Recipe video above. An exciting way to use ground meat (mince) to make a quick stir fry that taste unbelievable! This is great made with chicken, turkey or pork. It also works with beef though it is better made with "white meats". Serve it over rice or vermicelli noodles to make rice bowls with shredded lettuce, carrots and cucumbers on the side (very classic Vietnamese meal!).

1 1/2 tbsp cooking oil ((I use peanut oil))
1/2 onion (, finely diced (brown, white or yellow) (~1/2 cup))
2 tsp ginger (, grated or minced)
2 garlic cloves (, minced (2 tsp paste))
1 birds eye or Thai chili (, deseeded and finely chopped (Note 1))
1 lb / 500g ground pork ((mince) (Note 2))
5 tbsp brown sugar
2 tbsp fish sauce
1 green onion (stem , finely sliced)
Rice
Sliced red chilli, tomato, cucumber ((optional))

Steps:

  • Heat the oil in a large skillet over high heat.
  • Add the onion, ginger, garlic and chili and cook for 2 minutes.
  • Add the pork mince and cook for 2 minutes or so until white all over, breaking up the meat with a wooden spoon.
  • Add the sugar and fish sauce. Stir, then leave it to cook without touching until all the juices cook out and the pork starts caramelised - about 2 minutes. Then stir it and leave it again, without stirring, for around 30 seconds to get more caramelisation. Repeat twice more until caramelised to your taste.
  • Serve over rice or vermicelli noodles, garnished with sliced scallions/shallots. For a low carb, low cal option, try Cauliflower Rice! I like to have chunks of plain cucumber and carrots on the side which is a classic way of making Vietnamese bowls.

4 garlic cloves, chopped
5 Thai chiles, chopped with seeds
1/2 cup fresh ginger (julienne)
1 lb ground pork
3 tablespoons fish sauce
1 bunch green onion, sliced 1/2 inch lengths
1 bunch cilantro, cut up 1/2 inch
1 large yellow onion, cut into wedges

Steps:

  • Heat oil in wok.
  • Add first 3 ingredients till fragrant.
  • Add ground pork; cook till no pink.
  • Add yellow onion cook about 2 minutes.
  • Add green onions; cook another 2 minutes.
  • Add cilantro and fish sauce; cook 1 more minute.
  • When cooking last 3 ingredients, use your judgment on how you like the firmness of them--you might want to cook more or less. I like mine a little firmer.
  • Serve with jasmine rice.

Steps:

  • In a small bowl, mix the first 5 ingredients. In a large skillet, cook pork over medium heat until no longer pink, 6-8 minutes; drain. Add vegetables, ginger and garlic; cook 2-3 minutes longer. Stir in sauce mixture; cook and stir until mixture is slightly thickened, 2-3 minutes. Cool slightly., Place about 1 tablespoon filling in center of each wonton wrapper. Moisten wrapper edges with water. Fold 1 corner diagonally over filling to form a triangle; press edges to seal., For shallow fry: In an electric skillet or deep skillet, heat 1 in. of oil to 375°. For deep fry: In an electric skillet or deep fryer, heat oil to 375°. Fry wontons in batches until golden brown, 2-3 minutes, turning once. Drain on paper towels. If desired, serve with plum sauce.

1 ½ tablespoons peanut oil
¼ cup chicken broth
¼ cup water

4 cups water

2 pounds pork tenderloin, silver skin removed
2 tablespoons soy sauce
1 teaspoon dry mustard
3 tablespoons rice wine vinegar
1 cup all-purpose flour
3 tablespoons cornstarch
1 teaspoon granulated garlic
1 teaspoon granulated onion
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons canola oil
3 tablespoons canola oil
1 large yellow onion, diced
3/4 cup diced fresh ginger
3/4 cup diced garlic
1 tablespoon freshly cracked black pepper
1 cup white wine
2 cups water plus 4 tablespoons
2 cups low-sodium chicken stock
4 tablespoons soy sauce
2 tablespoons honey
3 tablespoons cornstarch
1/2 cup diced green onions, for garnish

Steps:

