Ingredients

2 lbs zucchini (sliced or diced into cubes)
2 tablespoons fresh minced garlic
2 tablespoons olive oil
2 tablespoons butter
salt and pepper
1/2 teaspoon italian seasoning (or to taste)
parmesan cheese (optional)

Steps:

In a large skillet, saute the zucchini, garlic and Italian seasoning in oil and butter, until zucchini is crisp-tender, about 5 minutes.
Season with salt and pepper, then sprinkle with Parmesan cheese.
Serve immediately.

1 lb zucchini, sliced
salt
2 tablespoons vegetable broth
5 garlic cloves, sliced
1 tablespoon fresh lime juice
1/4 teaspoon black pepper
1 1/2 teaspoons fresh oregano

Steps:

Put zucchini in a colander and sprinkle with salt. Toss.
Let stand 30 minutes. Rinse and pat dry with papertowels.
Heat broth and saute garlic.
Scoop out and set aside. Add zucchini and saute.
Stir in garlic and lime. Toss with black pepper and oregano. Serve warm.
