Steps:
- Place potatoes in 4-quart saucepan; add enough water to cover potatoes. Add 1 teaspoon salt. Heat to boiling; reduce heat. Simmer uncovered 20 to 30 minutes or until tender; drain. Mash with potato masher or electric mixer on low speed.
- While potatoes are cooking, melt butter in 1-quart saucepan over medium-low heat. Cook garlic in butter 3 to 4 minutes, stirring frequently and being careful not to brown butter, until garlic is very soft. Stir in milk and herbs. Cook until thoroughly heated.
- Add milk mixture to mashed potatoes; beat until smooth and creamy. Season with salt and pepper to taste.

Let me say these ROCK!! I get raves every time I serve them!!!! I don't always share my recipes, so enjoy! If you seem to have an issue with them either add a little of the half and half at a time or add 3 Tbs. of instant potatoes. As I told the lady that had a issue with gluey texture it can also have been either over or under cooking the potatoes. Also Yukons are not good for me, I use either Idaho or Redskins.

- Preheat oven to 400 degrees F (200 degrees C). Lightly oil a 2-quart baking dish.
- Cut off the top of the garlic head to expose the tops of the cloves. Place garlic on a sheet of foil and drizzle with olive oil. Seal the foil around the garlic. Roast until soft, about 25 minutes. Cool. Reduce oven temperature to 375 degrees F (190 degrees C).
- Place potatoes in large pot and cover with water. Set over high heat and bring to a boil. Simmer until the potatoes are fork tender, about 15 minutes. Drain; return to pot.
