1 med onion (finely chopped)
2 large eggs
3 garlic cloves (minced)
3 Tbsp ketchup
3 Tbsp fresh parsley (finely chopped)
3/4 cup Panko breadcrumbs
1/3 cup milk
1 ½ tsp salt (or to taste)
1 ½ tsp Italian seasoning
¼ tsp ground black pepper
½ tsp ground paprika
3/4 cup ketchup
1 ½ tsp white vinegar
2 ½ Tbsp brown sugar
1 tsp garlic powder
½ tsp onion powder
¼ tsp ground black pepper
¼ tsp salt

Steps:

  • Line a 9"x5" loaf pan with parchment paper and preheat oven to 375°F.
  • In a large bowl, add all of the ingredients for the meatloaf. Mix well to combine.
  • Add meat to the loaf pan, gently press meat down and shape evenly and bake meatloaf at 375˚F for 40 minutes.
  • In a small bowl, mix all of the ingredients together for the sauce. Spread the sauce over meatloaf then return to oven and bake additional 15-20 minutes or until the internal temperature is 160˚F. Rest meatloaf 10 minutes before slicing. Drizzle with baking juices from the pan.

2 tablespoons olive oil
2 cups onion (chopped (1 large))
1 & 1/2 cups celery (small-diced (2 stalks))
1 pound ground beef
1 pound ground veal
1 pound ground pork
1 tablespoon parsley (fresh, chopped)
1 tablespoon thyme (fresh, chopped)
1 tablespoon chives (chopped, or green onions)
3 large eggs
2/3 cup whole milk
2 tablespoons kosher salt
1 tablespoon black pepper (freshly ground)
2 & 1/2 cups panko bread crumbs
3/4 cup olive oil
10 cloves garlic (peeled)
2 cup chicken stock
3 tablespoons butter
1/2 teaspoon kosher salt
1/4 teaspoon black pepper (freshly ground)

Steps:

  • Preheat the oven to 350 degrees.
  • In your largest saute pan, heat the 2 tablespoons olive oil. When it is hot add the onion and celery. Cook for 5-8 minutes until the onion is soft but not brown. Remove from heat and set aside.
  • In a large bowl, add ground beef, veal, pork, parsley, thyme, chives, eggs, milk, salt and pepper.
  • Blend the panko bread crumbs in a food processor until they are finely ground, then add that to the bowl with the meat. Add the onion and celery mixture.
  • Combine the meat with your hands. This is the best way to mix meatloaf so that it doesn't get tough. Don't overdo it.
  • Cover a large sheet pan with parchment paper. Use your hands to pat the meat into a flat rectangle. Then push the sides in to make a cylinder about 15 inches by 6 inches (spreading it out first prevents air pockets).
  • Bake at 350 for 40 to 50 minutes, or use a meat thermometer to find out when it has reached 155-160 degrees F.
  • Remove from the oven and let rest for a few minutes before slicing. Serve with garlic sauce.
  • While the meatloaf is cooking, combine the oil and garlic in a small saucepan . Bring the oil to a boil, then lower the heat to low. Simmer for 10-15 minutes, until the garlic is a light golden brown. Don't burn it! Watch carefully. Strain out the oil and save it for another use (I used it for oven roasted potatoes).
  • In the same saucepan (with the garlic still in it), add the chicken stock and butter. Bring to a boil. Lower the heat but continue to boil for 35-40 minutes, until it is slightly thicker. Use a fork to smash the garlic in the pan. Add the salt and pepper.
  • Ladle the warm sauce over each serving of hot meatloaf.

2 pounds 80/20 ground beef
1 small yellow onion, finely minced
2/3 cup good-quality ketchup
2 tablespoons brown sugar
2 teaspoons Worcestershire sauce

1/4 teaspoon garlic powder, onion powder, and black pepper

Steps:

  • Preheat the oven to 350° and have ready a rimmed sheet pan lined with foil, preferably nonstick foil.
  • In a large bowl, use a fork to mix together breadcrumbs, salt, pepper, garlic powder, and onion powder. Add the milk, egg, and Worcestershire and mix once more.
  • Add the ground beef and minced onion and mix with your hands until all of the ingredients are evenly incorporated. Transfer the mixture to the prepared pan and shape into a narrow loaf (the meatloaf will spread as it bakes).
  • To make the topping, combine ketchup, sugar, Worcestershire sauce, salt, garlic powder, onion powder, and black pepper in a small bowl and whisk to combine.
  • Pour half of the sauce mixture over the meatloaf and bake for 35 minutes. Remove from the oven, carefully pour over the remaining sauce, and bake an additional 30-35 minutes.

