Cooking chicken over a can of ginger ale will ensusre that it stays moist while baking. If you're expecting a large crowd for Easter, this recipe that uses two whole chickens is the perfect main dish for your crowd.

2 (3-lb.) whole chickens
1/4 cup vegetable oil
1/2 cup liquid steak seasoning
1 tablespoon salt
1 tablespoon chopped fresh rosemary
2 teaspoons minced garlic
1 teaspoon pepper
2 (12-oz.) cans ginger ale
Garnishes: red leaf lettuce, green grapes, rosemary sprigs

Steps:

  • Remove giblets and necks, if necessary. Rinse chickens with cold water; pat dry. Place each chicken in a large zip-top plastic freezer bag.
  • Whisk together oil and next 5 ingredients. Pour evenly over chickens. Seal bags, and chill, turning occasionally, 8 hours. Remove chickens from marinade, discarding marinade.
  • Using a can opener, carefully remove lids from cans of ginger ale. Remove one-fourth ginger ale from each can, and reserve for another use, leaving remaining ginger ale in can. Place cans in a lightly greased large roasting pan. Place each chicken upright onto a ginger ale can, fitting can into cavity. Pull legs forward to form a tripod, allowing chickens to stand upright.
  • Bake, uncovered, at 325° for 1 hour and 40 minutes or until a meat thermometer inserted into thigh registers 170° and chickens are golden brown. Let stand 10 minutes; carefully remove cans before serving. Garnish, if desired.

A different take on the typical beer can chicken. I inject the butter-based rub under the skin for better flavor. The steam from the liquid makes this moist and tender.

1 (4 pound) whole chicken
¼ cup butter, melted
2 tablespoons brown sugar
2 cloves garlic, minced
salt and pepper to taste
juice of 1 fresh lemon, divided
1 (12 ounce) can lemon-lime soda (such as Sprite®)
1 small whole onion, peeled
1 squeezed lemon half

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Remove the giblets and rinse chicken inside and out with water. Pat dry with paper towels.
  • Stir together butter, brown sugar, garlic, salt and pepper, and half the lemon juice in a bowl. Rub the mixture over the entire chicken, including the cavity and beneath the skin.
  • Discard 1/2 of soda, leaving the rest in the can, and pour the remaining lemon juice into the can. Place the can on a baking sheet, and set the chicken upright on the can, inserting it into the cavity of the chicken. Plug the neck opening of the chicken with the onion and a squeezed lemon half to retain steam.
  • Roast the chicken in the preheated oven for 1 1/2 to 2 hours, to a minimum internal temperature of 180 degrees F (80 degrees C). Remove the chicken from the oven, discard the soda can, and cover chicken with a doubled sheet of aluminum foil to rest in a warm area for 10 minutes before slicing.

Ginger Ale is a simple addition to traditional Baked Ham, but it really makes a difference and adds a lot of flavor while keeping the ham moist.

6 -8 lbs half boneless ham or 6 -8 lbs semi boneless ham
1 (12 ounce) can ginger ale (not sugar free)
1/2 cup brown sugar

Steps:

  • Place ham in baking dish or roasting pan.
  • Score ham diagonally both ways about 1/8" in.
  • Pour ginger ale over top.
  • Pat brown sugar all over top and sides of ham.
  • Bake according to ham package directions.
  • (Usually 20 minutes per pound at 325 degrees).
  • Serve with Potato Salad or Scalloped Potatoes (see my other recipes).

1 tablespoon cooking oil
2 -3 chicken breasts, boneless & skinless, cut into 1-inch pieces
1/2 cup chopped green onion
2 tablespoons Worcestershire sauce
355 ml ginger ale
salt and pepper

Steps:

  • Heat the oil in a frying pan and add chicken. Cook until the chicken starts to brown. Add worcestershire sauce and green onion, and stir. Gradually add gingerale, letting it boil down and brown further. Serve with rice or potatoes and your favorite veggies.
