4 large eggs
1 tablespoon sour cream
¼ cup milk
1 clove garlic, minced
¼ cup chopped fresh cilantro
salt and pepper to taste
1 tablespoon butter
1 ½ teaspoons freshly grated Parmesan cheese

Steps:

  • Whisk together eggs, sour cream, milk, and garlic until smooth; add cilantro and season to taste with salt and pepper.
  • Melt butter in a nonstick skillet over medium heat. Pour in egg mixture and cook to desired degree of doneness, stirring constantly. Sprinkle with Parmesan cheese to serve.

4 large eggs
1 teaspoon butter
3 -4 garlic scapes, sliced
1/4 teaspoon kosher salt (or to taste)
1/4 teaspoon black pepper (or to tate)

Steps:

  • Beat eggs with a whisk or immersion blender until pale yellow.
  • Melt butter in medium skillet until foamy. Add beaten eggs to skillet.
  • Stir slowly with a rubber or silicone spatula. As soon as eggs begin to form clumps, turn the heat to low and start to fold the curds over on themselves.
  • Stir the sliced garlic ramps into eggs halfway through cooking.
  • Continue to push eggs around the skillet until they look fluffy and still runny on top.
  • Immediately divide between 2 plates and sprinkle with salt and pepper.
  • Let rest for a minute or two before serving.

This is a not-so-vinegary, sweetish pickled egg, with an interesting curry taste (and color) Add dried hot peppers as you wish and plan ahead about a week for these. Prep time includes week of "pickling". Cook time includes boiling the eggs, then the pickling liquid.

12 eggs, boiled and peeled
1 bermuda onion, sliced thinly
1 1/4 cups distilled white vinegar
1 cup water
1/4 cup white sugar
12 cloves garlic, peeled and sliced
6 -8 teaspoons curry powder
1 teaspoon crushed red pepper flakes

Steps:

  • Place eggs in a clean glass container with the Bermuda onion.
  • In a medium saucepan, combine vinegar, water, sugar, garlic, curry powder and crushed peppers.
  • Bring to a boil, then let sit for about 15 minutes.
  • Pour over the eggs and onion slices in the glass container, cover tightly and allow to sit in refrigerator for seven days.
  • Stir or "slosh" around periodically so flavor and color are distributed evenly (though they may still look a little splotchy).

3 eggs
3 teaspoons fish sauce
sesame oil
1 tablespoon sesame oil
1 tablespoon vegetable oil
6 garlic cloves, minced
2 cups cooked rice, day old is best
3 teaspoons oyster sauce

Steps:

  • Beat eggs and fish sauce together, heat a wok and drizzle with sesame oil. Add the eggs and turn over the cooked egg-the raw stuff will flood to the outside. Keep cooking until you basically have an omellete shape of just cooked egg. Remove from the wok and set aside.
  • Heat wok to hot, and add the tablespoon of sesame and the tablespoon of vegetable oil.Add the garlic and cook sir frying until opaque-don't burn it. Add the rice and toss over a high heat for a few minutes, then add the egg omlette breaking it up gently as you toss it through the rice. When the whole lot is hot, add the oyster sauce, toss through and serve.

Plan ahead these eggs need to chill for at least 7 days before using, that is if you can wait that long, these are sooo good! Use beet juice or water, if you like extreme garlic flavor then add in another few cloves, the cayenne is optional I like to add it in for some heat, if you are using add it into the beet juice mixture.

12 large hard-boiled eggs (peeled and cooled)
1 medium onion, sliced
1 cup distilled white vinegar
1 cup beet juice (or use water)
1/2 teaspoon salt
1/4 cup white sugar
8 large fresh garlic cloves
1 pinch cayenne pepper (optional)

Steps:

  • Place the peeled eggs and onion slices in a 1-quart glass jar.
  • In a saucepan bring the beet juice or water, vinegar, salt, sugar and garlic cloves; bring to a boil stirring for a couple of minutes until the sugar and salt is dissolved; remove from heat and let cool (about 30 minutes).
  • Pour the vinegar mixture over the eggs and cover tightly.
  • Refrigerate for 7 days before using.

Best Lebanese Garlic Sauce (By Kay) image

Last fall when leaving the U.S. to return home, we stopped-over in Minneapolis for a family mini-reunion w/my Aunt, Uncle, their 7 children + various grandchildren I had not seen in 18+ yrs or even met b4. They are so lucky to all still live in the same city, but talk about the real *Luck of the Irish* - Mike (my cousin) brought his Lebanese heritage wife *Kay* into our Irish family & substantially raised the level of the cooking bar (already set pretty high). Kay is a great cook & made the the most wonderful Lebanese meal for us that included hummus, stuffed grape leaves, marinated + grilled lamb/chicken skewers & the most incredible garlic sauce I have ever tasted (just to mention a few). Thank goodness the garlic sauce was not a recipe shrouded in generations of secrecy because I had to have it to share w/you. *Enjoy* ! (See Notes Below)

3 cups corn oil (Per Kay, Mazola is a must for this as it rarely works well with other brands, but see my note below)
1 cup lemon juice
1 head garlic (lrg size)
2 egg whites
1 teaspoon salt

Steps:

  • Place ingredients in a blender, blend till smooth & chill for several hrs b4 use to allow the full flavor to develop. Done!
  • *Note From Kay* ~ Some do not add egg whites & they pour the oil in slowly so it thickens. I have no patience for that. When I have tried it that way, I could never get my garlic sauce thick. Adding the egg whites is technically cheating, but it works every time. (Kay also said more garlic can be used to suit taste pref.).
  • *Note From Me* ~ Altho unable to find Mazola corn oil here, I can happily report that I have now made a half recipe of this sauce using my immersion blender in a wide-mouth glass jar w/a lid so it could be capped, chilled & stored. I used the *Euro Shopper* brand corn oil, Kay's recipe (including the egg whites) + the thin stream addition of the oil method w/excellent results ~ a richly garlic-flavored & thick sauce. I did add some seasoning salt to better match the Icelandic garlic sauce that is sold commercially & very popular to serve w/lamb (& other meats).
  • *Note Re Serving Suggestions* ~ Serve chilled or at rm temp: 1) With grilled, marinated or roasted meats (including chicken, kebabs, etc.), 2) With oven-roasted or baked potatoes or 3) As a dip for garlic-lovers, but I would prob opt to add texture for this option w/some bell pepper, red onion or others you might choose. :-).
