Easy Calamari Recipe with Garlic Lime Sauce image

Easy skillet calamari recipe, cooked in a light garlic lime sauce finished fresh dill. Great for dinner or as a warm appetizer, see serving suggestions.

Extra Virgin Olive Oil (I used Private Reserve Greek olive oil)
Unsalted butter
10 garlic cloves, roughly chopped
1.5 lb calamari, sliced into rings
2 to 3 tbsp white wine
Juice of 1 1/2 limes
Salt and pepper
Pinch cayenne pepper, optional
3 tbsp chopped fresh dill

Steps:

  • In a large cast iron skillet, heat 1/4 cup of olive oil and 1 tbsp of unsalted butter. Turn heat to medium-high and add the garlic, saute briefly, tossing regularly, until fragrant (this should take seconds, garlic should only gain a little color, do not burn it.)
  • Pat calamari dry and add to the pan, cook for 1 to 2 minutes over medium-high heat (calamari will release some liquid.) Add white wine and lime juice. Cook briefly to warm though (do not overcook or calamari will turn rubbery. You are just looking for the sauce to warm through) Season with salt and pepper. If you like a little spice, add a pinch of cayenne.
  • Finally, stir in the fresh dill. Remove from heat and serve (see serving suggestions in notes)

I love light sauces over pasta and came up with this one with squid to go over taglierini. I usually have on hand either fish or clam base and would substitute a broth for water. This goes good with a loaf of Italian bread for dipping into the sauce.

2 tablespoons extra-virgin olive oil
1 rib celery, minced
½ shallot, minced
4 cloves garlic, minced
½ cup water
½ cup white wine
¼ cup lemon juice from concentrate
1 (1.6 oz) package dry garlic and herb sauce mix (such as Knorr®)
1 tablespoon basil pesto
10 ounces calamari rings
½ cup frozen peas
1 tablespoon capers
1 pound taglierini pasta
salt and freshly ground black pepper to taste

Steps:

  • Heat oil in a saucepan over medium heat. Stir in celery, shallot, and garlic, and cook and stir until lightly browned, 7 to 10 minutes. Blend in water, wine, lemon juice, sauce mix, and basil pesto. Bring to a boil. Reduce heat and let simmer, stirring occasionally, for 10 minutes.
  • Stir calamari, frozen peas, and capers into the sauce. Continue to simmer until squid is opaque, checking frequently to avoid overcooking, about 15 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook taglierini pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 6 to 9 minutes. Drain.
  • Season calamari mixture with salt and pepper. Serve over cooked pasta.

3 cloves garlic, minced
2 limes, juiced
1/4 cup extra-virgin olive oil, plus extra for grilling
1/2 teaspoon ground cumin
Generous pinch ground turmeric (about 1/8 teaspoon)
Generous pinch store-bought or homemade garam masala, recipe follows
Pinch of red chile flakes, optional
Kosher salt and freshly ground black pepper
1 pound baby squid (tubes and tentacles), cleaned
1/2 lemon, juiced
4 cups baby arugula, washed and dried completely
1 large nectarine, pit removed and quartered
3 large cinnamon sticks (if you have the kind you get at Indian stores, it's about 3 tablespoons of cinnamon bark bits)
3 tablespoons whole cloves
1/4 cup green cardamom pods, shelled, husks discarded (about 2 tablespoons of seeds)
4 large black cardamom pods, shelled, husks discarded (about 1 tablespoon of seeds), optional

Steps:

  • For the dressing: Place the minced garlic cloves on a cutting board, then sprinkle with kosher salt. Using the back of your knife, mash the garlic to form a paste. Add it to a bowl with the lime juice, 1/4 cup oil, cumin, turmeric, garam masala and red chile flakes, if using. Whisk together, then season with salt and pepper, if necessary. Remove 3 tablespoons of the marinade and set aside for the squid.
  • For the squid: Heat up a large grill pan over high heat. Don't put anything on the grill until it's screaming hot! That will prevent the excess sticking.
  • Meanwhile, place the lemon juice in a large salad bowl and whisk in a pinch of salt and a few grinds of pepper. Add the arugula and toss to lightly coat. Transfer to a serving platter.
  • Drizzle the nectarine slices with olive oil, and lay them on the grill, turning every minute or so until the fruit have nice grill marks all over. Remove them to a plate. Pat the squid dry with paper towels, if necessary, and add to the reserved marinade. Toss to coat. Shake the calamari of the excess marinade, and place the tubes and tentacles on the hot grill, cooking about 3 minutes per side. If the squid sticks, wait another 30 seconds or so. When it's well-seared, it will release!
  • Remove the calamari from grill, and slice the calamari tubes (bodies) into rings. Add rings and tentacles to the bowl of reserved dressing and toss well to coat. Arrange the nectarine wedges and calamari on the platter, over the bed of arugula. Drizzle the remaining dressing over the bowl, as desired, and serve.
  • Combine the cinnamon sticks, cloves, green cardamom seeds, black cardamom seeds, if using in a spice grinder or coffee grinder and grind until fine. Store the spice mix in an airtight container away from direct sunlight.

