ONE BOWL GLUTEN FREE BANANA BREAD
Steps:
- Preheat oven to 350 degrees F (176 C) and line a 9x5-inch loaf pan with parchment paper.
- Mash banana in a large bowl. Add all ingredients through almond milk (vanilla, egg, oil, cane sugar, brown sugar, maple syrup, baking powder, salt, cinnamon, almond milk) and whisk vigorously to combine. Last add almond meal, gluten free flour blend and oats and stir.
- Bake for 1 hour - 1 hour 15 minutes. When ready, it should feel firm and be crackly and golden brown on top.
- Let cool completely before cutting or it will be too tender to hold form.
- Serve with butter and honey or as is. Store leftovers in a covered container for up to a few days. Slice and freeze for longer term storage.

- Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
- In a large bowl, combine flour, baking powder and salt. In a separate bowl, cream together butter and sugar. Stir in eggs, maple syrup and mashed bananas until well blended. Add the banana mixture to the flour mixture; mix until batter is just moist. Pour batter into prepared loaf pan.

- Pre-heat the oven to 180.c and line a loaf tin with grease proof paper.
- In a large bowl, roughly mash 4 of the bananas, add the sugar, eggs and melted butter and beat together using an electric whisk.
- Sieve in the flour, bicarbonate of soda and cinnamon and gently fold in.
- Pour the mixture into the pre-prepared tin.
- Slice the fifth banana in half and rub the cut side of each half with the slice of lemon to stop it browning, and arrange on top of the cake mix.
- Bake in the pre-heated oven for 60 minutes until a skewer inserted into the middle comes out clean.
- Leave to stand for 10 minutes in the loaf tin before taking out and standing on a wired rack to cool completely.
- Cut into 10 slices and enjoy with a cup of tea.

I made this today with my own blend of GF flours. The recipe was originally on the bag of flour that I bought. The family said it was delicious; even though they can eat wheat flour! Success!

- For GF flour: Mix all flours together thoroughly and store in an airtight container in the refrigerator. Whisk together again to fluff before measuring.
- For bread: Preheat oven to 350F. Grease 8x5 loaf pan with spray grease.
- Cream together oil, sugar, eggs and vanilla in a mixer bowl.
- In another bowl mix together the flour, xanthan gum, salt, baking powder and cinnamon.

- In a large bowl, mash bananas well.
- Add egg, light brown sugar, oil, milk and vanilla flavoring.

- Preheat the oven to 350 degrees F. Line the bottom of a 9- by 5-inch loaf pan with parchment, and butter the bottom and sides.
- Whisk together the rice and tapioca flours, 2/3 cup of the sugar, baking powder, baking soda, cinnamon and salt in a medium bowl.
- Whisk together the butter, egg yolks and vanilla in a large bowl. Fold in the mashed bananas.
