1/2 pound asparagus, sliced on a bias into 2-inch pieces
1 pound pasta, conghiglie rigate (shell-shaped)
Coarse salt
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 pounds large shrimp, peeled and deveined
Freshly ground black pepper
5 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes, plus more for garnish
1 1/2 tablespoons freshly grated lemon zest
1/3 cup white wine
Juice of 1/2 lemon
1/4 cup chopped fresh parsley leaves

Steps:

  • Bring a large pot of water to a boil over high heat. Add asparagus to pot, simmer 30 seconds, and remove. Add the pasta and a generous pinch of salt to the pot and cook until al dente. Drain the pasta, reserving 1/2 cup of the pasta water.
  • Meanwhile, heat a large saute pan over high heat. Add 1 1/2 tablespoons of the oil and swirl it to coat the pan. Add the shrimp in a single layer. Sprinkle with salt and pepper. After 2 minutes, turn the shrimp over; add 1 tablespoon olive oil, the garlic, and the red pepper flakes. Stir constantly for 1 to 2 minutes, regulating the heat to avoid burning the garlic.
  • Add the lemon zest and white wine to the shrimp. Stir to reduce the wine slightly. Add the lemon juice, cooked pasta, cooked asparagus, and reserved pasta water to the pan. Toss to combine. Remove from the heat and sprinkle with parsley. Serve with a drizzle of olive oil and extra red pepper flakes on each serving.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed 9x12-inch baking pan with parchment paper and grease with cooking spray.
  • Place asparagus on the prepared baking pan and drizzle with 1 tablespoon olive oil. Sprinkle with garlic, 1 teaspoon salt, and 1/2 teaspoon pepper; toss until well coated. Arrange asparagus in a single layer.
  • Bake in the preheated oven until slightly tender, about 6 minutes.

2 lbs Asparagus, washed, bottom 2-inch hard ends trimmed
20-22 Shrimp, about 1 pound, large shrimp, cleaned and tail-on
2 Cup Cherry Tomatoes, on the vine or regular
2.5 tbsp Olive Oil
2 Garlic, cloves, minced
1 tsp Paprika
2 tbsp Lemon, juice, more cut to wedges for serving
1 tsp Oregano
1 tsp Salt
1 tsp Black Pepper
Fresh Herbs, for garnish/serving. Optional.

Steps:

  • Preheat oven at 450 degrees Fahrenheit. You will need two half or 1 full size baking sheet for roasting. Set aside.
  • Trim the hard ends of asparagus. (about 1-2 inch). Place asparagus in sheet pan. Drizzle 1 tbsp of olive oil on the top. Toss asparagus to coat in oil. Season with 1/2 tsp salt and 1/2 tsp of the black pepper. Arrange half of asparagus on one side of first sheet pan, second half in second sheet pan. Set aside.
  • In a bowl, add shrimp and drizzle remaining 1.5 tbsp of the olive oil on the top. Now, add paprika, minced garlic, oregano, 1/2 tsp of salt and black pepper. Toss to coat shrimp in oil and seasonings. Transfer seasoned shrimp into prepared baking sheets. Equally divide in two sheets and place on the other side of the asparagus.
  • Add cherry tomatoes in now empty bowl that had shrimp. Coat tomatoes in any remaining oil and seasoning from the bowl. Scatter tomatoes on sheet pan or place between asparagus and shrimp in single layer.
  • Roast at 450 degrees Fahrenheit preheated oven for 8-9 minutes. Once roasted, take out of the oven. Let rest for 5 minutes.
  • After 5 minutes, transfer shrimp, asparagus and tomatoes to a serving platter. Add 1 tbsp of lemon juice in each empty sheet pan. Use spoon to mix it with drippings garlic-shrimp marinade to create quick lemon dressing. Pour dressing on top of the shrimp. Garnish with fresh herbs. Serve and enjoy!

1/2 cup chopped fresh mint
2 teaspoons chopped fresh oregano

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and place in a large bowl.
  • Heat the oil in a large deep skillet over medium-high heat. Add the tomatoes, 1/4 teaspoon of salt and 1/4 teaspoon of black pepper. Cook, stirring occasionally, until softened, about 2 minutes.   • In a medium bowl combine shrimp with salt, pepper, 1 tablespoon olive oil, lemon juice, zest, and garlic.

1 lb shrimp, medium to large, peeled and deveined
1 pinch black pepper, to taste
1 lemon
4 tablespoons olive oil or 4 tablespoons extra virgin olive oil
4 medium garlic cloves, sliced thinly
3/4 lb asparagus, tough ends snapped off and cut into 2 inch lengths (about 2 cups)
1/4 teaspoon crushed red pepper flakes
2/3 cup reduced-sodium chicken broth
1/2 teaspoon cornstarch

Steps:

  • Place shrimp on paper towels and dry very well.
  • Sprinkle shrimp with a bit of the pepper.
  • Using a vegetable peeler, peel off strips of the lemon peel and then cut the strips into very thin long pieces; be sure to peel only the yellow part of the peel, not the bitter white part.
  • Cut lemon in half and juice it into a small dish, removing seeds.
  • Heat a deep 12 inch skillet (preferably NOT non-stick) over medium high heat for 1 minute.
  • Add 2 Tbsp of the oil and heat until it's shimmering hot -- just a few seconds.
  • Add the shrimp in a single layer and do not disturb it; let cook for about 2 minutes until browned.
  • Turn shrimp over and brown the other side, about 1 1/2 minutes, then transfer to a plate. Shrimp should not be cooked through.
  • Reduce heat to medium-low and add garlic, stirring for 30 seconds.
  • Add asparagus, lemon zest strips, red pepper flakes and cook, stirring for 2-3 minutes.
  • Add chicken broth and cover, simmering for 1-2 minutes until asparagus is almost done.
  • Stir cornstarch with 1 Tbsp water and stir into the pan.
  • Add shrimp back to the pan and cook another 1-2 minutes until done.
  • Stir in 1 Tbsp lemon juice, then taste and add more juice and pepper if needed.

2 cups diced tomatoes
1 1/2 pounds large shrimp, shelled and deveined

1 pound fresh asparagus
1 tablespoon, plus 1 teaspoon olive oil

8 cups washed, ready-to-eat, Italian-style salad greens
1 tablespoon, plus 1 teaspoon no-sugar-added oil and vinegar dressing

Steps:

  • Heat the olive oil in a nonstick skillet over medium-high heat. Saute the garlic for a few seconds, then add the vermouth and tomatoes. Cook 5 minutes.