2 beaten eggs
1 cup chopped garlic
1/4 cup jalapeno pepper, seeded and diced (1 tsp. red chili flakes can be substituted)
1/4 cup cilantro, finely chopped

vegetable oil, as needed
1/2 cup water
1 cup brown sugar
1/2 cup rice vinegar or 1/2 cup white vinegar
3 tablespoons chopped garlic
3 tablespoons garlic and red chile paste
kosher salt, as needed
cornstarch, as needed

Steps:

  • For Calamari:.
  • Put sliced squid in the eggs, drain excess eggs and put into seasoned flour.
  • Shake off excess flour and deep fry until brown and tender.
  • In a heated sauté pan, sauté garlic, pepper, and cilantro and add fried squid. Seasoning as needed.
  • Served with sliced lemons and/or Sweet Garlic Sauce.
  • Garlic Sauce:.
  • Combine water and vinegar and bring to a boil.
  • Add the brown sugar, garlic, chili garlic paste, salt into the heated liquid and allow to simmer.
  • Thicken with the cornstarch slurry.

3/4 pound Fresh Taglierini or 3/4 pound good-quality dried taglierini or fettuccine
1 1/2 pounds sea scallops
For beurre blanc
1/2 cup dry white wine
3 tablespoons white-wine vinegar
1/4 cup chopped shallots
1 tablespoon chopped garlic
2 teaspoons chopped fresh rosemary leaves
1/2 cup heavy cream
1 stick (1/2 cup) cold unsalted butter, cut into pieces
1 tablespoon fresh lemon juice, or to taste
2 tablespoons vegetable oil
Garnish: finely chopped fresh rosemary and parsley leaves

Steps:

  • In an 8-quart kettle bring 7 quarts of salted water to a boil for pasta. Remove tough muscle from side of each scallop if necessary.
  • Make beurre blanc:
  • In a small heavy saucepan simmer wine, vinegar, shallot, garlic, and rosemary until reduced to about 2 tablespoons. Add cream and simmer until liquid is reduced by about half. Add butter all at once and cook over moderately low heat, swirling pan constantly, just until creamy and butter is incorporated. (Sauce must not get hot enough to liquify. It should be the consistency of hollandaise.) Remove pan from heat and stir in lemon juice and salt and pepper to taste.
  • Pat scallops dry and season with salt and pepper. In a 12-inch heavy skillet heat 1 tablespoon oil over moderately high heat until hot but not smoking. Arrange half of scallops, without crowding, in skillet and cook, undisturbed, 1 to 2 minutes, or until undersides are golden brown. Turn scallops over and cook, undisturbed, 1 to 2 minutes, or until undersides are golden brown. Transfer scallops to a bowl and keep warm. Cook remaining scallops in remaining oil in the same manner.
  • Cook pasta in boiling water until al dente (about 30 seconds for fresh, longer for dried) and drain in a colander. Transfer pasta to a heated bowl and pour sauce through a fine sieve onto pasta. Add any liquid accumulated in bowl of scallops and toss.
  • Divide pasta among 6 heated plates. Arrange scallops on top of pasta and garnish with herbs.

I used to make this all the time and I'd forgotten all about it. This recipe is delicious. You can easily double this if you want to. It makes a great dinner, but also a great 1st course if you have company coming. Takes just minutes to make. It's from 1996 Bon Appetit. I'd serve it with garlic bread and a nice mixed salad. You are going to need to reserve some of the pasta water, so don't forget! ;-)

1/2 lb linguine
4 rolled anchovies over capers, from 2-ounce tin, anchovies crushed
oil, reserved
1/2 lb cleaned calamari, thinly sliced crosswise (squid)
3 large garlic cloves, chopped
1/4 teaspoon dry crushed red pepper (or more to taste)
3/4 cup dry white wine
1/2 cup thinly sliced fresh basil leaf

Steps:

  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain pasta, reserving 1/2 cup cooking liquid.
  • Meanwhile, heat reserved oil from anchovies (about 2 tablespoons) in large skillet over medium-high heat. Add calamari and toss just until opaque, about 1 minute. Add garlic, crushed red pepper and crushed anchovies with capers and stir 1 minute.
  • Add white wine; boil until sauce is slightly reduced, about 3 minutes. Mix in basil.
  • Add pasta to mixture in skillet. Toss until heated through and sauce coats pasta, adding reserved cooking liquid by tablespoonfuls if pasta seems dry, about 2 minutes.
