EASY ROASTED-GARLIC FOCACCIA RECIPE
This garlic focaccia is a riff on garlic bread, complete with roasted garlic cloves studded throughout and garlic butter brushed across the top.

- For the Focaccia: Adjust oven rack to center position and preheat oven to 350°F (180°C). Remove 4 cloves garlic from head and set aside. Place remaining head in the center of a sheet of aluminum foil. Drizzle with 1 tablespoon (15ml) olive oil and season with salt. Wrap tightly with foil and place in an oven-safe cast iron, carbon steel, or stainless steel skillet, then transfer to oven. Roast until garlic is completely tender, about 1 hour. Remove from oven and refrigerate until ready to use the next day.
- Combine flour, water, salt, and yeast in a large bowl. (To account for rising, the bowl should be at least 4 to 6 times the volume of the dough.) Mix with hands or a wooden spoon until no dry flour remains.
- Cover bowl tightly with plastic wrap, making sure that edges are well sealed, then let rest on the countertop for at least 8 hours and up to 24 hours. Dough should rise dramatically and fill bowl.
- Add 3 tablespoons (45ml) olive oil to a 12-inch cast iron skillet or large cake pan. Transfer dough to pan by tipping it out of the bowl in one large blob. Turn dough to coat in oil. Using a flat palm, press dough around skillet, flattening it slightly and spreading oil around the entire bottom and sides of pan. Peel roasted garlic cloves and break up large cloves into 2 or 3 pieces each. Scatter roasted garlic evenly over surface of dough, then push down on each clove until it is embedded in a deep well of dough. Cover tightly with plastic wrap and let dough stand at room temperature for 2 hours. After the first hour, adjust oven rack to middle position and preheat oven to 550°F (290°C).
- At the end of the 2 hours, dough should mostly fill skillet, up to its edge. Use your fingertips to press it around until it fills every corner, popping any large bubbles that appear. Lift up one edge of dough to let any air bubbles underneath escape. Repeat, moving around dough, until no air bubbles are left underneath and dough is evenly spread around skillet.
- Transfer skillet to oven and bake until top is golden brown and bubbly and bottom appears golden brown and crisp when you lift it with a thin spatula, 16 to 24 minutes. If bottom is not as crisp as desired, place pan on a burner and cook over medium heat, moving pan around to cook evenly, until bottom of focaccia is crisp, 1 to 3 minutes.
- Meanwhile, Make the Garlic Butter: Mince 4 reserved raw cloves of garlic. Combine remaining 1 tablespoon (15ml) olive oil with butter in a small skillet and melt over medium-low heat. Add garlic, oregano, and pepper flakes and cook, stirring, until fragrant and garlic is just beginning to brown, about 1 minute. Transfer to a small bowl and season with salt.
- When focaccia has finished baking, spread garlic butter over top with a spoon. Transfer to a cutting board, allow to cool slightly, slice, and serve. Extra bread should be stored in a brown paper bag at room temperature for up to 2 days. Reheat in a 300°F (150°C) oven for about 10 minutes before serving.

GARLIC THYME NO-KNEAD FOCACCIA
My no-knead focaccia bread with garlic and thyme is made right in a cast iron skillet, giving it a soft and chewy interior and crispy edges. Easy! Great for dinner or for paninis!

- In a large bowl combine the flour, yeast, and salt. Add the water and stir with a large spoon until the flour is completely incorporated. You may need to get your hands in there to finish mixing in the flour. The dough will be wet and sticky. Cover the bowl with plastic wrap and let it sit in a warm spot in the kitchen for 10-12 hours.
- As soon as you are done mixing the dough, make the garlic oil. Heat oil on medium heat with the garlic. Once it starts bubbling, reduce the heat to low and cook for 5 minutes. The garlic will be soft and lightly golden. Using a slotted spoon, scoop the garlic out of the oil. At this point you can either toss the garlic or reserve it to work into the focaccia. Let the oil cool to room temperature.
- Once the dough is covered in bubbles and looks puffy the dough is ready to be shaped.
- Take 2 tablespoons of the oil and put it into a 10 or 12 inch cast iron skillet. Using your fingertips, scrape the dough out of the bowl into the skillet and turn it to coat it with oil. Spread out the dough over the bottom of the skillet. If it doesn't reach the edges, wait about 10 minutes and then gently push it out some more.
- Cover the skillet with plastic wrap and let the dough rest for 1 hour.
- After 30 minutes, set a rack to the lower middle position and turn on the oven to 500F.
- When ready, top the dough with more of the garlic oil. Then sprinkle thyme leaves, coarse salt, and the reserved garlic slice (if desired) over the top. Dimple the dough with your fingertips, working some of the toppings down into the bread.
- Bake until the middle is cooked through, the top is brown, and the bottom is crispy. 15-20 minutes in a 12-inch skillet. 20-25 in a 10-inch skillet.

NO-KNEAD BIG BUBBLE FOCACCIA
I was very excited to try this high-hydration focaccia, which simply means the dough has a lot of water. In fact, this has the highest amount of water used than any other Food Wishes dough. It holds big bubbles in the baked dough and because of the long fermentation time, has a far superior flavor.

- Stir yeast into bread flour in a bowl. Add salt, followed by 4 teaspoons oil, and water. Stir with a spoon until a wet, sticky dough forms.
- Cover and let sit at room temperature for 12 to 14 hours.
- Uncover dough and transfer to an oiled work surface. Using oiled hands, press and push the dough into a rectangle, 16x12 inches in size. Fold dough into thirds horizontally; fold vertically into thirds. Transfer smooth side up into a generously oiled pan.
- Cover the pan with plastic wrap and let rest until almost doubled in size, for 1 hour.
- Using oiled hands, fold once more into thirds horizontally, then into thirds vertically to develop gluten structure. Flip dough, smooth side up, on the pan; cover with plastic wrap and let rest for 1 hour more.
- Unwrap and stretch and fold dough once more in each direction using oiled hands.
- Transfer, smooth side up, into a generously oiled metal baking pan. Lightly drizzle with additional olive oil and stretch to fit the pan. Cover and let rest for 2 hours.
- Preheat the oven to 425 degrees F (220 degrees C)
- Unwrap and poke holes in the top of the dough using oiled fingers if desired for the traditional focaccia look. Scatter over rosemary and flaky sea salt.
- Bake in the center of the preheated oven until browned, about 30 minutes. Let cool in the pan for 10 minutes; transfer to a wire rack and let cool to room temperature, about 30 minutes. Slice and serve.
