AUTHENTIC GERMAN BREAD (BAUERNBROT)

Authentic German Bread (Bauernbrot) image

Here is a great recipe for authentic German Sourdough Bread. This bread tastes almost exactly like the bread we buy back home in Bavaria, Germany. There, to this day, they bake their bread in a very old stone oven in the middle of a small village, once every 2 weeks. They bake a whole bunch at once, and then you can buy it and freeze extras until the next baking day. It's the best German bread I know!

Time P2DT5h

Yield 20

Number Of Ingredients 8

1 ½ ounces compressed fresh yeast
1 quart warm water
2 tablespoons white sugar
8 cups all-purpose flour, divided
8 cups white rye flour
2 tablespoons salt
1 teaspoon white sugar
2 cups warm water

Steps:

  • First, make the sourdough starter. Crumble the yeast into a large bowl. Whisk in 1 quart of warm water and 2 tablespoons of sugar until dissolved. The water should be just slightly warmer than body temperature. Gradually whisk in 4 cups of flour, continuing to mix until all lumps are gone. Cover with a dish towel, and let sit for 24 hours at room temperature.
  • After 24 hours, stir well, cover, and let stand another 24 hours. It will be a thin, light-colored sourdough which is then ready to use.
  • In a large bowl, stir together the rye flour, remaining 4 cups of all-purpose flour, salt and sugar. Mix in the sourdough starter using a wooden spoon, then stir in 2 cups of warm water. I transfer the dough to a heavy-duty stand mixer to mix the first couple of minutes, then it can't handle the heavy dough and I start using my hands by turning the dough out onto a floured surface. A clean countertop works best. Knead the dough, adding a few tablespoons of water at a time if it is too stiff. Fold the dough over, pull it apart, whatever you can do to get it kneaded up good. Total kneading time should be 15 to 20 minutes to get a smooth dough. Place the dough in a large bowl, cover, and let rise until doubled, 1 to 2 hours.
  • When the dough has risen, scrape it out of the bowl and back onto a floured surface. Knead for about 5 minutes. This is important to activate the gluten. Shape into 1 or 2 long loaves. Place on baking sheets, and let rise for about 1 hour, or until your finger leaves an impression when you poke the bread gently.
  • Preheat the oven to 425 degrees F (220 degrees C). Bake the bread for about 45 minutes for 2 loaves, 1 1/2 hours if you made one big loaf. Don't worry if the crust is dark. The bread will be delicious and so will the crust. Cool completely before cutting. I always freeze half.

BAUERNBROT (GERMAN FARMER BREAD)

Bauernbrot (German Farmer Bread) image

German Farmer Bread similar to what is found in when purchasing Bauernbrot in a Bavarian bakery in Germany. Great with butter and cold cuts, or just plain butter. My sons' favorite is with salami and aged "Moon Cheese".

Provided by Grunig

Categories     Yeast Breads

Time 1h50m

Yield 6-8 serving(s)

Number Of Ingredients 5

20 1/4 fluid ounces water (luke-warm)
1 (1/4 ounce) packet active dry yeast
3 1/4 teaspoons non-iodized salt
5 1/2 cups bread flour
2 1/4 cups rye flour

Steps:

  • Dissolve yeast in water.
  • Knead flour and salt into water mixture creating a smooth dough (Optimal when dough easily comes out of the mixing bowl).
  • Let rise in a warm place for 20 min in a covered, greased bowl.
  • Place a baking pan in bottom of oven and preheat to 480 Deg F.
  • Reknead the dough for a short time and form into a loaf. (or 2, a shorter baking time will result).
  • Place on a greased baking sheet (baking stone). Cover with damp cloth and let the dough rest until doubled in height (aprox 30-60 min) Tip: for a nicer crust brush the loaf with buttermilk, yogurt or coffee periodically. Do not let the surface of the dough dry out.
  • Place the dough and with its baking sheet in the oven. Then pour some boiling water into the baking sheet that is already in the bottom of the oven. (to quickly create steam in the oven)
  • Lower the oven temperature to 430 Deg F.
  • Bake the loaf until desired brownness (40-60 min).
  • To test for doneness, knock on bottom of loaf. If it produces a hollow sound it is ready to remove from oven and place on cooling rack until cool.

BROTCHEN -TRADITIONAL GERMAN BREAD ROLLS

Brotchen -Traditional German Bread Rolls image

When I was living & working in Germany, I would go out every morning for breakfast, & every morning I would eat these little babies! This is a traditional recipe for Brotchen. If you like light, fluffy bread rolls DON'T try these! Brotchen are crusty on the outside but are chewy & quite dense on the inside.........

