8 chicken thighs (with skin and bones (about 3 lbs))
½ teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
2 tablespoon olive oil
8 cloves garlic (minced)
2 teaspoon thyme (fresh, chopped)
2 teaspoon oregano (fresh, chopped)
½ cup sherry (or a dry red wine)
½ cup chicken broth (low sodium)

Steps:

  • Season the chicken on both sides with salt and pepper.
  • Add the olive oil to a large saucepan or skillet and cook the chicken on both sides, for about 5 minutes per side or until golden brown.
  • Remove the chicken from the saucepan and set aside.
  • Add the garlic, thyme and oregano to the saucepan and cook until garlic gets aromatic. Add the sherry and chicken broth to the skillet to deglaze the pan, scraping up all the brown bits. Bring to a boil.
  • Add chicken back to skillet and saucepan, reduce the heat to low and bring to a simmer. Cover and cook for another 20 minutes, until chicken is tender.
  • Garnish with more fresh herbs if desired and serve warm.

4 boneless skinless chicken breasts (about 1 pound)
1/4 teaspoon salt
1/4 teaspoon pepper
40 cloves garlic (cut any large cloves in half)
1 tablespoon oil
1/2 cup dry white wine or 1/2 cup chicken broth
1/2 cup chicken broth
1 tablespoon fresh lemon juice
1 teaspoon dried basil
1/2 teaspoon dried oregano
4 teaspoons flour
2 tablespoons dry white wine or 2 tablespoons chicken broth

Steps:

  • Season chicken on both sides with salt and pepper to taste.
  • Brown chicken and garlic in hot oil in a large saute pan.
  • Add wine, broth, lemon juice, and spices.
  • Bring to a boil, then reduce heat, cover and simmer 6-8 minutes or until chicken is cooked through.
  • Remove chicken and garlic from pan and keep warm.
  • Mix together remaining wine with the flour and mix into the pan juices, stirring briskly.
  • Bring to a boil and cook until thickened.
  • Serve sauce with chicken and garlic.
  • Mashed potatoes or rice may be served, if desired.

Steps:

  • Preheat an outdoor grill for high heat and lightly oil grate.
  • In a small bowl, whisk together garlic, dried tarragon, salt, ground black pepper and olive oil.
  • Place each chicken breast half on a piece of foil large enough to cover the chicken. Brush chicken with the garlic mixture.

1 roasting chicken (4 to 5 pounds)
2 teaspoons each minced fresh parsley, rosemary, sage and thyme

1 sprig each fresh parsley, rosemary, sage and thyme

Steps:

  • With fingers, carefully loosen skin around the chicken breast, leg and thigh. Combine minced parsley, rosemary, sage, thyme, salt and pepper; rub half under skin. Place sliced garlic cloves under skin. Squeeze half of the lemon into the cavity and place the squeezed half in the cavity. , Remove papery outer skin from whole garlic bulb (do not peel or separate cloves). Cut top off garlic bulb. Place garlic bulb and herb sprigs in the cavity. Skewer chicken openings; tie drumsticks together with kitchen string., Place chicken breast side up on a rack in a roasting pan. I got this recipe from one of my mom's church cookbooks. I always seem to find the best tasting recipe in church cookbooks! This recipe uses boneless chicken with a blend of spices to give it a wonderful taste. I usually make this with potatoes (prepared as fancy or simple as you like) and a vegetable. I also like to combine spices ahead of time. I've tried this by eliminating 1 or 2 spices when I was out and it still turns out wonderful.

