SPICY LEMON GARLIC SHRIMP

2 pounds raw frozen shrimp, deveined, shells on
2 sticks cold butter, cut into pieces
1/4 cup fresh parsley leaves
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper
4 cloves garlic, peeled
1 whole lemon, juiced
Crusty bread, for serving

Steps:

  • Preheat the oven to 375 degrees F. Rinse the shrimp to separate, and then arrange in a single layer on a baking sheet.
  • To the bowl of a food processor, add the butter, parsley, salt, red pepper, garlic and lemon juice. Pulse until combined. Sprinkle the cold butter crumbles over the shrimp.
  • Bake until the shrimp is opaque and the butter is hot and bubbly.
  • Serve with hot crusty bread. Peel and eat the shrimp, and then encourage guests to dip the bread into the butter in the bottom of the pan.

2 tablespoons extra virgin olive oil, 2 turns of the pan
4 cloves garlic, crushed away from skin
1/2 teaspoon crushed red pepper flakes
24 jumbo shrimp, peeled and deveined, tails in tact, ask for easy peels at your fish counter
2 teaspoons grill or steak seasoning blend (recommended: Montreal Seasoning by McCormick) or coarse salt and pepper
1 lemon, zested and juiced
2 tablespoons chopped parsley leaves, a handful

Steps:

  • Heat a large skillet over medium high heat. Add extra-virgin olive oil, 2 turns of the pan, garlic, red pepper flakes and shrimp. Season with grill seasoning or salt and pepper and cook shrimp 3 minutes or until just pink. Toss with lemon zest, juice and chopped parsley. Remove shrimp to a serving platter leaving the garlic cloves in the pan.

1 ½ tablespoons olive oil
1 pound shrimp, peeled and deveined
salt to taste
6 cloves garlic, finely minced
¼ teaspoon red pepper flakes
3 tablespoons lemon juice
1 tablespoon caper brine
1 ½ teaspoons cold butter
⅓ cup chopped Italian flat leaf parsley, divided
1 ½ tablespoons cold butter
water, as needed

Steps:

  • Heat olive oil in a heavy skillet over high heat until it just begins to smoke. Place shrimp in an even layer on the bottom of the pan and cook for 1 minute without stirring.
  • Season shrimp with salt; cook and stir until shrimp begin to turn pink, about 1 minute.
  • Stir in garlic and red pepper flakes; cook and stir 1 minute. Stir in lemon juice, caper brine, 1 1/2 teaspoon cold butter, and half the parsley.
  • Cook until butter has melted, about 1 minute, then turn heat to low and stir in 1 1/2 tablespoon cold butter. Cook and stir until all butter has melted to form a thick sauce and shrimp are pink and opaque, about 2 to 3 minutes.
  • Remove shrimp with a slotted spoon and transfer to a bowl; continue to cook butter sauce, adding water 1 teaspoon at a time if too thick, about 2 minutes. Season with salt to taste.
  • Serve shrimp topped with the pan sauce. Garnish with remaining flat-leaf parsley.

1 1/2 pounds baby red-skinned or Yukon Gold potatoes, halved or quartered if large
Kosher salt
1/4 cup white wine vinegar
Freshly ground pepper
2/3 cup plain Greek yogurt
1/4 cup mayonnaise
1 shallot, very thinly sliced
1 1/4 pounds peeled and deveined large shrimp
2 teaspoons paprika
5 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
3 Persian cucumbers, sliced
1/2 cup roughly chopped fresh mint (or 1/4 cup each chopped fresh parsley and mint)

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water by 1 inch. Season generously with salt and bring to a boil; reduce the heat to a steady simmer and cook until tender, 12 to 15 minutes. Drain and transfer to a bowl. Toss with 1 tablespoon vinegar and season with salt and pepper. Refrigerate until cooled.
  • Meanwhile, whisk together the yogurt, mayonnaise, shallot, remaining 3 tablespoons vinegar and 2 tablespoons water in a small bowl. Season with salt and pepper and set aside.
  • Season the shrimp with salt, pepper and the paprika. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the shrimp and cook until browned on the bottom, about 2 minutes. Flip the shrimp and add the garlic to the pan; cook until the shrimp are just cooked through and the garlic is golden, 1 to 2 minutes. Remove from the heat.
  • Add the cucumbers, yogurt mixture and about half of the mint to the potatoes. Toss well and season with salt and pepper. Divide among plates. Add the shrimp and any juices from the skillet to the plates. Top with the remaining mint.

