German Green Beans image

This is another simple but tasty dish that I found in one of my grandmother's old recipe files. My family loves it, and it makes a nice alternative for the traditional holiday green bean casserole. It's good all year long, but especially when the weather turns cool.

4 slices bacon
1/2 cup chopped onions or 2 tablespoons dried onion flakes
2 tablespoons flour
4 tablespoons sugar
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup vinegar (cider, if possible)
2 (14 1/2 ounce) cans green beans (reserve 1/2 cups liquid from canned beans or water if using fresh) or 2 1/2 lbs fresh green beans, washed and cut (reserve 1/2 cups liquid from canned beans or water if using fresh)
1/4 cup bacon bits (Bacos)

Steps:

  • Fry the bacon in a large cast-iron skillet until crisp, then drain on paper towels, leaving the fat in the pan.
  • Add the onion and cook until light golden and tender, then add the flour and stir, cooking for about 1 minute.
  • Add the sugar, salt, pepper, bean liquid or water, and vinegar, stir, and bring to a rolling boil; Allow to boil for about 3 minutes to thicken the sauce. Add the bacon bits at this time.
  • Add the green beans and cook until heated through, about 7--8 minutes.
  • Transfer the beans and sauce to a serving bowl and top with crumbled bacon.

GERMAN-STYLE CABBAGE AND BEANS

1 pound fresh green beans, cut into 1-1/2-inch pieces
3 bacon strips, cut into 1-inch pieces
1/2 cup cider vinegar
1/4 cup sugar
3 tablespoons chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups shredded red cabbage

Steps:

  • Place 1 in. of water in a large saucepan; add beans. Bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until crisp-tender. Drain and set aside., In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 2 tablespoons drippings. Add the vinegar, sugar, onion, salt and pepper to the drippings. Bring to a boil. , Add cabbage. Reduce heat; cover and simmer for 5 minutes. Add beans; cook 3-5 minutes longer or until heated through. Stir in bacon.

Canned baked beans never tasted so good! Mary Nieburger of Laughlin, Nevada dresses them up in style with sauerkraut, apple sauce and brown sugar. "These beans are always requested for the monthly dinners at our senior center," she says.

1 can (14 ounces) sauerkraut, rinsed and well drained
1 cup unsweetened applesauce
1/2 cup packed brown sugar
1/2 teaspoon salt

  • In a large bowl, combine all ingredients. Transfer to a 2-qt. baking dish coated with cooking spray. , Bake, uncovered, at 400° for 1 to 1-1/2 hours or until bubbly.

1-1/2 pounds fresh green beans, cut into 1-inch pieces
6 bacon strips

Steps:

  • Place beans in a saucepan and cover with water; bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. , Meanwhile, in a skillet, cook bacon until crisp. Remove bacon and set aside. Saute onion in drippings until tender; remove with a slotted spoon. Drain beans; return to pan. Add onion, 1 tablespoon drippings, salt and pepper; heat through. Crumble the bacon; add to the beans and toss. Serve immediately.
