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
Granulated sugar

Steps:

  • Heat oven to 375°F. Lightly grease cookie sheets with shortening or cooking spray, or line with cooking parchment paper or silicone baking mat.
  • In large bowl, beat brown sugar, shortening, molasses and egg with electric mixer on medium speed, or mix with a spoon, until well blended. Stir in remaining ingredients except granulated sugar.
  • Shape dough by rounded teaspoonfuls into balls. Dip tops into granulated sugar. On cookie sheets, place balls, sugared sides up, about 3 inches apart.
  • Bake 10 to 12 minutes or just until set. Immediately remove from cookie sheets to cooling rack. Cool completely, about 30 minutes. Store covered in airtight container.

This melt-in-your-mouth ginger cookie recipe that I received from my grandmother has been enjoyed in my family since 1899.

2 cups sifted all-purpose flour
1 tablespoon ground ginger
2 teaspoons baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
¾ cup shortening
1 cup white sugar
1 egg
¼ cup dark molasses
⅓ cup cinnamon sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sift the flour, ginger, baking soda, cinnamon, and salt into a mixing bowl. Stir the mixture to blend evenly, and sift a second time into another bowl.
  • Place the shortening into a mixing bowl and beat until creamy. Gradually beat in the white sugar. Beat in the egg, and dark molasses. Sift 1/3 of the flour mixture into the shortening mixture; stir to thoroughly blend. Sift in the remaining flour mixture, and mix together until a soft dough forms. Pinch off small amounts of dough and roll into 1 inch diameter balls between your hands. Roll each ball in cinnamon sugar, and place 2 inches apart on an ungreased baking sheet.
  • Bake in preheated oven until the tops are rounded and slightly cracked, about 10 minutes. Cool cookies on a wire rack. Store in an air tight container.

4 c confectioner's sugar, sifted
2 pkg (8 ounce) cream cheese, softened
30 oz can pumpkin pie filling mix
2 tsp ground cinnamon

Steps:

  • 1. Gingersnap Cookies: Cream together butter and brown sugar.
  • 2. Stir in molasses and egg until well blended.
  • 3. In a separate bowl, combine flour, baking soda, salt, cinnamon, and cloves.
  • 4. Add to molasses mixture.
  • 5. Roll into 1" balls and roll balls in sugar. Place on ungreased cookie sheets. Bake in preheated oven for 350 degrees, for 10-12 minutes. Cool completely before removing from cookie sheets.
  • 6. Pumpkin Dip: In a large mixing bowl, combine sugar and cream cheese, beating until well blended. Beat in remaining ingredients. Refrigerate and store in an airtight container. Serve with gingersnap cookies.

3/4 cup Butter, softened
1 cup Granulated Sugar
1 Egg, large, at room temperature
1/4 cup Molasses
2 cups All-Purpose Flour
2 teaspoons Baking Soda
1 teaspoon Ground Cinnamon
1 teaspoon Ground Ginger
1 teaspoon Ground Cloves
1/4 teaspoon Salt
Additional sugar for rolling cookie dough in.

Steps:

  • Place softened butter in a large mixing bowl.
  • Add the sugar.
  • Cream butter and sugar together until creamy smooth.
  • Add the egg.
  • Add the molasses.
  • Mix again until fully combined.
  • In a separate bowl, add the flour.
  • Add the baking soda.
  • Add the ground cinnamon.
  • Add the ground ginger.
  • Add the ground cloves.
  • Add the salt.
  • Whisk all the dry ingredients together.
  • Gradually add the dry ingredients to the wet ingredients, mixing well.
  • Cover the dough and place in refrigerator to let chill for at least 30 minutes.
  • Scoop out dough. Roll in palms of hands and shape into round balls.
  • Roll the balls of dough in granulated sugar.
  • Place cookie dough on ungreased baking sheet, spacing about 2 inches apart.
  • Place in 375F degree oven and bake for 10 minutes until set and tops begin to crack.
  • Remove when done and place on wire rack to cool.
  • Enjoy!

36 gingersnap cookies, pulverized (about 2 cups)
1/4 cup butter, melted
2 tablespoons brown sugar
1 egg white (optional)

Steps:

  • Preheat the oven to 375 degrees.
  • Pulverize the ginger snap cookies in a food processor if you have one, if not, you can crush them with a rolling pin.
  • Combine the first three ingredients and mix well.
  • Using your fingers, press the mixture into the bottom and up the sides of a 9 inch pie pan.
  • To smooth and pack the crust, place another 9-inch pie pan down into the crust (as if you are stacking the pans) and press firmly.
  • Brush the crust with egg white. (optional).
  • Bake about 10 minutes at 375° or less. Watch closely as you do NOT want to overcook this crust.
  • Remove from the oven and cool before filling.
  • Goes great with my Super Easy Pumpkin Spice Dip recipe, or any pumpkin, sweet potato, or key lime pie that does not require baking.