8 boneless chicken breasts
1/2 cup butter or 1/2 cup margarine
2 tablespoons parmesan cheese
1 tablespoon parsley, dried

8 bone-in chicken thighs
2 tbsp canola oil
4 tbsp butter
3 garlic cloves, crushed and peeled
3 tbsp chopped fresh thyme
1 tbsp chopped fresh chives
1 1/2 cups chicken stock

Steps:

  • Preheat oven to 425 degrees.
  • Pat the chicken thighs dry with a paper towel and season liberally with salt and pepper.
  • Heat the oil in a large skillet over medium high heat.
  • Place the chicken thighs in the pan skin side down working in batches, if necessary. (don't crowd the pan or the chicken skin will not get crispy, it will just steam in the pan.)
  • Cook the chicken thighs skin side down for approximately 4-5 minutes or until the skin is golden brown and crispy. The chicken will release easily from the pan when ready to flip.
  • Flip the chicken over and cook for 4-5 minutes. Transfer the chicken to a plate or platter and add the butter to the pan. Cook the butter until melted.
  • Stir in the garlic and herbs. Cook for 1 minute.
  • Add the stock to the pan. Using a wooden spoon, scrape the brown bits off the bottom of the pan and stir to combine.
  • Return the chicken to the pan, skin side up, and transfer to the oven.
  • Bake the chicken thighs in the oven for 25 minutes or until an instant read thermometer reads 165 degrees and the skin is golden brown.
  • Remove the chicken from the oven and rest for 5-10 minutes.
  • Serve the chicken with the pan sauce immediately and garnish with fresh snipped herbs, if desired.

A handful each fresh chives, flat leaf parsley, dill or mint
1 cup (8 ounces) soft white cheese such as fromage blanc, farmer's cheese, fresh ricotta (drained) or cream cheese
2 large cloves garlic
Juice of 1/2 lemon plus 2 teaspoons zest
1 organic chicken (about 4 pounds, minimum 3 1/2 pounds)
EVOO, for drizzling, or non-aerosol olive oil spray
Kosher salt and coarse black pepper

Steps:

  • For garlic herb cheese: Preheat oven to 375 degrees F.
  • Finely chop herbs. Place soft cheese in small mixing bowl. Combine the soft cheese with herbs, finely grated or pasted garlic and lemon juice and zest (or unwrap store-bought Boursin cheese) and place in a small bowl.
  • For the spatchcock chicken: Work with raw poultry on a clean rubber board.
  • Have a large foil-lined rimmed baking sheet with a wire rack set inside of it near the cutting board you're working on.
  • Clip tips of wings with poultry shears. Place chicken breast-side down and remove the spine of the bird by cutting along either side of it in slow even strokes with shears, then turn the bird over and evenly press down on the breastbone to flatten the bird out.
  • Loosen the skin under the breasts and over the thigh and leg meat and evenly distribute the cheese. Drizzle the skin with EVOO or spray lightly with non-aerosol cooking spray, then season with kosher salt and coarse black pepper.
  • Roast chicken on middle rack for 15 minutes, then reduce heat to 350 degrees F and roast 40 to 45 minutes more to an internal temperature of 160 to 165 degrees F.

4 pound (2kg) whole chicken, at room temperature giblets and neck removed from cavity*
1/4 cup unsalted butter, (melted)
3 tablespoons olive oil
1/4 cup white wine, ((OPTIONAL) -- use a dry wine like a Sauv blanc or Chardonnay)
1 lemon, (halved)
Salt and freshly ground pepper, (to taste)
2 tablespoons fresh chopped parsley
4 garlic cloves, (minced)
1 head of garlic roughly peeled and cut in half horizontally (through the middle crosswise)
3 fresh whole rosemary sprigs

Steps:

  • Preheat oven to 430°F | 220°C (400°F or 200°C fan forced). Line a baking tray with foil, or lightly grease a roasting pan.
  • Discard neck from inside the cavity and remove any excess fat and leftover feathers. Pat dry with paper towels.
  • Pour the olive oil, melted butter, wine (if using) and the juice of half a lemon over the chicken, under the skin and inside the cavity. Season chicken liberally on the outside and inside the cavity with salt and pepper. Sprinkle over the parsley.
  • Rub the minced garlic over the chicken, mixing all ingredients together over the chicken and under the skin.
  • Stuff the garlic head into the chicken cavity along with the rosemary sprigs and the squeezed lemon halve. Tie legs together with kitchen string.
  • Place breast-side up into baking tray or roasting pan. Roast for 1 hour and 15-20 minutes, basting half way through cooking time, until juices run clear when chicken thigh is pierced with a skewer.
  • Baste again, then broil for a further 2-3 minutes, until golden.
  • Remove from the oven, cover with foil and allow to stand for 10 minutes before serving. Serve, drizzled with pan juices and remaining lemon half cut into wedges or slices.

