Traditional recipe for Apple Strudel

400 g Flour
1 pinch Salt
3 Tbsp. Oil (i.e. vegetable oil, suflower oil)
1 Egg
150 ml Water
800 g Apples
some Raisins (optional), soaked in apple juice or rum
1/2 Lemon (juice of it)
1/2 tsp Cinnamon
120 g Sugar
50 g Bread Crumbs
50 g Butter to fry bread crumbs
50 g Butter or Oil to brush onto the strudel
some Confectioners Sugar

Steps:

  • If you want to use raisins in your Apfel Strudel, you need to soak them in 50 ml of apple juice or in some rum. If you don't have either, water will do, too.
  • Prepare the dough by adding all ingredients into a large bowl.
  • Knead for at least 5 minutes to give the dough enough elasticity.
  • Put a little bit of oil into a smaller bowl, turn the dough in the oil to cover it, then put into the fridge to rest at least 30 minutes.
  • Meanwhile prepare the apples: Remove the skin and apple cores.
  • Cut the apples into small pieces.
  • Squeeze the lemon and pour the juice into a bowl with the apple pieces.
  • Add the sugar and Cinnamon to the apples and stir well, then set aside.
  • Melt 50 g of butter in a pan and add the bread crumbs.
  • Roast the bread crumbs for a little bit.
  • When the dough has rested at least 30 minutes, it's time to roll it out. For that you put a clean kitchen towel onto the counter and sprinkle it with flour.
  • Roll the dough on the towel, always rolling from the center to the edges.
  • When you have rolled the dough as thin as possible, use your hands: With the back of the hands, move under the dough and pull it out (watch video!).
  • Once the dough is very thin, melt some more butter and brush it onto the entire dough.
  • Optional: cut of thicker edged of the dough.
  • Now, add the roasted bread crumbs and spread them evenly onto the dough, leaving some space to the edges.
  • Add the Apple slices, place them evenly onto the dough.
  • If you have raisins: Remove them from the liquid, squeeze them a little, then place them evenly between the apple pieces.
  • With the help of the towel, flip the sides of the dough inwards (see video).
  • Starting from one end, lift the towel to slowly roll the strudel towards the other end.
  • Place the strudel seam down on a baking sheet and brush with some melted butter.
  • Bake in the oven at 190°C / 375°F for about 20 - 25 minutes.
  • Finish with a thin layer of sprinkled confectioners sugar.
  • Serve warm with a scoop of vanilla ice cream or cold with vanilla sauce and whipping cream.

1 teaspoon ground cinnamon
2 large Golden Delicious apples, peeled, cored and sliced 1/8 to 1/4-inch thick
1 lemon, juiced
1 cup raisins
1/4 cup sugar, plus 3 tablespoons
2 tablespoons cold butter, cut into small pieces, plus 2 tablespoons butter, melted
All-purpose flour, for dusting
1 sheet frozen puff pastry, thawed

Steps:

  • Position an oven rack in the center of the oven and preheat to 375 degrees F.
  • In a medium bowl, toss the sliced apples with the lemon juice until the apples are thoroughly coated. Add the raisins, 1/4 cup sugar, and the 2 tablespoons cold cubed butter and toss well. Set aside.
  • Lightly dust the counter or work surface with flour. Lay the puff pastry on top and dust the rolling pin with additional flour. Gently roll the puff pastry to 1/8-inch thickness.
  • Spread the apple and raisin mixture over the bottom half of the puff pastry square leaving about 1-inch of space along the side edges. Fold the top half of the puff pastry over and pinch to seal the edges together.
  • Brush the entire strudel with the melted butter and then sprinkle with cinnamon and remaining sugar. Using a serrated knife, make 3 diagonal slits across the top of the strudel.
  • Place the strudel on a parchment lined baking sheet and bake for 40 minutes, rotating halfway through cooking, until the pastry is puffed and golden brown.