  • To make Da Sizzling Rice: Add rice and water to a small saucepot and bring to a boil over medium heat. Reduce the heat to low, cover and simmer for 5 minutes. Remove from heat and let sit 30 minutes. Transfer the rice to a baking sheet and cool to room temperature. Preheat the oven to 200 degrees F. Put the rice into the oven and let it dry out for 1 hour.
  • Heat 2 cups of oil to 350 degrees F. in a heavy-bottomed pan over medium heat. Cut the rice into 3-inch rounds and fry in the oil until crunchy and light brown, about 2 minutes. Set aside on a plate.
  • To make Da Pork: Cut the pork into 3/4-inch rounds. Stir the soy sauce, mustard, and rice wine vinegar in a large bowl. Add the pork and let marinate for15 minutes. In a shallow bowl, mix the flour, cornstarch, garlic, onion, salt, and pepper. Lightly press down on the pork to flatten and dredge in the flour mixture. Heat the oil in medium saute pan, add the pork and cook until lightly browned on both sides.
  • To make Da Gravy: In a medium sauce pot, over medium heat, add the oil. When the oil is hot, add the onions, ginger, garlic, and pepper, and saute until the onions are translucent. Deglaze the pan with wine, and then add 2 cups of water, the stock, soy sauce and honey. Simmer for 1 hour or until reduced by half. Strain the gravy and return it to the pot over low heat. Combine the 4 tablespoons water and cornstarch in a small bowl. Slowly stir it into the sauce and cook until the gravy has thickened.
  • For Da Plate up: Transfer the rice to a serving platter, and arrange the pork on the platter. Top with the gravy and garnish with the green onions.

  • In a liquid measuring cup or a small mixing bowl, whisk together the mild honey, sriracha, and rice wine vinegar. Set aside.

While the oil heats, sprinkle the pork strips with kosher salt and black pepper then toss with your hands to distribute it evenly. Carefully add the pork to the pan, working in batches to avoid overcrowding the pan. Let the first side brown, flip the pieces with tongs or a spatula, and brown the second side. Transfer the pork to a plate.
  • Return the pan to the heat and add in the garlic and ginger. Stir until fragrant, about 30 seconds.
  • Raise the heat to high and pour in the sauce mixture and bring to a boil, stirring frequently. When the sauce is very bubbly and thickened like warm honey, toss the pork back in and toss constantly to coat everything and reduce the sauce to a thick, sticky glaze on the pork. 1 pound ground pork
2 tablespoons peanut oil (or another neutral oil)
1 tablespoon grated ginger (or partially dehydrated ginger from the produce section at the grocery store)
1 teaspoon crushed red chili flakes
1 teaspoon kosher salt
1 teaspoon black pepper
8 green onions
1 red bell pepper or yellow bell pepper, or a mix of both (seeded, stemmed, and thinly sliced)
6 cloves garlic (thinly sliced)
1/3 cup rice wine vinegar
1/4 cup low sodium soy sauce
1 tablespoon sriracha (or Asian chili garlic sauce)
1 teaspoon sesame oil
1 teaspoon honey (or brown sugar)
14 ounces rice noodles
sliced green onions
toasted sesame seeds

Steps:

  • Place a 10 or 12 inch stainless steel or cast-iron skillet over high heat. Drizzle in the oil and swirl to coat. When the oil is shimmery and the pan is too hot to comfortably hold your hand a couple of inches from the surface, scatter in the ground pork.
  • Sprinkle the salt, pepper, grated ginger, and chili flakes over the pork, then use a flexible, heat-proof spatula to press and spread the pork into a patty that covers the surface of the pan, if possible.
  • Let it fry, undisturbed for 4 minutes. After 4 minutes, use your flexible spatula to lift the corner of the pork patty. It should come away from the surface of the pan easily and be deeply browned and crisp looking. If not, fry for another minute or so, checking it often.
  • When it is deeply browned, flip it over in as few pieces as you can. It may break up as you do this, but it should be in big pieces. Fry for another 2 minutes, then begin breaking it up into bite sized pieces with your spatula. When it is fully broken up, transfer to a plate.
  • Return the heat to the pan, add the bell pepper, white part of the green onions, and sliced garlic to the pan. Stir-fry for about 1 minute, or until the bell pepper strips are crisp tender. Transfer these to the plate with the crispy pork.
  • Return the pan to the heat one more time and add the rice wine vinegar, soy sauce, sriracha or chili garlic sauce, sesame oil, and honey or sugar to the pan and stir, bringing it to a hard boil. As it boils, scrape the pan to release any delicious browned bits stuck to it.
  • Let it boil no more than 1 minute, adding in the noodles, crispy pork, and stir fried vegetables, and green portions of the green onions all at the same time, tossing to coat and distribute everything.
  • Remove the pan from the heat, garnish with additional green onions and sesame seeds, if desired. Serve immediately.
  • Store leftovers in a tightly covered container in the refrigerator for up to 3 days. Leftovers are delicious cold or reheated.