2 tsp Dijon mustard
1 tbsp balsamic vinegar
1 tsp chopped fresh thyme
4-8 rosemary sprigs, lightly crushed
a few pinches of light muscovado sugar
2 unwaxed lemons
8-12 chicken drumsticks and/or thighs, on the bone with skin on
4 heads green garlic
1kg salad potatoes such as Charlotte or Nicola
2 tbsp chopped parsley
green vegetables or salad , to serve

Steps:

  • For the marinade, whisk the first five ingredients together, season with black pepper and a large pinch or two of sugar. Finely grate the zest of half a lemon and set aside, then squeeze the lemon juice from that half into the marinade.
  • Put the chicken in a nonmetallic dish and spoon the marinade over. Halve the other lemon and add the three halves to the chicken, and marinate until ready to cook. (This can be done up to two hours ahead or overnight if that suits you better.)
  • Just over an hour before you want to eat, preheat the oven to 200C/gas 6/fan 180C. Cut a thin slice off the top of the garlic (this makes it easier to squeeze it out later) and halve the potatoes or cut them into largish chunks, depending on their size. Drain most of the marinade into a roasting tin and add the potatoes and garlic, tossing to make sure that they are coated in the oil. Roast, uncovered, for about 20 minutes.
  • Add the chicken, rosemary and lemon to the tin, scraping in any bits of marinade. Toss to mix, arrange the chicken skin-side up and season well with salt, then roast for another 40-45 minutes or until the potatoes are fully cooked, and the chicken is golden and crisp and the garlic is squashy. Mix the reserved lemon zest and parsley, scatter over the chicken and serve immediately with seasonal green vegetables or salad. The best way to eat the garlic is to squash it out of its skin with a knife and spread it onto the roasted potatoes and chicken.

Loosen the skin on the top of the chicken by slowly and carefully pressing your fingers under the skin of the breast while pressing down on the breast meat.
  • Preheat the oven to 425°F. Line a baking sheet with parchment paper and place a baking dish or roasting dish large enough for the chicken on top of the baking sheet (this is for any splattering or spills). Spray baking dish with nonstick cooking spray. Place onion slices on bottom of the baking dish for the chicken to sit on and place chicken on top.
  • Season the chicken liberally with salt and pepper.
  • In a medium bowl, combine the juice from the lemons, olive oil, minced garlic, parsley, chopped rosemary, oregano and softened butter. Rub butter mixture over the entire exterior of the chicken making sure to coat the top of the skin as well as rub under the skin that you loosened. Finally, rub the remaining butter mixture inside the cavity.
  • Stuff the cavity with garlic, rosemary sprigs and quartered lemons. Tie the legs together with kitchen string or twine, tuck wing tips under the body of the chicken and place the chicken breast side up in the prepared baking dish.
  • Place the baking dish in the oven. Roast for 1 hour 15 minutes. Baste at 30 minutes and then again every 20 minutes or so. Continue roasting until juices run clear when a knife or skewer is inserted between the leg and the body. Use a meat thermometer to make sure chicken has reached an internal temperature of 165°F. If at anytime, the chicken seems to be getting too dark, tent with foil and continue roasting.
  • Baste again at the end, then broil for about 2 to 3 minutes or until golden brown and extra crispy. (Optional but encouraged.)
  • Remove from the oven, cover with foil and let stand for about 15 minutes before carving. Drizzle with pan juice when serving.
