ASIAN PORK MEATBALLS

Asian Pork Meatballs image

My favorite meatballs! Asian Pork Meatballs in a Ginger Honey Glaze. I have them every New Years Eve or Day. AND they just so happen to be gluten-free.

Time 30m

Number Of Ingredients 16

For The Meatballs
1 1/2 pounds ground pork
2 TBS minced sweet or red onion
2 large cloves garlic (minced)
1 tsp minced ginger
1/2 TBS sesame oil
Kosher salt & pepper
Ginger Garlic Sauce
3 TBS sesame oil
1 tsp minced garlic
1 TBS minced ginger
1 1/2 TBS rice wine vinegar
2 TBS honey
1-2 TBS Chili with Garlic Sauce (depends on how much you enjoy heat)
1/2 tsp cornstarch
Cilantro for garnish

Steps:

  • For Meatballs:
  • Combine all ingredients together and form balls. They will be wet. It's fine, just get them to hold together. Place on a baking sheet until ready to cook.
  • When ready to cook, preheat oven to 350 degrees.
  • Use a small amount of olive or grapeseed oil (2-3 TBS or so) to fry the meatballs until nicely browned. Place on a baking sheet and bake another 10 minutes until cooked through.
  • For Spicy Ginger-Honey Sauce
  • In a frying pan with sides, combine sesame oil, garlic and ginger and saute for 1-2 minutes until fragrant. Add in vinegar, honey and chili with garlic sauce and bring to a boil. Add in cornstarch and whisk until combined and thickened. Taste & adjust. Place meatballs in your pan, coat with sauce, garnish with cilantro leaves (if you like)and serve.

WALTER KEI'S SHANGHAI-STYLE PORK AND BEAN SPROUTS

Walter Kei's Shanghai-Style Pork and Bean Sprouts image

Walter Kei of Hong Kong taught me this simple peppery Shanghainese-style stir-fry. Many traditional cooks prefer the "head and tail" of the bean sprout to be removed. This is very labor-intensive, but in Hong Kong, produce vendors sell trimmed sprouts, called "silver sprouts," for a slightly higher price.

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 11

8 ounces lean pork butt
2 teaspoons grated garlic
4 teaspoons Shao Hsing rice wine or dry sherry
1 1/2 teaspoons cornstarch
1/2 teaspoon soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon sugar
1 teaspoon salt
1/2 teaspoon ground white pepper
2 tablespoons golden olive oil
1 pound mung bean sprouts

Steps:

  • Slice the pork into 1/4-inch-thick slices, then stack the slices and cut into 2-inch-long matchsticks. Put the matchsticks in a shallow bowl and add the garlic, 2 teaspoons of the rice wine, the cornstarch, soy sauce, sesame oil, sugar, 1/2 teaspoon of the salt, and 1/4 teaspoon of the pepper. Stir to combine.
  • Heat 14-inch flat-bottomed wok over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in the olive oil and add the pork, spread it around it in the wok. Cook undisturbed 20 seconds, letting the pork begin to brown. Then, using a metal spatula, stir-fry the pork until it is no longer pink, about 1 minute. Add the bean sprouts, then remaining 2 teaspoons rice wine, 1/2 teaspoon of salt, and 1/4 teaspoon pepper and stir-fry 1 to 2 minutes or until the pork and bean sprouts are just cooked through.

PORK MEATBALLS WITH GINGER AND FISH SAUCE

Pork Meatballs With Ginger and Fish Sauce image

These nuoc cham-inspired meatballs are perfect to fill lettuce cups topped with fresh basil or cilantro. (Add steamed rice for a more substantial meal.) The Ritz crackers here make for a juicier meatball, but feel free to substitute plain dry bread crumbs. To make the Ritz crumbs, place the crackers in a resealable plastic bag and lightly crush them with the back of a wooden spoon or measuring cup. For an easy dipping sauce, spike 1/4 cup mayonnaise with 2 teaspoons toasted sesame oil or soy sauce. And save any leftover meatballs: They're great simmered in chicken broth the next day. The ginger and garlic in them release their aromatics into the broth for a deeply flavorful soup base.

Categories     dinner, one pot, main course

Time 20m

Yield 4 servings

Number Of Ingredients 9

8 ounces ground lean pork
1 teaspoon rice wine or dry Sherry
3 teaspoons light soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon cornstarch
1 1/2 pounds soybean sprouts or mung-bean sprouts
2 tablespoons, plus 1 teaspoon, peanut oil
2 thin, quarter-sized slices peeled fresh ginger, crushed
1 teaspoon shrimp paste

Steps:

  • Chop the pork into small coarse bits. In a small bowl, combine it with the rice wine, 1 teaspoon of the soy sauce, sesame oil and cornstarch.
  • Wash the sprouts in cold running water, picking out any wilted pieces or darkened sprouts. Drain well.
  • Heat a wok or large saute pan until it is hot. Add 2 tablespoons of the oil and the ginger pieces. When the ginger has browned, remove it with a slotted spoon. Put in the pork and stir-fry for 2 minutes. Remove the pork with a slotted spoon.
  • Reheat the wok and add the remaining oil. When the oil is very hot, add the shrimp paste and stir-fry it for 10 seconds. Then add the sprouts and the remaining 2 teaspoons of soy sauce. Continue to stir-fry for 4 minutes. Return the pork to the wok and mix very well with the sauce, continuously stir-frying for another minute. Give the mixture several good stirs, turn onto a platter and serve.
