A Ginger Sandwich Cookie is light and fluffy marshmallow buttercream sandwiched between two soft and chewy homemade ginger cookies.

2¼ cups (281g) all-purpose flour
2 teaspoons ground ginger
2 teaspoons baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon kosher salt
¾ cup (1 1/2 sticks or 170g) unsalted butter, (softened)
1 cup (200g) brown sugar
1 large egg, (room temperature)
¼ cup (84g) molasses
4 tablespoons granulated sugar, (for rolling)
1 cup (2 sticks or 227g) butter, (softened)
½ teaspoon almond extract
1 pinch salt
4 cups (500g) confectioners' sugar
1 jar (13 ounces) marshmallow creme or fluff

Steps:

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Place the flour, ginger, baking soda, cinnamon, cloves, and salt in a sifter and sift into a bowl. Set aside.
  • In a large bowl, mix together the butter and brown sugar until light and fluffy.
  • Beat in the egg. Then, stir in the molasses.
  • Add the sifted ingredients into the molasses mixture.
  • Shape the dough into 1-inch sized balls, rolling them into the granulated sugar.
  • Place the cookies a couple of inches apart onto the lined baking sheet, flattening slightly.
  • Bake for 8-10 minutes, letting them cool before transferring to a wire rack to cool completely.
  • In a large bowl, cream the butter with an electric mixture on medium speed until the butter is light and fluffy, about 2 minutes. (You can also use a stand mixer with the paddle attachment.)
  • Add in the almond extract and salt.
  • Add in the confectioners' sugar, about 1/2 cup at a time. Once all the sugar is added, mix on high for 2-3 minutes.
  • Once fully combined, gently fold the marshmallow creme into the frosting by hand. This can be used immediately or refrigerated until ready to use.
  • When ready to use, spread the filling on the bottoms of half the cookies and top with the remaining cookies.

Sandwich ginger biscuits with a creamy, zesty filling to make these gluten-free teatime treats that are aromatic with wintry spices - cloves, nutmeg and cardamom

100g unsalted butter , melted
50g golden caster sugar
100g light brown soft sugar
25g black treacle
1 large egg
½ tsp vanilla extract
¼ tsp bicarbonate of soda
175g gluten-free flour blend (I used Doves Farm)
1 tbsp ground ginger
½ tsp ground black pepper
¼ tsp ground nutmeg
¼ tsp ground cloves
¼ tsp ground cardamom (the seeds from 3 pods, crushed - see tip)
75g demerara sugar , to coat
175g mascarpone
85g lemon curd

Steps:

  • To make the cookies, put the butter, sugars, treacle, egg and vanilla in a large bowl and mix together with an electric whisk until smooth and combined. In a separate bowl, mix together the remaining ingredients except the demerara. Add the dry ingredients to the egg mixture and mix until a very sticky dough is formed. Cover with cling film and chill for at least 4 hrs.
  • Heat oven to 180C/160C fan/gas 4 and line two baking trays with baking parchment. Roll the cookie dough into balls, about a tablespoon in size, then roll in the demerara sugar. Place on the lined trays, leaving about 2.5cm space between cookies.
  • Bake for about 14 mins or until just lightly browned around the edges, swapping the trays over halfway through cooking. Allow to cool on the trays for 10 mins before transferring to a wire rack to cool completely.
  • To make the filling, beat together the mascarpone and lemon curd in a bowl until smooth and creamy. Transfer to a piping bag fitted with a plain round piping tip. Pipe a layer of the cream onto the base of half the cookies and sandwich together with the other half. Will keep for 3-4 days in a sealed container in the fridge - the texture will turn soft and cakey (this is no bad thing).

1 cup icing sugar
1 tablespoon finely grated lemon zest (from 1 lemon)

Steps:

  • To make cookies, preheat oven to 350°F
  • In a large bowl using an electric mixer on high speed, beat butter, icing sugar, lemon zest, and salt until combined.
  • With mixer on low, add flour (dough will be stiff); finish mixing with a wooden spoon.
  • Turn dough out onto a piece of plastic wrap; pat into a disk about 1/2 inch (1 cm) thick.

  • Gradually add 1 cup of icing sugar, mixing until smooth.
  • Mix in remaining sugar as necessary to create a firm but spreadable filling.
  • To form the sandwiches, place about 1 teaspoon filling between two cookies, sugared sides facing out; squeeze gently.

1 cup confectioners' sugar

Creamy Lemon Filling

Steps:

  • Preheat oven to 350 degrees. In a large bowl using an electric mixer on high speed, beat butter, confectioners' sugar, lemon zest, and salt until combined. With mixer on low, add flour (dough will still be stiff); finish mixing with a wooden spoon.
  • Turn dough out onto a piece of plastic wrap, pat into a disk about 1/2 inch thick. Wrap, and chill until firm, about 1 hour (and up to 3 days).

MOLASSES AND SPICE LEMON SANDWICH COOKIES

It's really hard to imagine what a wonderful combination this is. Make it once and you'll be hooked! Why this recipe works: these cookies combine the best of two worlds - a chewy molasses cookie with a tart lemon filling. To keep the cookies soft and chewy, take care not to overbake them. They are done when the cookies puff and just start to crack on top (they should sink into flat cookies when you take them out of the oven). For the best flavor, use fresh spices (replace your spices if they are more than one year old) and dark (or robust) molasses, avoiding black-strap molasses, which will make the cookies bitter.

1/3 cup water

Steps:

  • Combine wet ingredients and sugar in one bowl, dry ingredients in another, then combine.
  • Chill for about in hour so the dough is easy to work with.
  • Form into balls and roll in sugar and place on a baking sheet lined with parchment paper. Bake for 10 minutes or until the tops just start to crack a bit. Remove from oven and cool completely before filling.
  • Filling:.
  • Combine remaining 3 tablespoons margarine, lemon juice, and confectioner's sugar in bowl and whisk until smooth. Spread heaping teaspoon filling over bottoms of half of cooled cookies. Top with remaining cookies and let filling set 1 hour.
  • When cookies are cool, and filling is ready, just frost the bottom of one cookie with the frosting and place another cookie on top to make a sandwich.
  • Enjoy!

  • cool for 3 minutes on the sheets before transfering them to a wire rack to cool completely.
  • to prepare the FILLING:.
  • in a medium bowl, using an electric mixer on medium speed, beat the butter, powdered sugar, lemon zest and lemon zest till smooth.
  • turn the cookies without the holes, bottom side up.leave just 1/8" plain edge, spread about 1 tblspoon filling on each one.
  • place the bottoms of the cookies with the holes on top of the filling.
  • Cookie sandwiches can be wrapped individually in plastic wrap and stored in a tightly covered container in refrigerator for up to 4 days.