8 jumbo pasta shells, cooked according to box directions
3/4 cup defrosted shrimp, cut into 1/4 if not small shrimp
1 cup diced summer slicing tomatoes
1/3 cup diced seeded cucumber
1/4 cup diced celery
1/3 cup diced zucchini
1/3 cup diced scallion
1 avocado, 3/4 cup diced
1 chipotle pepper, seed removed and diced
1 tablespoon adobo sauce
1 tablespoon herbs (cilantro, basil, and or parsley)
2 minced garlic cloves
1 fresh lime, juice
2 tablespoons yogurt
salt and pepper

Steps:

  • Toss salad ingredients together.
  • Toss dressing ingredients together, add to salad and stir to coat.
  • Stuff and I mean stuff liberally into the shells. Chill for 1 hour. Garnish with fresh herbs and plate of a bed of fresh greens if desired.

2 garlic cloves, thinly sliced
1/4 teaspoon red-pepper flakes
1 pound large shrimp, peeled and deveined, tails left intact
1 tablespoon unsalted butter
Coarse salt and freshly ground pepper

Steps:

  • Heat oil in a large skillet over medium heat. Add garlic and red-pepper flakes; cook, stirring, until garlic is fragrant and golden (but not brown), about 30 seconds. 1/2 cup seafood cocktail sauce
1 teaspoon prepared horseradish

2 hard-boiled large eggs
2 cups cooked small shrimp, divided
2 cups cooked small pasta shells

  • For dressing, in a bowl, whisk the first seven ingredients. Cover and refrigerate until chilled. Cut eggs in half; discard yolks or save for another use. Chop egg whites. 2 teaspoons ground paprika
2 tablespoons fresh minced garlic
2 teaspoons Italian seasoning blend
2 tablespoons fresh lemon juice
¼ cup olive oil
½ teaspoon ground black pepper
2 teaspoons dried basil leaves
2 tablespoons brown sugar, packed
2 pounds large shrimp (21-25 per pound), peeled and deveined

Steps:

  • Whisk the paprika, garlic, Italian seasoning, lemon juice, olive oil, pepper, basil, and brown sugar together in a bowl until thoroughly blended. Stir in the shrimp, and toss to evenly coat with the marinade. Cover and refrigerate at least 2 hours, turning once.
  • Preheat an outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.
  • Remove shrimp from marinade, drain excess, and discard marinade.
  • Place shrimp on preheated grill and cook, turning once, until opaque in the center, 5 to 6 minutes. Serve immediately.

4 quarts water
2 cups small shell pasta
1 teaspoon salt
1 lb fresh shrimp or 1 lb boiled small shrimp, devined, tails off, chopped small pieces
1 1/2 cups diced celery
2/3 cup diced white onion
1 1/2 cups diced fresh carrots
1/4 cup sweet pickle relish
2 cherry peppers, chopped with seeds (optional)
2 teaspoons paprika
3 tablespoons olive oil
3 tablespoons minced garlic
1 teaspoon salt or 1 teaspoon salt substitute
1 teaspoon white pepper
1/2 teaspoon thyme
1/4 teaspoon oregano
1 cup Miracle Whip (or 1 cup mayonnaise with 1 tsp lemon juice and 2 3 gram packets Splenda sugar substitute)

Steps:

  • In large stockpot, bring water and 1 tsp salt to a boil.
  • Add shell macaroni and stir.
  • Cook 8 to 10 minutes, ala dente. rain and rinse.
  • While macaroni cooking,place shrimp in a ziplock bag with olive oil, paprika, garlic, salt or salt substitute,white pepper,thyme, and oregano. Shake,shake, shake and set aside in refrigerator.
  • In large serving bowl, add all of the chopped and diced vegetables, sweet pickle relish. Add cooked shells, stir.
  • In saute pan, add shrimp and oil and spices.
  • Saute just a few minutes, turning with a spatula until the diced and chopped pieces are cooked.
  • Pour the entire contents of pan over the vegetables and shells. Stir until mixed.
  • Add miracle whip dressing or the substitute dressing as stated.Mix.
  • Add 1 tsp salt and 1/4, 1/2 or 1 tsp white pepper to taste. My family likes the entire 1 teaspoon white pepper. Your family may like a lesser taste of pepper. Serve or cool to serve later.
