- Preheat oven to 275°. Pulse almonds in a food processor until finely chopped (do not overprocess). Spread in a 15x10x1-in. pan; bake until golden brown, 6-9 minutes, stirring occasionally. Transfer to a shallow bowl; cool slightly., In another bowl, mix cream cheese, blue cheese, parsley and cream until blended. Insert a skewer into each grape. Roll grapes in cheese mixture, then in almonds; place on waxed paper-lined baking sheets. Refrigerate, covered, until serving.

Steps:
- Beat together until smooth the cream cheese and mayo.
- Add grapes and gently stir to coat them.
- Put the nuts on a sheet of wax paper and roll each coated grape in the nuts.
- Place grapes on a cookie sheet and chill for at least an hour.
- When ready to serve arrange grapes on the serving platter in the shape of a bunch of a grape cluster and decorate with a couple of green leaves or silk leaves.

Steps:
- Wash grapes and remove from stem.
- Slice stem end off of the grapes and set aside.
- In a small saucepan, combine vinegar, water and sugar. Place over high heat and bring to a boil.
- Place spices into the bottom of a quart jar.
- Funnel trimmed grapes into the jar on top of the spices.
- Pour hot vinegar into jar over grapes.
- Let grapes sit until cool. Place a lid on the jar and refrigerate.
- Let pickled grapes rest in the fridge for at least 24 hours before serving. Keep leftover grapes refrigerated.

- In a bowl cream together the cream cheese and the ginger. Put 1 teaspoon of the mixture in the palm of one hand and roll it around a grape, using both palms to coat the grape completely. Coat the remaining grapes in the same manner and on a wax-paper-lined tray chill them for 15 minutes. Roll the cheese-coated grapes in the pecans coating them completely, and chill them until the coating is firm.

- Toast the muffins.
- Combine cheese, ginger and zest. Thin out with juice. Add just drops at a time until it reaches a texture you like. Add some sugar as desired.
- Spread on muffins. Make sandwich.
- If you like a thicker coat of cream cheese, increase the amount you make.

HONEYED BLUE CHEESE GRAPES
This is my personal recipe for how to make little blue cheese grape finger foods. This is based off of a more classic 'Grapes rolled in Blue de Bresse' recipe. This is one of those 'some' recipes - some of this and some of that. These are super easy for me to make but are also pretty messy. The Honey mixture is a bit tricky - it has to just be wet enough to coat your grapes, but not honey flavoured water. A few trial errors are necessary because the amount of water needed will vary with your weather (humidity), you honey, and what's easiest for you.

- Clean and pick through your grapes--you want only pretty and round grapes otherwise you'll have a mess on your hands.
- Dilute the honey with some water- enough so that you have a liquidy/sticky mixture that you can easily coat your grapes with.
- Coat your grapes with the liquidy honey- I put my grapes in a strainer over a bowl, that way I can just pour the mixture over my grapes a few time to ensure good coverage.
- Put your blue cheese crumbles in a large bowl- toss the grape in this mixture a few at a time until well covered in cheese (For this to work well the cheese must be *finely* crumbled).
- Chill grapes at least 1 hour prior to service to allow honey to 'set'.
- Enjoy!
- Additional ways to serve these- freeze the grapes prior to the honey/blue cheese portion of this for a delightful cool summer treat, If you have a 'flavor injector' try removing some of the grape liquid and replacing it with honey.

- Wash all of the green grapes after detaching them from stems. Place in a bowl, that will accommodate the remaining ingredients.
- Detach the black grapes from the stems and wash those as well. Place on a surface. Cut each in half. Using a paper clip, that has been bent straight, pull out the seeds from each half, using the smallest eye, place each cleaned half in the grape bowl, making sure there are no seeds still attatched.
- Add the grated lemon zest, sugar and strain over the orange juice.
- Stir well and cover, chilling two or three hours before consumption.