1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.

2 cups chopped Spanish onion (1 large)
1 1/2 cups small-diced celery (2 stalks)
1 pound ground beef
1 pound ground veal
1 pound ground pork
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh chives
3 extra-large eggs, lightly beaten
2/3 cup whole milk
2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
2 1/2 cups panko (Japanese bread flakes)
Garlic Sauce, recipe follows
3/4 cup good olive oil
10 garlic cloves, peeled
2 cups chicken stock, preferably homemade
3 tablespoons unsalted butter, at room temperature
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the olive oil in a large (12-inch) saute pan over medium heat. Add the onion and celery and cook for 5 to 7 minutes, stirring occasionally, until the onion is translucent but not browned. Set aside to cool slightly.
  • Place the beef, veal, pork, parsley, thyme, chives, eggs, milk, salt and pepper in a large mixing bowl. Put the panko in a food processor fitted with the steel blade and process until the panko is finely ground.
  • Add the onion mixture and the panko to the meat mixture. With clean hands, gently toss the mixture together, making sure it's combined but not compacted.
  • Place a piece of parchment paper on a sheet pan. Pat the meat into a flat rectangle and then press the sides in until it forms a cylinder down the middle of the pan (this will ensure no air pockets). Bake for 40 to 50 minutes, until a thermometer inserted in the middle reads 155 degrees F to 160 degrees F. Remove from the oven and allow to rest for 10 minutes. Slice and serve hot with the Garlic Sauce.
  • Combine the oil and garlic in a small saucepan and bring to a boil. Lower the heat and simmer for 10 to 15 minutes, until lightly browned. Be careful not to burn the garlic or it will be bitter. Remove the garlic from the oil and set aside. (I save the oil for vinaigrettes.)
  • Combine the chicken stock, butter and cooked garlic in a medium saucepan and bring to a boil. Lower the heat and cook at a full boil for 35 to 40 minutes, until slightly thickened. Mash the garlic with a fork, whisk in 1/2 teaspoon salt and 1/4 teaspoon pepper, and taste for seasonings. Spoon the warm sauce over the meatloaf.

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.

one medium onion, quartered
1 1/2 cups baby carrots
4 garlic cloves
1 tablespoon horseradish
1 (6 ounce) package garlic or 1 (6 ounce) package italian flavored croutons
1 teaspoon chili powder
1/2 teaspoon salt, black & cayenne pepper
1 1/2 cups ketchup
2 tablespoons honey
2 teaspoons cumin
1 dash of worcestershire and louisiana hot sauce

Steps:

  • Preheat your oven to 350.
  • In your food processor, pulse the onion, carrots, garlic, and horseradish until fine. Add to ground beef.

  • Gather the ingredients.
  • Preheat the oven to 375 F. In a large skillet, melt the butter over medium heat.
  • Add the onion and garlic and sauté for 4 to 5 minutes, or until the onions are turning translucent.
  • Add the carrots and sauté for 4 minutes, or until the carrots thaw.
  • Add the crumbled meatloaf and sauté for 4 to 5 minutes longer until the mixture is hot and combined.
  • Add the flour and sauté for 3 more minutes.
  • Add the broth, ketchup, mustard, Worcestershire sauce, marjoram, and salt and pepper to taste. Stir. Simmer the mixture for 10 minutes, stirring occasionally.
  • Meanwhile, heat the refrigerated potatoes as directed on the package, or use leftover mashed potatoes, if available.
  • Add the peas and sour cream to the beef mixture in the skillet and stir to combine.
  • Pour into a 2 1/2-quart casserole dish and spread the mixture level.
  • Top with the mashed potatoes and spread to cover, then run a fork over the potatoes to make small peaks that will brown in the oven. Sprinkle with the Parmesan cheese.
  • Bake the shepherd's pie for 25 to 35 minutes or until the filling is bubbly and the potatoes are golden brown on top. Let cool for 10 minutes before serving.

This is a recipe I came up with for my husband, who loves garlic! The funny thing is my son, loves it too. Hope you enjoy it!

2 lbs ground beef
2 teaspoons minced garlic
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon dried onion flakes
1 -2 egg
1/2 package Ritz cracker, crakers crushed
2 tablespoons ketchup

Steps:

  • Preheat oven to 375.
  • mix all ingredients together.
  • If the mix is too dry add the extra egg.
  • Place in a 9X13 baking dish.
  • Bake until internal temp is 165 about 45 min to 1 hour.
  • Top with a ketchup glaze if you wish.
