2 whole garlic bulb
1 tablespoon olive oil, divided
4-1/2 cups fresh baby spinach
1/2 teaspoon salt, divided
1/4 teaspoon coarsely ground pepper, divided
2 boneless skinless chicken breast halves (6 ounces each)
2 tablespoons butter, cubed
2 tablespoons all-purpose flour
1-1/2 cups 2% milk
1-1/4 cups grated Parmesan cheese, divided
Dash ground nutmeg
Hot cooked pasta
Chopped tomato and minced fresh parsley, optional

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut tops off of garlic bulbs; brush bulbs with half the oil. Wrap each bulb in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes., Meanwhile, place spinach in a greased 11x7-in. baking dish; sprinkle with half the salt and pepper. In a large skillet, brown chicken in remaining oil on both sides; place over spinach., In a large saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in 1 cup cheese, nutmeg and remaining salt. Transfer to a blender; squeeze softened garlic into blender. Cover and process until smooth. Pour mixture over chicken., Cover and bake at 425° for 30-35 minutes or until a thermometer reads 170° and sauce is bubbly. Uncover; sprinkle with remaining cheese. Bake 5 minutes longer. Serve with pasta. Sprinkle with tomato and parsley if desired.

2 tablespoons butter
1 garlic clove, minced
1 medium onion, sliced
salt and pepper
1 cup white wine or 1 cup water
1/2 cup sour cream

Steps:

  • In a medium frying pan, lightly brown garlic in butter over medium heat, about 2 minutes.
  • Add chicken and cook, turning, about 10 minutes or until brown on all sides.
  • Place onion slices on bottom of pan under chicken.
  • Sprinkle chicken with salt and pepper; pour wine or water over chicken.
  • Cover, reduce heat to low and simmer about 20 minutes or until chicken is done.
  • Remove chicken to serving plates and keep warm.
  • Add sour cream to pan drippings and cook, stirring, about 2 minutes until warm but not boiling.
  • Spoon over chicken.

There are some great garlic chicken recipes on here, but most of them are written for a cook who has a lot of time and is cooking for more than just two people. This is what I came up with as something smaller and simpler to serve with a sweeter side. I served it with acorn squash cooked with brown sugar and peas. The meal ended up having a flavor reminiscent of North African food.

2 boneless skinless chicken breasts
2 tablespoons olive oil, divided
1 tablespoon butter (light butter is ok)
5 garlic cloves
1/2 teaspoon cumin
1/4 teaspoon ground ginger
1/2 tablespoon lemon juice
2 tablespoons dark brown sugar
water (may substitute dry white wine or sherry)

Steps:

  • Use one tablespoon of the olive oil to saute the chicken breast over medium heat until brown, set aside.
  • Add second tablespoon of olive oil, butter, garlic and spices and sauté until fragrant.
  • Add lemon juice and stir until mixed.
  • Add reserved chicken, brown sugar and enough water or wine to create a sauce with the spices and sugar.
  • Simmer about 10 minutes, turning once, until the flavors begin to penetrate the meat. Add more water as needed.

¼ cup olive oil
2 cloves garlic, crushed
¼ cup Italian-seasoned bread crumbs
¼ cup grated Parmesan cheese
4 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat olive oil and garlic in a small saucepan over low heat until warmed, 1 to 2 minutes. Transfer garlic and oil to a shallow bowl.
  • Combine bread crumbs and Parmesan cheese in a separate shallow bowl.
  • Dip chicken breasts in the olive oil-garlic mixture using tongs; transfer to bread crumb mixture and turn to evenly coat. Transfer coated chicken to a shallow baking dish.
  • Bake in the preheated oven until no longer pink and juices run clear, 30 to 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

The whole cloves of garlic turn mild and buttery when they're simmered with chicken in a simple white wine-mustard sauce in this garlic chicken recipe for two. Serve with mashed potatoes or rice, and green beans or broccoli.

1 head garlic (cloves separated)
4 chicken thighs (about 1 1/4-1 1/2 pounds, skin removed if desired)
1/4 teaspoon salt (divided)
1/8 teaspoon fresh ground pepper
1 1/2 tablespoons olive oil
3 tablespoons white wine
1/2 cup reduced-sodium chicken broth
1 teaspoon Dijon mustard
1 teaspoon all-purpose flour
3 tablespoons chopped fresh chives (or scallion greens)

Steps:

  • Lightly smash garlic cloves with the side of a large knife to loosen the skins. Peel; cut the large ones in half.
  • Sprinkle chicken with 1/8 teaspoon salt and pepper.
  • Heat oil in a medium skillet over medium heat. Add the garlic and cook, stirring, until beginning to brown, about 2 minutes. Remove to a plate with a slotted spoon.
  • Add the chicken to the pan and cook until browned on one side, about 5-6 minutes. Turn it over and return the garlic to the pan.
  • Add wine and cook for 1 minute.
  • Whisk broth, mustard, flour and the remaining 1/8 teaspoon salt in a small bowl.

  • Cut the chicken leg quarters into thighs and drumsticks (see Note 6). Pat dry thoroughly with paper towel and transfer into a tray. Rub the chicken pieces with the 2 tbsp oil and season both sides with sea salt.
  • Heat the Dutch oven over medium-high heat. When it is hot (water sprinkled into the pot should sizzle and evaporate immediately), add in the chicken, skin side down, in a single layer without touching each other and sear until the skin is golden, about 2 to 3 minutes. The skin should not stick to the pot if it's browned well enough. Flip and sear on the other side for another 2 minutes. You may have to hold the chicken drumsticks with a pair of tongs so that it browns all over. Once golden on all sides, remove chicken onto a plate and set aside. If you are making a bigger batch of the recipe, sear the chicken in batches, if needed.
  • Lower the heat to medium-low. Add in a bit more oil if needed, then saute the onion until softened, about 1 minute. Add in carrot and celery to saute briefly. Stir constantly so the vegetables don't burn, lowering the heat if necessary. Add in 60ml (1/4-cup) of the wine and bring to a boil to deglaze the pot. Simmer until half of the liquid has evaporated off. Turn off the heat.
