Southern Fried Quail are a delicacy straight out of my childhood. Simply seasoned, deep fried, and served with cheese grits on the side for an authentic southern dinner.

8 whole quail
Salt
Black pepper
1 cup All-purpose flour
2 cups Peanut oil (for frying)

Steps:

  • Rinse the quail and pat dry thoroughly with paper towels.
  • Generously season each bird with salt and pepper both inside and out.
  • Place quail in a pan and sprinkle over a generous amount of flour, turning the quail in the flour to thoroughly coat the birds.
  • Meanwhile, in a well-seasoned black iron skillet, add enough oil to cover the pan to a depth of about 1 inch.
  • Bring the oil to frying temperature (about 325) over medium-high heat.
  • Add prepared quail to the hot oil and fry 4 to 5 minutes on each side until golden brown all over.
  • Remove to a paper towel lined plate to drain.

1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter or 1/4 cup margarine
1 bouillon cube, beef/chicken
1 cup water, boiling
2 tablespoons all-purpose flour
2 tablespoons water

Steps:

  • Sprinkle quail with salt and pepper.
  • Brown quail on both sides in butter in a large skillet over medium heat.
  • Dissolve bouillon cube in boiling water; add to skillet.
  • Cover, reduce heat and simmer for 40 minutes or until tender.
  • Remove quail from skillet and set aside.
  • Measure pan drippings; add water, if necessary to measure one cup.
  • Combine flour and 2 Tbsp water; gradually add pan drippings.
  • Cook over low heat, stirring constantly, until thickened and bubbly.
  • Return quail to skillet; heat thoroughly.
  • Remove quail to a serving platter, and serve with gravy.

How to cook quail? Try braised quail with mushrooms for an easy beginner's recipe that leaves you with tender quail and a rich cream sauce.

1 tablespoon olive oil
2 tablespoons unsalted butter, divided
4 quail, spatchcocked or semi-boneless
kosher salt
freshly ground black pepper
1 pound mixed wild mushrooms, cleaned and thinly sliced
1 large shallot, finely chopped
2 garlic cloves, minced
1 1/4 cups beef stock
1/4 cup heavy cream or half and half
minced flat-leaf parsley

Steps:

  • Heat the olive oil and 1 tablespoon butter in a wide sauté pan or skillet over medium-high heat until the butter is melted and bubbling.
  • Pat the quail dry and sprinkle with salt and pepper.
  • Add the quail to the pan, breast side down. Cook until browned, about 2-3 minutes, then remove from the pan and set aside.
  • Add the mushrooms to the pan in a single layer and cook undisturbed for 3-4 minutes so they can develop a nice, crispy browned texture.
  • Stir in a pinch of kosher salt and continue to cook, stirring every 3-4 minutes, until the mushrooms are deeply browned and reduced in volume.
  • Stir in the remaining 1 tablespoon butter, along with the shallot and garlic, and cook for 30 seconds more.
  • Return the quail to the pan.
  • Add the beef stock and bring to a simmer.
  • Reduce the heat to medium low, cover, and cook for 20-25 minutes, until the sauce has darkened and thickened slightly.
  • Uncover and add the cream. Cook, uncovered, for 5-8 minutes more until the sauce thickens once more.
  • Sprinkle with minced parsley and serve.
