These chicken thighs taste just like the garlic parmesan chicken wings from pizza hut, just meatier!

Steps:
- Preheat oven to 450 degrees Fahrenheit.
- Trim excess skin and fat from chicken thighs, reserving the single layer of skin that covers the thigh meat.
- Create a pocket between the skin and thigh meat using hands or a blunt utensil.
- Mix together basil, Parmesan, garlic, sea salt, pepper, and a few drops of the olive oil.
- Evenly divide the mixture between the chicken thighs, stuffing it into the pocket beneath the skin and evenly spreading over the thigh meat.
- Heat remaining olive oil in a cast iron skillet over medium high heat.
- Place chicken thighs skin side down in the hot skillet and cook for 5 minutes.
- Flip the thighs and continue cooking on the stovetop for an additional 8-10 minutes.
- Transfer the skillet to the 450 degrees Fahrenheit oven to finish the cook, baking for 15-20 minutes or until chicken reaches your preferred temperature.
- Let rest before serving.

- Preheat the oven to 425 degrees. Lightly grease a baking pan.
- In a microwave safe bowl, mix the butter, garlic, soy sauce, pepper, and rosemary. Cook 2 minutes on High in the microwave, or until butter is melted.
- Arrange chicken on the baking pan, and coat with the butter mixture, reserving some of the mixture for basting.
- Bake chicken 25 minutes then remove from oven and turn chicken over.
- Baste with remaining butter mixture. Return to oven and bake for an additional 20 minutes or until juices run clear.

- 1. Preheat oven to 350°F.
- 2. Line a baking sheet with foil.
- 3. Slice chicken breasts in half to make thinner pieces.
- 4. Mix almond meal/flour, grated parmesan, and Italian seasoning.
- 5. Whisk the egg in a separate bowl.
- 6. Dip the chicken in the egg, then into the "breading".
- 7. Place "breaded" chicken breasts on baking sheet.
- 8. Bake for 25-30 minutes or until internal temperature reaches 160°F.
- 9. Take out of the oven and top each piece with equal amount of sauce and mozzarella.
- 10. Bake until cheese melts.
- 11. Serve!
