3 tablespoons unsalted butter
2 large apples, peeled, cored, and sliced 1/4-inch thick
1/4 cup light brown sugar, packed
3 eggs
1 teaspoon granulated sugar
Pinch salt
1/2 cup whole, 2 percent fat, or 1 percent fat milk
1/2 cup all-purpose flour
1/4 teaspoon cinnamon
2 lemon wedges

Steps:

  • Preheat the oven to 450 degrees F. In a large ovenproof skillet (preferably with curved sides), melt 2 tablespoons of the butter over medium heat. Add the apple slices and cook, stirring, until tender, about 10 minutes. Add 2 tablespoons of the brown sugar and stir to combine.
  • In a medium bowl, whisk together the eggs, sugar, salt, milk, and flour. Pour this batter over the apples in the skillet, transfer to the oven, and bake until puffy, about 10 minutes. Meanwhile, in a small bowl, mix the cinnamon and remaining 2 tablespoons brown sugar. Cut the remaining tablespoon of butter into pieces. When the pancake puffs, remove from the oven, dot with butter, sprinkle with cinnamon sugar, and return to the oven to bake until browned, about 10 minutes more. As the pancake comes out of the oven, squeeze the lemon wedges over the top. Serve in wedges right out of the pan.

2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon fine salt
1 cup milk
1/4 cup packed light brown sugar
1 teaspoon pure vanilla extract
2 large eggs
4 tablespoons unsalted butter, plus more for serving
1 small red-skinned apple, cored
For serving: maple syrup or honey

Steps:

  • Preheat the oven to 250 degrees F.
  • Whisk the flour, baking powder, cinnamon and salt together in a medium bowl.
  • Whisk the milk, sugar, vanilla and eggs together in a large bowl until the sugar dissolves. Melt 2 tablespoons of the butter in a medium nonstick or cast-iron skillet over medium heat. Let cool slightly, then whisk the butter into the egg mixture; reserve the skillet for cooking the pancakes. Whisk the flour mixture into the milk mixture until combined with a few lumps. Grate the apple on the large holes of a box grater and stir into the batter.
  • Melt 1 tablespoon of the remaining butter in the reserved skillet over medium heat. Drop 2 tablespoons of batter per pancake into the hot skillet. Cook until the surface of the batter forms bubbles and the edges are set, about 3 minutes. Flip the pancakes and continue to cook until puffed in the center, about 1 minute more. Transfer to a baking sheet and put in the oven to keep warm while making the rest of the pancakes. Cook the remaining batter, adding the remaining 1 tablespoon of butter as needed.
  • Serve the pancakes with butter and maple syrup or honey.

This pancake will serve about 4 people and it is so yummy. It's a nice change from your traditional pancakes and everyone will love it so much more. The cinnamon and sugar make it unbeatable. I always make this for a brunch when I have special guests. It's a winner EVERY time! Note: You can make this the night before and just heat it up in the morning. Put it in the oven on 250°F for about 15 minutes.

1 golden delicious apple
4 tablespoons butter
1 teaspoon ground cinnamon
1/4 cup sugar
1/3 cup sugar
1/3 cup flour
1/3 cup milk

Steps:

  • Peel and slice apple about 1/8 inch thick.
  • Over low heat in a 10 inch skillet heat up butter 1/4 cup sugar and cinnamon.
  • Remove from heat and place apple slices in a circle overlapping them slightly until you have one large circle and one small circle in the middle.
  • Cook over LOW heat until tender-crisp. (About 10 minutes)
  • Meanwhile, preheat oven to 400°F and beat together flour, milk, baking powder, salt and egg yokes with a fork in a separate bowl.
  • Beat egg whites and 1/3 cup of sugar on high speed until soft peaks form.
  • Fold egg white mixture into egg yoke mixture and pour over cooked apples, spreading it evenly. (Be sure not to move the apples around).
  • Bake pancake for 10 minutes (or until golden brown).
  • Carefully invert pancake onto a plate so that the apples are on top.
  • Enjoy!

Found this online while searching for TOPH recipes. Fabulous recipe from The Original Pancake House! The Apple Pancake contains eggs, flour, milk, sugar, cinnamon, vanilla, butter and lots of apples. It takes about 30 minutes to bake in an iron skillet and is served all puffed up and steaming hot. The Apple Pancake really isn't much like a pancake at all. It's more a like a soufflé or really, really moist bread pudding. The only way to truly appreciate it is to try one yourself.

5 tablespoons butter
2 Granny Smith apples (peeled, cored, and sliced thin)
1 tablespoon cinnamon
1 cup flour
1 cup milk

Steps:

  • In a mixing bowl, add flour, milk, vanilla and eggs. Mix well.
  • In another bowl, mix the brown sugar, granulated sugar, and remaining cinnamon.
  • Add butter to a 10 inch Pyrex pie deep dish and put in the oven (deep dish Pyrex is great) At 400 degrees.
  • When the butter is completely melted remove from oven.
  • Pour the batter into the Pyrex dish and put back in the oven for 20-25 minutes. The edges will begin to puff.
  • Remove the half-way cooked batter from the oven and now add the apple mixture to it.
  • Just simply place the apples all over the top of the batter.
  • Next, cover the entire surface with the brown sugar/sugar/cinnamon blend and put it back in the oven for another 20-25 minutes.

