Garlic Olive Oil Pasta With Tomatoes and Chicken image

This is an easy pasta recipe with tons of flavor. It's an adaptation of simple olive oil, garlic, and pasta but elevated to another level.

3/4 lb chicken breast, cubed
1 lb spaghetti
2 1/2 teaspoons garlic, chopped
3 garlic cloves, halved
1/4 cup parsley, chopped
1/4 teaspoon crushed red pepper flakes
4 roma tomatoes, diced
1/4 cup olive oil
1/4 cup butter, melted
1 (14 ounce) can chicken broth
salt

Steps:

  • In a medium size skillet add 1 can chicken broth, cubed raw chicken breast, and halved garlic. Cook on med low covered for 15 minutes or until chicken is done. Remove chicken only and place on plate to cool.
  • Meanwhile in a pot of boiling water, add 2 handfuls of salt and cook spaghetti. Drain. You can also half the amount of pasta and still use the same amount of the other ingredients and it turns out great if you are serving 2 people.
  • In a large skillet over medium low heat saute garlic, parsley, red pepper flakes and tomatoes in olive oil about 10 to 15 minutes or until garlic is golden.
  • Melt butter in a bowl in microwave, about 30 seconds.
  • Toss pasta with chicken, butter, and garlic oil mixture.

I came up with this by adding a couple of different recipes and adding touches of my own ideas. The whole family loved it! Prep time and cooking time is an estimate. So are the servings. This was kind of a throw together meal that worked!

2 grilled chicken breasts, boneless, skinless, chopped (optional)
8 ounces grape tomatoes
1 -2 tablespoon olive oil
1 teaspoon dried basil or 1/2 cup chopped fresh basil
salt and pepper
3 cups mini penne pasta, uncooked
water or chicken broth, to cook pasta in
3/4 cup white wine
1/4 cup favorite Italian dressing, not creamy (I used Northern Italian)
10 -15 black olives or 1/4 cup sliced black olives

Steps:

  • Marinate chicken in favorite marinade and grill until done. You can leave out the chicken for a great vegetarian meal.
  • Heat oven to 400 degrees. Mix tomatoes with oil, basil and salt and pepper to taste. Roast for 12 minutes in shallow baking pan.
  • Meanwhile, cook pasta according to directions in water or broth add 1/4 cup white wine.
  • Smash cooked tomatoes with back of wooden spoon.
  • Chop chicken, if using.
  • Drain pasta.
  • Mix pasta, tomatoes, chicken and olives together. Add white wine and dressing.
  • Serve warm.

Delicious roasted tomatoes and garlic chicken pasta come together to make an unforgettable dish.

Olive oil
Juice of one lemon
1 C cherry tomatoes, roasted (or use jarred sun dried tomatoes)
1 tsp dried basil
1 chicken breast (sliced)
1 zucchini (sliced)
1/4 C pine nuts
2 tsp garlic (minced)
1/4 C fresh basil (sliced (save some to garnish top of pasta))
8 oz. penne pasta
salt and pepper
Parmesan cheese (grated for garnish)

Steps:

  • Slice tomatoes in half and place in baking dish cut side up. Drizzle with olive oil, sprinkle with salt and pepper and dried basil
  • Place in 225 degree oven for about 3 hours or until shriveled but should still have some moisture.
  • Place chicken in bowl or plastic bag and cover with olive oil, sprinkle with kosher salt and squeeze the juice of one lemon over the top.
  • Refrigerate for at least one hour.
  • Grill chicken and cut up.
  • Slice zucchini in half. Drizzle with olive oil and sprinkle with salt.
  • Grill until softened and it has nice grill marks. Cut into bite size pieces
  • Boil a large pot of water, add pasta and cooked to desired doneness
  • In a large frying pan add several tablespoons of olive oil and pine nuts. Stir until pine nuts begin to brown.
  • Add garlic and stir. Add in roasted tomatoes, chicken, zucchini and fresh basil. Stir in cooked pasta. Salt and pepper to taste.
  • Add in more olive oil if it seems dry. Sprinkle with Parmesan Cheese.

2 boneless skinless chicken breasts, chopped
20 cherry tomatoes, halved
1 red bell pepper, sliced
1/2 red onion, sliced
2 1/2 tablespoons butter
4 garlic cloves, minced
2 tablespoons flour
1 cup sour cream
1 cup milk
1 tablespoon lemon juice
1 (500 g) box whole wheat bow tie pasta
feta cheese, to taste

Steps:

  • Cook pasta according to box directions.
  • Sauté chicken in oiled saucepan until cooked through.
  • In a separate pan, cook onion until lightly browned, then add pepper and continue cooking for about 2 minutes.
  • Add chicken and tomatoes, cover and remove from heat.
  • For sauce: Simmer garlic in butter until softened, about 2-3 minutes.
  • Lower heat, stir in flour; cook 1 minute, stirring constantly.
  • Gradually add milk, then stir in sour cream and lemon juice, and cook until heated through.
  • Mix vegetables, chicken, and sauce with pasta, and top with feta cheese. Voila!

1 1/2 lbs cherry tomatoes
10 garlic cloves
1/2 cup french breadcrumbs
1/2 cup freshly grated parmesan cheese
1/4 cup olive oil
1 lb fusilli or 1 lb angel hair pasta
1/2 cup chopped fresh basil
balsamic vinegar

Steps:

  • Preheat oven to 400. Halve tomatoes and garlic cloves and toss with olive oil and balsamic (to taste - probably just a few dashes) in a baking dish.
  • Combine bread crumbs, parmesan, and salt and pepper to taste. Spoon mixture evenly over tomatoes.
  • Roast mixture for 30-40 minutes or until mixture is bubbly, browned, or slightly thickened.
  • Meanwhile, in a large pot of salted water, cook pasta according to package directions. Drain well.
  • Add pasta to the tomato mixture and toss with fresh chopped basil.

Prep time approx. 40 min (I found this in the May 2003 Canadian Living Magazine) This is a quick and easy recipe. Garlic becomes mellow when roasted,(so don't let 12 cloves scare you away) and roasting the tomatoes brings out the rich flavor. The two compliment each other. Using cherry tomatoes saves time so if you use other kinds of tomatoes it may take longer. I have two kids age 11 and 14 who love this recipe and always have more than one helping.

4 cups cherry tomatoes, cut in half
12 garlic cloves, cut in half (don't be shy)
1/4 cup extra virgin olive oil
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon hot pepper flakes
1/4 teaspoon ground pepper
1 lb bucatini pasta (I used bow tie) or 1 lb your favourite pasta (I used bow tie)
1/4 cup chopped fresh parsley
1/2 cup freshly shaved parmesan cheese

Steps:

  • In a bowl toss sliced tomatoes, sliced garlic, oil, basil, salt, hot pepper flakes and ground pepper.
  • Place in a 9 X 13 metal cake pan and roast at 400°F for approximately 30 minute.
  • The tomatoes should be shriveled and the garlic tender.
  • Cook pasta in a pot of salted boiling water while tomatoes and garlic are cooking.
  • Drain and return pasta to pot.
  • Add garlic tomato mixture and parsley, tossing to coat.
  • Serve with sprinkle freshly grated Parmesan cheese.
  • If you don't have any fresh Parmesan try other sharp hard cheeses such as Romano or Asiago.