½ cup raisins
¾ cup white sugar
½ cup chopped walnuts
2 teaspoons ground cinnamon
½ (17.5 ounce) package frozen puff pastry, thawed
1 tablespoon all-purpose flour
1 egg, lightly beaten
1 tablespoon white sugar, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Combine apples, 3/4 cup sugar, raisins, walnuts, and cinnamon in a large bowl for the filling.
  • Dust a flat work surface lightly with flour. Unroll puff pastry and sprinkle lightly with flour. Roll out slightly and mark into 3 equal sections. Spoon filling into the central section then fold over the section on the left and brush with egg. Fold the right section on top, just like a letter. Make shallow diagonal cuts in the top layer of the apple strudel. Brush with egg and sprinkle with 1 tablespoon sugar.
  • Bake in the preheated oven until apple studel is puffed up and golden, 25 to 30 minutes.

6 cups apples, tart, sliced
3/4 cup raisins
1 lemon, rind of, grated
3/4 cup sugar
2 teaspoons cinnamon
3/4 cup almonds, ground
8 ounces phyllo pastry, 1/2 box, thawed (also called Filo Pastry)
1 3/4 cups butter, melted (no margarine)
1 cup breadcrumbs, finely crushed

Steps:

  • Mix apples with raisins, lemon rind, sugar, cinnamon, and almonds; set aside.
  • Place 1 phyllo leaf on a kitchen towel and brush with melted butter.
  • Place a second leaf on top and brush with butter again.
  • Repeat until 5 leaves have been used, using about 1/2 cup of butter.
  • Cook and stir bread crumbs with 1/4 cup of butter until lightly browned.
  • Sprinkle 3/4 cup crumbs on the layered phyllo leaves.
  • Mound 1/2 of the filling in a 3-inch strip along the narrow end of the phyllo, leaving a 2-inch border.
  • Lift towel, using it to roll leaves over apples, jelly roll fashion.
  • Brush top of the strudel with butter and sprinkle with 2 tbsp crumbs.
  • Repeat the entire procedure for the second strudel.
  • Bake the strudels at 400°F for 20 to 25 minutes, until browned.

1 sheet puff pastry
2 1/2 cups 250g apples
squeeze of lemon juice (for the apples)
3 tablespoons butter, divided
1/4 cup 20g breadcrumbs
1/8 cup 30g sugar
1/8 cup 20g raisins
1/4 teaspoon ground cinnamon
1 teaspoon vanilla sugar
1 teaspoon chopped almonds
flour for work surface
powdered sugar for dusting
whipped cream, vanilla ice cream or vanilla sauce (optional toppings)
rum, orange juice or warm water (optional, enough to soak the raisins in)

Steps:

  • Defrost one sheet of puff pastry.
  • If you want to soak the raisins in rum, orange juice or warm water, do this at least a couple hours ahead of time.
  • Cut apples into thin slices and add to a medium bowl. Squeeze a little lemon juice over the apple slices so they don't turn brown.
  • Melt 2 tablespoons butter in the microwave or on the stove over medium low heat. Take it off the heat and let cool for a few minutes.
  • Add raisins, bread crumbs, cinnamon, vanilla sugar, chopped almonds, and melted butter to the apples. Stir until everything is well combined. Set aside.
  • Place defrosted puff pastry on a floured surface and gently roll dough out on all sides.
  • Spoon apple mixture along the short side of one end of the puff pastry and then roll up the pastry.
  • Pinch the bottom seam together and tuck the ends under to seal the strudel. Place seam side down on a lined baking sheet.
  • Melt 1 tablespoon butter and brush on the strudel. Bake at 350F/180C for 30-35 minutes or until golden brown.
  • Take strudel out of the oven and let cool. Dust with powdered sugar. Serve warm with a side of whipped cream, vanilla ice cream or vanilla sauce.
  • This strudel will be the flakiest the day it's made. (It will taste good the next day, it just won't be as flakey).

Steps:

  • Preheat oven to 400°. In a large skillet, heat butter over medium-high heat. Add onions and apples; cook and stir until tender, 12-15 minutes. Stir in walnuts, mustard, honey, salt and pepper. Remove from heat; cool slightly., On 2 parchment-lined baking sheets, roll out each pastry into a 14x12-in. rectangle. Place half the onion mixture down the center of each rectangle; top with cheese and bacon., On each long side, cut eight 1-3/4-in.-wide strips.