5 large garlic cloves, thinly sliced
4 large shallots, thinly sliced
1/2 lb ground pork
3 tablespoons tamarind juice
6 tablespoons sugar
1 1/2 teaspoons salt
3 tablespoons peeled finely chopped gingerroot
1/2 cup peanuts, roasted and coarsely ground
1 bunch spinach, leaves (or lettuce leaves) (optional)
fresh cilantro stem, and
sliced red bell pepper, for garnish (if not using the spinach)
crispy rice

Steps:

  • Heat the oil in a large skillet over medium-high heat and fry the garlic and shallots until crisp and brown but not burned, about 30 seconds. Remove with a slotted spoon and set aside.
  • In the same pan, brown the pork, breaking it apart as it cooks, about 3 minutes. Stir in the tamarind juice, sugar and salt. Stir in the fried garlic and shallots and the ginger. Lower the heat to medium and cook for 3 minutes more, or until the liquid has almost evaporated. Stir in the peanuts. Remove from the heat and set aside.
  • If you want to make little packets, dip the spinach leaves in boiling water to blanch and lay out on a towel to drain. Place a teaspoonful of the pork mixture in the center of each leaf, and fold over both sides of the leaf and then fold the top and bottom over. Arrange seam side down on a platter. If you decide to forgo the packets, put the pork mixture in a serving bowl and garnish with cilantro and red peppers. Serve warm or at room temperature with Crispy Rice.

1/4 c. panko breadcrumbs
1 large egg, beaten
1 tbsp. water
3 cloves garlic, minced
1 tbsp. grated ginger
1/2 tsp. crushed red pepper flakes
kosher salt
Freshly ground black pepper
3 qt. (12 c.) low-sodium chicken broth
1/4 c. low-sodium soy sauce
1 tsp. rice vinegar
1 12 oz. package No Yolks Extra Broad Noodles
4 c. packed baby spinach
3 green onions, thinly sliced
Lime wedges, for serving

Steps:

  • Make meatballs: In a large bowl, add ground pork, panko, egg, water, garlic, ginger, and crushed red pepper flakes and season with salt and pepper. Mix until well combined and shape into 28 meatballs. Transfer to a parchment-lined baking sheet and refrigerate 20 minutes.
  • Meanwhile, in a large pot, combine chicken broth, soy sauce, and vinegar and bring to a boil. Add No Yolks Extra Broad Noodles and gently drop in meatballs. Reduce heat to a simmer, stirring occasionally until noodles are tender and meatballs are cooked through, about 15 minutes.
  • Stir in spinach until wilted, then remove from heat.
  • Serve soup in bowls and garnish with green onions and lime wedges.

This delicious Japanese-inspired ground pork stir fry is packed with flavor and is perfect for busy weeknights!

1 cup uncooked brown rice + about 1.5-2 cups water
8-12 oz (1/2-3/4 lb) ground pork or beef (or other ground meat)
1.5 cups mushrooms, cut into slices (fancy mushrooms like shiitake are great here, but any will do.)
1/2 medium onion, sliced into wedges or diced
1 cup carrots, julienned, or cut into match sticks, or grated*
3 Tablespoons grated fresh ginger
2 cloves garlic, minced or grated
4 cups chopped leafy greens - bok choy, spinach, kale, collards, chard, etc.
3 Tablespoons tamari or soy sauce, divided (or for Paleo, use 2 T coconut aminos and 1 T fish sauce)
1/2 Tablespoon vinegar (rice wine vinegar, white, or apple cider)
1/4 - 1/2 teaspoon cayenne powder or red pepper flakes
garnish: sesame seeds and green onions

Steps:

  • Cook rice according to instructions on your package. I like to use a rice cooker. If using a pot on the stove, I recommend rinsing your rice 2-4 times, then placing in a large pot. I use the finger method (see above) to measure the rice, which usually comes to about 1 1/2 cups of water per 1 cup of rice. Cover with a lid and bring to a boil, then reduce to a lower simmer for 25 minutes. Remove from heat (but don't touch the lid!) and let "steam" for another 10 minutes off the heat before serving, if time allows.
  • Heat a large pan or wok over high heat. Dump in the ground pork/beef and let cook, undisturbed for a few minutes until it is dark brown on the bottom. Flip and repeat on the other side.
  • When the pork is cooked through, add 1 Tablespoon soy sauce and break up the meat, cooking until it is browned on all sides. Remove from pan and set aside.
  • Reduce heat to medium-high. Drain off most of the oil, leaving enough to cook the vegetables (about a tablespoon or so). If you have lean meat, you might need to add a Tablespoon of butter or coconut oil. Add the onions and mushrooms and sauté until the mushrooms are a little brown.
  • Add the carrots and cook for about 5 minutes more. (Note: if using grated carrot here, just add with the next step with the leafy greens, no need to cook for the extra 5 minutes.)
  • Add the ginger, garlic, cayenne powder, rice vinegar, 1 Tablespoon tamari/soy sauce, and the leafy greens. Cook until wilted, then mix in the meat.
  • Taste, add remaining 1 Tablespoon soy sauce if needed, and adjust seasoning as desired. Serve over rice and enjoy!
