GINA'S CROCK-POT SPINACH AND ARTICHOKE DIP
Steps:
- Put all ingredients in crock-pot on high, and stir occasionally till well mixed. Turn on low stirring at least every 20 minutes.
- Cut top 1/2" of bread off. Hollow it out to 1", slice bread in 1" cubes and place toothpicks in each. If it is too thick, add some whipping cream or heavy cream or milk to make it dipping consistency.
- Scoop dip into bread bowl and sprinkle with paprika or your favorite top seasoning... keep it full so guests will be pleased!

- Add the flour and cook while stirring until it becomes a light blonde color.
- Slowly stir in the heavy cream, and the drained spinach, and simmer until it starts to thicken, about 5 minutes.
- Stir in the artichoke hearts, tomatoes, and cheese and cook until the cheese is melted. Remove to a serving bowl and serve with tortilla chips.

- To drain the thawed spinach of excess water squeeze it in a fine mesh sieve then break up by hand into a large mixing bowl.
- To drain the tofu of excess moisture squeeze it through a nut milk bag. You could also use a fine mesh sieve, double layer of cheesecloth, or tofu press. Then add it to a high-powered blender.
- In a pan over medium heat sauté zucchini with vegetable oil, onions, and garlic cloves for 12 to 14 minutes until everything is softened and lightly caramelized and golden brown. Lower heat as necessary so nothing burns. Let this mixture cool down so it's not so hot going in the blender.
- Once cooled, add the sautéed veg to the blender with tofu, lemon juice, apple cider vinegar, sea salt, onion powder, garlic powder, ground pepper, and non-dairy milk. Blend on high until completely smooth.

- Heat a large skillet over medium heat. Add the oil, garlic, red pepper flakes and 1/4 teaspoon salt. Cook stirring often, for 2 minutes or until fragrant and the garlic is just beginning to brown. Add the spinach and remaining salt and cook an additional 2 minutes or until the spinach is wilted. Drain in a strainer squeezing out any excess liquid. Allow to cool slightly for about 5 minutes or until cool enough to handle. Roughly chop the spinach and set aside. Wipe out the pan with a paper towel and set aside.
- Lay out 4 slices of bread. Sprinkle each slice of bread with 1/2 cup mozzarella cheese. Divide the spinach evenly over the slices. Place the remaining slices of bread on top. Spread the top slices of bread evenly with half of the butter or mayonnaise. Sprinkle each buttered sandwich with 1 tablespoon parmesan cheese.
- Heat the large skillet over medium low heat. Add the sandwiches to the hot pan, butter and cheese side down. You may have to do this in two batches. Cover the sandwiches with a lid slightly smaller than the pan so you can press down on the sandwiches. Allow to cook for 3 to 4 minutes or until golden brown and crispy and the mozzarella is beginning to melt. Remove the lid and butter and cheese the top pieces of bread. Flip the sandwiches and cook an additional 3 minutes or until the bread is golden brown and crispy and the cheese is melted. Remove from the pan and allow to sit for 3 minutes before slicing in half and serving warm. Continue with remaining sandwiches if cooking in batches.
