The only gluten-free banana bread recipe you'll ever need. 1 bowl, simple ingredients, so moist, hearty, and delicious.

3 medium ripe bananas ((3 bananas yield ~1 1/2 cups or 337 g))
1/2 tsp pure vanilla extract
1 whole egg
3 Tbsp avocado or coconut oil, melted
1/4 cup organic cane sugar
1/4 cup packed organic brown sugar
2-3 Tbsp maple syrup ((depending on ripeness of bananas // or sub honey))
3 1/2 tsp baking powder
3/4 tsp sea salt
1/2 tsp ground cinnamon
3/4 cup unsweetened almond milk
1 1/4 cup almond meal
1 1/4 cup gluten-free flour blend
1 1/4 cup gluten-free oats
Butter
Honey

Steps:

  • Preheat oven to 350 degrees F (176 C) and line a 9x5-inch loaf pan with parchment paper.
  • Mash banana in a large bowl. Add all ingredients through almond milk (vanilla, egg, oil, cane sugar, brown sugar, maple syrup, baking powder, salt, cinnamon, almond milk) and whisk vigorously to combine. Last add almond meal, gluten free flour blend and oats and stir.
  • Bake for 1 hour - 1 hour 15 minutes. When ready, it should feel firm and be crackly and golden brown on top.
  • Let cool completely before cutting or it will be too tender to hold form.
  • Serve with butter and honey or as is. Store leftovers in a covered container for up to a few days. Slice and freeze for longer term storage.

1 teaspoon baking powder
½ teaspoon salt
½ cup butter
½ cup turbinado sugar
2 eggs, lightly beaten
3 tablespoons maple syrup
6 ripe bananas, mashed

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, combine flour, baking powder and salt. In a separate bowl, cream together butter and sugar. Stir in eggs, maple syrup and mashed bananas until well blended. Add the banana mixture to the flour mixture; mix until batter is just moist. Pour batter into prepared loaf pan.
  • Bake in preheated oven for 20 to 30 minutes, until a toothpick inserted into center of the loaf comes out clean. If using muffin or cupcake tins, bake for 15 minutes or until a toothpick inserted into the center of a muffin comes out clean.

5 small ripe bananas (4 mashed, 1 sliced down the middle to decorate the top)
250g gluten free plain flour (I used a mix of dove farms all purpose gluten free flour and rice flour)
2 and a half teaspoons of bicarbonate soda
1 and a half teaspoons of ground cinnamon
180g light muscovado sugar
75g unsalted butter, melted
2 large free range eggs
Slice of lemon

Steps:

  • Pre-heat the oven to 180.c and line a loaf tin with grease proof paper.
  • In a large bowl, roughly mash 4 of the bananas, add the sugar, eggs and melted butter and beat together using an electric whisk.
  • Sieve in the flour, bicarbonate of soda and cinnamon and gently fold in.
  • Pour the mixture into the pre-prepared tin.
  • Slice the fifth banana in half and rub the cut side of each half with the slice of lemon to stop it browning, and arrange on top of the cake mix.
  • Bake in the pre-heated oven for 60 minutes until a skewer inserted into the middle comes out clean.
  • Leave to stand for 10 minutes in the loaf tin before taking out and standing on a wired rack to cool completely.
  • Cut into 10 slices and enjoy with a cup of tea.

Steps:

  • For GF flour: Mix all flours together thoroughly and store in an airtight container in the refrigerator. Whisk together again to fluff before measuring.
  • For bread: Preheat oven to 350F. Grease 8x5 loaf pan with spray grease.
  • Cream together oil, sugar, eggs and vanilla in a mixer bowl.
  • In another bowl mix together the flour, xanthan gum, salt, baking powder and cinnamon.
  • Mix the flour mixture into the sugar mixture alternatively with the mashed banana. Beat until smooth.
  • Stir in nuts and raisins or chocolate chips. Transfer to baking pan and bake for 1 hour.

2 small ripe bananas (up to 3/4 cup)
1 egg
1/2 cup light brown sugar
1/4 cup oil
1/2 cup milk
1/2 teaspoon vanilla flavoring (extract or essence)
1/2 cup potato starch
1/2 cup cornstarch
4 teaspoons baking powder
1 teaspoon guar gum (or 3/4 tsp xanthan gum)
1/4 teaspoon baking soda
1 teaspoon ground coriander (optional, but adds great flavor)
1/4 teaspoon salt

Steps:

  • Preheat oven to 350F degrees.
  • In a large bowl, mash bananas well.
  • Add egg, light brown sugar, oil, milk and vanilla flavoring.
  • Mix well.
  • Add potato starch, cornstarch, baking powder, guar gum or xanthan gum, baking soda, salt, and coriander; mix well.
  • Batter will be thin.
  • Pour into greased 9 x 4 loaf pan.
  • Bake approximately 40 minutes, until toothpick inserted in middle tests clean.
  • Allow to cool briefly before removing from pan.
  • Refrigerate or freeze extra servings.
  • Keep covered to prevent drying out.
  • (When I freeze this, I do it in individual slices. Wrap each slice in saran wrap after the bread has cooled completely. Then place in a freezer bag. I use a straw to get all the air out of the baggie. Label and freeze.).

100g gluten-free oats
50g ground almonds
1 tsp gluten-free baking powder
1 tsp cinnamon
90g dark brown sugar
90g caster sugar
100g butter , melted
2 large eggs , beaten
1 tbsp icing sugar

Steps:

  • Heat the oven to 180C/160C fan/gas 4 and line a 900g loaf tin with parchment paper (our tin was 19 x 9 x 6cm). Put all the ingredients, except the sliced banana, 1 tbsp caster sugar and the icing sugar, into a large bowl and stir until smooth and combined.
  • Pour into the tin and put the two remaining banana halves cut-side up across the top of the batter, pressing down slightly. Sprinkle over the caster sugar. Bake for 1hr-1hr 15 mins until a skewer comes out clean, covering with foil towards the end of cooking if it browns too much.
  • Dust with icing sugar and leave to cool.

3/4 cup brown rice flour
1/2 cup tapioca flour
2/3 cup plus 1 tablespoon sugar
1 teaspoon baking powder

1/2 teaspoon ground cinnamon
1/2 teaspoon fine salt
2 large eggs, separated
1 teaspoon pure vanilla extract
3 very ripe bananas, mashed

Steps:

  • Preheat the oven to 350 degrees F. Line the bottom of a 9- by 5-inch loaf pan with parchment, and butter the bottom and sides.
  • Whisk together the rice and tapioca flours, 2/3 cup of the sugar, baking powder, baking soda, cinnamon and salt in a medium bowl.