Provided by Um Safia

Categories     Breads

Time 3h20m

Yield 24 rolls

Number Of Ingredients 9

25 g active dry yeast
10 g white sugar
590 ml warm water (110 degrees F)
25 g shortening
10 g salt
875 g all-purpose flour
3 egg whites, stiffly beaten
1 egg white (for egg wash)
30 ml cold milk

Steps:

  • In a large mixing bowl, dissolve yeast and sugar in warm water. Let sit until creamy; about 10 minutes.
  • Mix in shortening, salt and 3 cups of the flour. Beat with dough whisk or heavy spoon for 2 minutes. Fold in egg whites. Gradually add flour 1/4 cup at a time, until dough forms a mass and begins to pull away from bowl.
  • Turn onto a floured surface. Knead, adding more flour as necessary, for 8 to 10 minutes, until smooth and elastic with bubbles.
  • Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour. Deflate the dough, form into a round and let rise again until doubled, about 45 minutes.
  • Preheat oven to 425 degrees F (220 degrees C). Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into 24 equal pieces and form into oval rolls about 3 1/2 inches long. Place on lightly greased baking sheets, cover and let rise until doubled in volume, about 40 minutes.
  • Place an empty baking sheet on the bottom rack of the oven. In a small bowl, lightly beat the egg white with the 2 tablespoons of milk to make the egg wash. Lightly brush the risen rolls with the egg wash. Place 1 cup of ice cubes on the hot baking sheet in the oven and immediately place the rolls in the oven.
  • Bake at 425 degrees F (220 degrees C) for about 20 minutes or until the tops are golden brown. Remove to a wire rack and cool.

GERMAN KASTENWEISSBROT (WHITE LOAF BREAD)

German Kastenweissbrot (White Loaf Bread) image

I translated this recipe from "Brot Backen," a German language cookbook I acquired while living in Germany. I used to buy this bread weekly from the bakery in our town and had to track down a recipe for it. I will update the measurements for American kitchens once I have tried this. At the bakery they had little bottles of water that they would spray onto the raw dough before baking to make the tops crispy.

Provided by HeatherFeather

Categories     Yeast Breads

Time 3h40m

Yield 1 loaf, 8-10 serving(s)

Number Of Ingredients 9

500 g all-purpose flour, approximately
4 1/2 teaspoons active dry yeast
1 teaspoon granulated sugar
1 teaspoon salt
2 large eggs
1 egg yolk
100 ml lukewarm milk
150 g creme fraiche or 150 g sour cream
breadcrumbs, for the pan

Steps:

  • Measure out the milk and add yeast and sugar; set aside for about 10 minutes or until frothy (if it doesn't get frothy, start over- your yeast is dead or your milk was too hot and killed the yeast).
  • Mix together the yeast mixture with salt, eggs and egg yolk, creme fraiche.
  • Combine the flour and the wet mixture until a dough forms (you may need a little extra flour depending upon the humidity that day).
  • Knead on a floured board, adding extra flour if needed to keep from being too sticky, until a smooth ball forms.
  • Place in a greased bowl, flip over once, and cover with either a damp clean towel or plastic wrap that has first been srayed with nonstick spray.
  • Let rise until doubled in bulk- approx 1 or 1 1/2 hours.
  • Punch down and knead again on a floured surface.
  • Grease a 30cm long loaf pan well and sprinkle with dry breadcrumbs.
  • Set dough into the pan and even out the top.
  • Cover as before and let rise another hour.
  • Heat oven to 175 C.
  • Remove cover and using a sharp knife, make slashes in the dough every 1 cm.
  • Spritz with a bit of water (this will make the crust crisp up).
  • Bake on the second rack of your oven for about 40 minutes.

2 tablespoons white sugar
3 cups all-purpose flour
1 ½ cups prune juice
1 (9 ounce) package condensed mincemeat
2 cups prunes, pitted and chopped
½ cup butter, softened
1 cup black raisins
1 cup walnuts, chopped
1 cup brown sugar, packed
2 teaspoons salt
7 cups all-purpose flour
3 teaspoons butter

Remove from the heat, and stir in the prunes, butter, raisins, walnuts, brown sugar, and salt. Combine the prune mixture with the yeast mixture in the mixing bowl. Gather dough into a ball and place into greased bowl. Cover with a cloth, and place in a warm place until doubled in size, about 1 1/2 hours.

BASIC SOFT WHITE SANDWICH LOAF BREAD

Basic Soft White Sandwich Loaf Bread image

Make and share this Basic Soft White Sandwich Loaf Bread recipe from Food.com.

