1/2 c. low-sodium soy sauce, plus more for serving
3 tbsp. sherry
2 tbsp. packed brown sugar
2 tbsp. cornstarch
1 tbsp. minced fresh ginger
1 1/2 lb. skinless, boneless chicken thighs, trimmed of fat and cut into 3/4-inch pieces
3 tbsp. peanut oil
8 oz. snow peas, trimmed
Kosher salt, to taste
Cooked white rice, for serving
Red pepper flakes, for topping
Chopped roasted cashews, for topping (optional)

Steps:

  • Mix the soy sauce, sherry, brown sugar, cornstarch, and ginger in a small bowl. Pour about a third of the mixture over the chicken in a large bowl and toss with your hands; set aside. Reserve the remaining liquid.
  • Heat the peanut oil in a large cast-iron skillet or wok over high heat. Add the snow peas and stir-fry for 45 seconds. Remove to a plate and set aside.
  • Let the skillet get very hot again. Using tongs, add the chicken mixture, leaving most of the marinade in the bowl. Spread out the chicken as you add it to the pan but do not stir for a good minute so the chicken gets nice and brown on the bottom. Then flip the chicken and cook through, tossing occasionally, 5 to 6 minutes.
  • Add ½ cup water, the reserved marinade, and the snow peas to the skillet. Cook over high heat, stirring, for 30 seconds, then turn off the heat. (The sauce will thicken as it sits.) Season with salt only if it needs it. Serve over rice and top with red pepper flakes and cashews, if desired. Serve with more soy sauce.

1/2 teaspoon sugar
1 teaspoon cornstarch
1 teaspoon Shaoxing rice wine or dry sherry
1 tablespoon light (regular) soy sauce
3/4 pound boneless, skinless chicken breast, cut crosswise into slices 1/4 inch thick
Flavoring Sauce
1/2 teaspoon sugar
1/8 teaspoon white pepper
1 1/2 teaspoons cornstarch
1 tablespoon water
1 tablespoon light (regular) soy sauce
1 1/2 teaspoons oyster sauce
2 teaspoons sesame oil
2 tablespoons canola or other neutral oil
3 quarter-sized slices ginger, peeled and lightly bruised
1/2 small yellow onion, sliced lengthwise 1/4 inch thick
1/2 pound fresh oyster mushrooms, torn in half if large
1/4 pound snow peas, trimmed, strings removed, and cut in half on the diagonal if large
3-inch section carrot, peeled and thinly sliced on the diagonal
4 tablespoons water

Steps:

  • To make the marinade, in a large bowl, combine the salt, sugar, cornstarch, wine, and soy sauce and stir to dissolve the sugar and cornstarch. Add the chicken and mix to coat evenly.
  • To make the flavoring sauce, in a small bowl, combine the sugar, white pepper, cornstarch, water, soy sauce, oyster sauce, and sesame oil and stir well.
  • In a wok or large skillet, heat 1 tablespoon of the oil over high heat until hot but not smoking. Add the ginger and stir-fry for about 30 seconds, or until fragrant. Add the chicken in a single layer and cook, undisturbed, for about 1 minute, or until it begins to brown. Using a spatula, flip the chicken and stir-fry for 1 to 2 minutes, or until it has taken on color but is still slightly undercooked. Transfer to a plate.
  • Add the remaining 1 tablespoon oil to the pan and heat until hot. Add the onion and stir-fry for about 1 minute, or until fragrant. Add the mushrooms, snow peas, carrot, and 2 tablespoons of the water. Stir-fry for 1 minute, or until the water has evaporated. Repeat with the remaining 2 tablespoons water.
  • Return the chicken and its juices to the pan and stir-fry briefly to finish cooking. Add the flavoring sauce and stir-fry for 1 minute. Transfer to a serving plate and serve.

4 teaspoons toasted sesame oil
2 teaspoons honey
1 1/4 pounds skinless, boneless chicken breasts, cut into 3/4-inch chunks
6 teaspoons canola oil
2 scallions, thinly sliced
1 tablespoon grated peeled ginger
3 cloves garlic, minced
1 1/4 cups low-sodium chicken broth
3 tablespoons sugar
3 to 4 teaspoons cornstarch
1 tablespoon rice vinegar
1 teaspoon chili paste
4 cups snow peas, trimmed
Cooked brown rice, for serving (optional)
2 tablespoons toasted sesame seeds

Steps:

