GERMAN ZWIEBELKUCHEN (ONION PIE)

German Zwiebelkuchen (Onion Pie) image

Zwiebelkuchen is an onion pie from Swabia, in south-central Germany. It is a special time of year, in the fall, when the mom & pop winemakers will open a BasinWirtschaft in their barn or garage. They serve the new wine, fresh zwiebelkuchen, and perhaps some wurst, for a minimal fee. A few tables are set up, and they are open when they have time to serve. To indicate they are serving, they will hang a straw broom over the doorway. The combination of the onions and the 'green' wine can have explosive consequences later on!

Time 2h

Yield 11

Number Of Ingredients 8

6 pounds onions, sliced
4 slices bacon
1 (16 ounce) container sour cream
4 egg
2 tablespoons all-purpose flour
½ teaspoon salt
½ teaspoon caraway seed
2 recipes pastry for a 9 inch single crust pie

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a jelly-roll pan or large pizza pan with prepared dough, making sure dough extends up sides of pan.
  • Saute onion in a skillet until translucent and pour cooked onion into a large mixing bowl. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, chop and add to onion; mix well.
  • Stir in sour cream. Beat eggs enough to break up yolks, then mix in to pie mixture. Add flour to thicken mixture (onions will create a lot of water), then add salt. Mix well and pour mixture into prepared pan. Sprinkle top with caraway seed.
  • Bake in preheated oven for about 1 hour, or until onions start to turn golden brown on top.

ZWIEBELKUCHEN ( SOUTHWEST GERMAN ONION CAKE)

Zwiebelkuchen ( Southwest German Onion Cake) image

This is a traditional late summer early fall snack, usually served with 'new wine'. It is not a sweet cake, but a nice hearty fall weather dish. I got this off a German website and translated it into English. This recipe is very good, and you will not be disappointed! Good for a potluck, or even a party snack.

POTTHUCKE: A TRADITIONAL GERMAN POTATO CAKE

Potthucke: A Traditional German Potato Cake image

Provided by Nina-Kristin Isensee

Number Of Ingredients 9

2 1/2 lbs potatoes
2 onions
3 1/2 oz smoked bacon (diced)
9 oz whipping cream
4 eggs
salt
pepper
nutmeg
pinch ground rosemary or thyme

Steps:

  • Peel 14 oz of the potatoes (about 7/8 cup) and boil them in salted water for approximately 20 minutes or until soft. Grease the loaf baking pan or line with parchment paper, leaving excess paper hanging over the sides for easy removal of the finished cake. Preheat the oven to 200°C (175°C fan oven) or about 390°F.
  • Meanwhile, peel and dice the onions. In a pan, render down the bacon and lightly braise the onions with it.
  • Let the cooked potatoes cool down a bit. Pass through a potato ricer to mash them.
  • Peel, wash and roughly grate the remaining potatoes.
  • Knead the grated and cooked potatoes together with the onion-bacon mixture, cream, eggs and a few generous pinches of salt, pepper and nutmeg.
  • Add the dough to the prepared baking tin. Bake for 50-60 minutes. Cool before removing from the pan, either by turning it over or carefully taking it out with the parchment paper. Then cut into slices.
  • You can either eat it straight away, or reheat slices by frying them in a pan until brown and crispy on both sides.

  • 2. Attach the dough hook to mixer, add flour, salt and the rest of the milk to the activated yeast. Knead on low for a minute, then stop and add the butter. Knead again until a soft dough ball forms. Cover with plastic wrap and let rise in a warm spot, until doubled in size.
  • 3. On a clean, lightly floured surface roll the dough into a round or rectangular shape sized to fit your baking dish. (Use a 9-10 inches diameter round dish or 9x9 square or about 9x10 rectangular dish).
  • Filling1. In a pan over medium heat cook the diced bacon until it renders most of its fat. Remove to paper towel lined plate and let it cool down. Discard excess rendered fat from the pan, leave a coating or so.

  • Once the dough forms a ball, place a lid or kitchen towel over the bowl and place it in a warm spot without draft to let the dough rise for approx. 60 minutes.
  • In the meantime, line the bottom of your 10-inch springform cake pan with parchment paper and spray/brush the sides with oil or butter.

Then place the dough into the pan, make sure it fits well with your fingers, and form a high edge (for the crust) approximately 1.5-inch up the wall of the pan. Set the pan aside.

  • Dissolve the yeast in the warm milk and let stand for 5 minutes. Place the flour and salt in a food processor and make a well in the center. Add the butter and pour the milk mixture over. Using a dough hook, knead the dough on the “bread” setting for about 6 minutes. Add more milk or flour as needed. Form the dough into a ball, spray the same bowl with oil oil, cover loosely with plastic wrap, and let the dough rise in a warm place until nearly doubled in size. (I usually turn the oven on 350 degrees F for about 1 minute just until it’s a warm, turn it off, and let the dough rise in the oven).