Confectioners' sugar
Pure maple syrup, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel, core, and slice the apple 1/8 inch thick. Melt 3 tablespoons of the butter in a 9-inch ovenproof crêpe pan or skillet over medium to medium-high heat. Add the apple, 1 tablespoon of the granulated sugar, and the cinnamon and toss well. Sauté the apple for 5 to 7 minutes until tender, tossing occasionally. Spread the apple out in the pan and keep hot over low heat.
  • Meanwhile, melt the remaining tablespoon of butter in the microwave. In a medium bowl, whisk together the milk, eggs, melted butter, and vanilla. In a small bowl, combine the flour, the remaining tablespoon of granulated sugar, and the salt. Whisk the flour mixture into the milk mixture, whisking until there are no lumps. Pour the batter over the cooked apple in the hot pan and immediately place in the oven.
  • Bake for 12 to 15 minutes, until the pancake is puffed and the edges start to get crispy and browned. Dust lightly with sifted confectioners' sugar, cut in wedges, and serve hot with maple syrup.

3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon fine salt
1/8 teaspoon freshly ground nutmeg
2 large eggs at room temperature
1 1/4 cups milk at room temperature
1/2 teaspoon vanilla extract
3 tablespoons unsalted butter, plus more as needed
4 Macintosh or other small apples
Warm maple syrup, as an accompaniment

Steps:

  • Preheat the oven to 200 degrees F. Set a wire rack on a baking sheet and place in the oven.
  • Whisk 1 3/4 cups flour, the sugar, baking powder, salt and nutmeg in a large bowl. In small bowl or liquid measuring cup, whisk the eggs with the milk and vanilla extract. Melt 3 tablespoons butter in a large well-seasoned cast-iron or non-stick skillet over medium heat. Whisk the butter into the milk mixture. Add the liquid ingredients to the dry mixture, and whisk just long enough to make a thick batter, (if there are a couple lumps that's okay).
  • Using a melon baller or an apple corer, peel and core the apples keeping them whole. Slice the apples crosswise to make 1/4-inch rounds. Put some flour on a plate and dredge the apple slices until lightly coated, shaking off any excess flour.
  • In the same skillet over medium to medium-low heat, place 3 apple slices about 3-inches apart in the skillet. Cook without turning until browned, about 3 minutes. Ladle about 2 tablespoons of the batter over each apple ring. Cook, until bubbles break the surface of the pancakes, and the undersides are golden brown, about 2 to 3 minutes. Add a nut-sized bit of butter to the skillet, as needed, and flip the pancakes, cook until golden on the underside, about 1 minute more.
  • Serve immediately or transfer to oven to keep warm. Repeat with the remaining apples and batter. Serve with warm maple syrup.

300g self-raising flour
1 tsp bicarbonate of soda
2 medium eggs
284ml carton buttermilk
4 tbsp milk
85g melted butter
2 small-medium eating apples , peeled, cored and grated
50g dried cranberries
a little more butter or sunflower oil , for frying
maple syrup , to serve
85g softened salted butter
1 tsp cinnamon
2 tsp caster sugar

Steps:

  • To make the cinnamon butter, mix all the ingredients together, wrap in cling film, shape into a log and chill. You can make this up to 3 days ahead.
  • Mix the flour, bicarb and a pinch of salt in a bowl. Make a well in the centre, then gradually whisk in the eggs, followed by the buttermilk, milk and melted butter. Once the mixture is smooth, stir in the grated apples and cranberries.
  • Melt a little more butter in a non-stick pan or wipe with sunflower oil. When hot, add 1-3 small ladles of batter to the pan to make 1-3 small pancakes (depending on the size of your pan). Cook for 2-3 mins until bubbles appear and the underneaths are set and golden. Flip and cook for a few mins more. Transfer pancakes to a plate, cover with baking parchment and keep warm in a low oven. Cook the remaining pancakes.
  • To serve, stack pancakes on plates, top with a good knob of cinnamon butter and drizzle with maple syrup.

3 tablespoons liquid honey
2 tablespoons melted butter
oil (for frying)

Steps:

  • In a bowl, mix first 4 ingredients.
  • In another bowl, whisk together the remaining ingredients, except the oil.
  • Stir the egg/apple mixture into the dry ingredients; mix well, until smooth.
  • Warm a skillet.

1 1/2 cups whole wheat flour (or buckwheat)
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg (optional)
1/8 teaspoon ground cardamom (optional)
1/2 teaspoon salt
3 eggs
2 1/2 cups milk (skim is OK)
1/4 cup butter, melted (or margarine)
2 tablespoons maple syrup or 2 tablespoons packed brown sugar
1 1/2 cups shredded apples (about 2 large)

Steps:

  • Combine dry ingredients in a large bowl.
  • Whisk remaining ingredients, in order given, in a separate bowl.
  • Pour wet ingredients over the dry ingredients and stir gently just until combined - a few lumps should remain.
  • Melt a thin layer of butter in a large nonstick skillet; scoop about 1/3 cup batter per pancake into skillet.
  • Cook for 2 minutes or until bubbles break in batter but don't fill in; turn and cook for 1 to 2 minutes longer or until the pancakes are golden & puffed.
  • Repeat with remaining batter, adding butter as required and adjusting the heat as necessary to prevent burning.
  • Serve the classic way with butter & maple syrup or yogurt sweetened with maple syrup.