  • Whisk 3 tablespoons soy sauce, 2 teaspoons sesame oil and the honey together in a medium bowl. Add the chicken, toss and marinate 20 minutes.
  • Remove the chicken from the marinade using a slotted spoon. Heat 2 teaspoons canola oil in a nonstick skillet over medium-high heat. Cook the chicken in 2 batches, turning once or twice, until browned, 3 to 5 minutes (add 2 more teaspoons canola oil between batches). Transfer the chicken to a plate and wipe out the skillet.
  • Heat the remaining 2 teaspoons canola oil in the skillet. Add the scallions, reserving some of the green parts for topping. Add the ginger and garlic and cook, stirring, 1 minute. Whisk the broth, sugar, cornstarch, vinegar, chili paste and the remaining 2 tablespoons soy sauce in a bowl; add to the skillet and cook, stirring, until thickened, 3 to 4 minutes. Stir in the remaining 2 teaspoons sesame oil.
  • Meanwhile, cook the snow peas in a steamer basket set over a few inches of boiling water until crisp-tender, 2 to 3 minutes.
  • Return the chicken to the skillet with the sauce and heat through. Serve the chicken and snow peas over brown rice, if desired. Top with the sesame seeds and reserved scallion greens.

3 ½ cups water
2 tablespoons vegetable oil
3 cloves garlic, minced

1 tablespoon Asian fish sauce
1 tablespoon oyster sauce
1 tablespoon white sugar
½ cup fresh ginger, cut into matchsticks
1 large red bell pepper, cut into strips
¾ cup sliced fresh mushrooms
4 green onions cut into 2-inch pieces
½ teaspoon Thai red chile paste, or to taste
2 tablespoons chicken broth
salt and ground black pepper to taste
2 tablespoons fresh cilantro leaves

Steps:

  • Bring the rice and water to a boil in a saucepan. Reduce heat to medium-low; cover and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Meanwhile, heat a wok or large skillet over medium-high heat. Stir in the garlic and chicken; cook for 2 minutes. Add the fish sauce, oyster sauce, sugar, ginger, red pepper, mushrooms, and onions. Cook and stir until the chicken is no longer pink and the vegetables are nearly tender, about 3 minutes. Dissolve the chile paste in the chicken broth, then add to the chicken mixture. Season to taste with salt and pepper; sprinkle with cilantro leaves to garnish. Serve with the hot rice.

8 ounces snow peas
1/2 cup water
1/2 teaspoon salt
1 small gingerroot
1 large scallion
1 lemon, quartered
dried red pepper flakes

Steps:

  • Cut chicken into 3 in x 1/2 in strips.
  • Marinate the chicken in Italian dressing while you trim the snow peas.
  • In a 12-inch skillet, boil the water with 1/2 teaspoon salt and 3-4 quarter-sized slices of ginger over high heat.
  • Add the chicken, lower the heat to medium, cover, and simmer for 5 minutes.
  • Place the snow peas over chicken in the skillet, cover again, and simmer approximately 2 minutes so that snow peas are cooked but still crunchy.
  • Serve over cooked white rice, garnishing each portion with scallion. Serve with lemon wedges and red pepper flakes to taste.

Number Of Ingredients 10

2 chicken breasts, boneless & skinless...about 3/4 lb. each
2 tablespoons cornstarch
1 egg white
1 -2 tablespoon cooking sherry
1 1/2 teaspoons salt
1/4 lb snow peas (fresh or frozen)
4 tablespoons corn oil (or canola oil)
1/4 lb fresh mushrooms, sliced
1/2 teaspoon ground ginger
cooked rice

Steps:

  • Lay each chicken breast flat on the cutting board & slice as thin as possible. (This is much easier if they're slightly frozen OR ask your butcher to do it.).
  • In a large bowl, toss the chicken & cornstarch until well coated.
  • Add the egg whites, cooking sherry, ginger & 1 teaspoons salt & mix thoroughly.
  • Snap off the tips of the snow peas, if need be.
  • Have everything within easy reach when ready to cook.
  • Heat a 10-12 inches skillet over high heat for 30 seconds.
  • Pour in 1 T. cooking oil & swirl around pan & heat for another 30 seconds.
  • TURN DOWN HEAT IF OIL STARTS TO SMOKE.
  • Add the mushrooms, snow peas & ½ teaspoons salt.
  • Cook for 2-3 minutes, stirring often.
  • Transfer the vegetables to a warm platter & set aside.
  • Add 3 T. cooking oil to the pan & heat for 30 seconds.
  • Add the sliced chicken &stirring constantly, cook for 2-3 minutes or until chicken is firm & white.
  • Return the vegetables to the pan & combine with the chicken.
  • Serve over hot rice.
  • ENJOY!

  • White rice for 4, prepared separately.

Heat the oil in a wok over medium heat, add shallots and cook for about 1 minute. Add chicken and cook for about 4 minutes until it loses its pink color, then add chicken stock and allow to simmer. Add Snow Peas and cover wok for another 4 minutes, stirring occasionally. Remove cover and stir in ginger, and sugar. Cook for another 2 minutes. Mix well. Serve hot. Serve with white rice.