Provided by Gracie92

Categories     Yeast Breads

Time 53m

Yield 2 serving(s)

Number Of Ingredients 12

2 1/4 cups unbleached all-purpose flour, plus
2 1/2 tablespoons unbleached all-purpose flour
1 3/4 cups water, at room temperature (70 to 90F)
2 tablespoons honey
1 teaspoon honey
3/4 teaspoon instant yeast
2 cups unbleached all-purpose flour
3 tablespoons unbleached all-purpose flour
1/4 cup dry milk, preferably nonfat
3/4 teaspoon instant yeast
9 tablespoons unsalted butter, softened
2 1/4 teaspoons salt

Steps:

  • Make the sponge. In a mixer bowl or other large bowl, combine the flour, water, honey, and instant yeast. Whisk until very smooth, to incorporate air, about 2 minutes. The sponge will be the consistency of a thick batter, scrape down the sides of the bowl, and cover with plastic wrap.
  • Make the flour mixture and add to the sponge. In a medium bowl, whisk together the flour (reserve 1/4 cup if mixing by hand), dry milk, and instant yeast. Sprinkle this on top of the sponge and cover tightly with plastic wrap. Allow it to ferment for 1 to 4 hours at room temperature. (During this time, the sponge will bubble through the flour blanket in places: this is fine).
  • Mix the dough.
  • HAND METHOD.
  • Add the salt and butter to the bowl and, with a wooden spoon or with your hand, stir until all the flour is moistened. Knead the dough in the bowl until it comes together, then scrape it onto a lightly floured counter. Knead the dough for 5 minutes, enough to develop the gluten structure a little, adding as little of the reserved flour as possible to keep the dough from sticking. Use a bench scraper to scrape the dough and gather it together as you knead it. At this point, it will be very sticky. Cover it with an inverted bowl and allow it to rest for 20 minutes. (This resting time will make the dough less sticky and easier to work with).
  • Knead the dough for another 5 minutes or until it is very smooth and elastic. It should still be tacky enough to cling slightly to your fingers a little. If the dough is still very sticky, however, add some of the remaining reserved flour, or a little extra.
  • Shape the dough and let it rise. Turn the dough out onto a lightly floured counter and cut it in half. Shape each piece into a loaf; the exact size is not important at this point. (A long side of the dough should be facing toward you). Dimple the dough with your fingers to deflate any large bubbles. Fold over the right side of the dough to a little past the center. Fold over hte left side of the dough to overlap it slightly. Press the center overlap section with the side of your hand to seal the dough. (If you have a lot of experiance shaping, you may prefer at this point to rotate the dough 90 degrees- a quarter turn). Starting at the top end of the dough, roll it over three or four times, until it reaches the bottom edge of the dough: with each roll, press with your thumbs to seal it and at the same time push it away from you slightly to tighten the outer skin. As you roll and press, the dough will become wider. If it is not as long as the pan, place both hands close together on top of the dough and, rolling back and fourth, gradually work your way towards the ends, gently stretching the dough. For the most even shape, it is important to keep a tight skin on the surface of the dough and not to tear it. If you want the edges of the loaf to be smooth, tuck the sides under. Place the loaves in the prepared loaf pans; the dough will be about 1/2 inch from the top of the pans. Cover them with a large container, or cover them loosely with oiled plastic wrap, and allow to rise until the center is about 1 inch above the sides of the pan, 1 1/2 to 2 hours. When the dough is pressed with a fingertip, the depression will very slowly fill inches.
  • Preheat the oven. Preheat the oven to 350°F 45 minutes before baking. Have an oven shelf at the lowest level and place a baking stone or a baking sheet on it, and a cast-iron skillet or sheet pan on the floor of the oven, before preheating.
  • Bake the bread. Quickly but gently set the pans on the hot baking stone or hot baking sheet. Toss 1/2 cup of ice cubes into the pan beneath and immediately shut the door. Bake for 50 minutes or until medium golden brown and a skewer inserted in the middle comes out clean (an instant-read thermometer inserted into the center will read about 210°F). Halfway through baking, turn the pans around for even baking.
  • Remove from oven and let cool on a wire rack.

BAUERN BROT (BAVARIAN BREAD)

Bauern Brot (Bavarian Bread) image

We've worked really hard to duplicate the bread I used to eat at my Oma's house in Berching Germany (Bayern). This bread has the same texture, taste and aroma and is very easy to make. When done spread real butter on a slice and some schinken on top!
