1 pound rainbow trout fillet
Salt and fresh ground black pepper to taste
2 tablespoons butter
2 cloves garlic (minced)
1 teaspoon dill (minced (optional))

Steps:

  • Preheat oven to 375°F.
  • Cut a sheet of foil large enough to wrap the trout completely.
  • Cover the baking sheet with the aluminum foil, and place the trout fillet in the center.
  • Fold up all 4 sides of the foil.
  • Then, season the trout with salt and pepper.
  • Drizzle the melted butter over the trout until evenly coated.
  • Top with minced garlic and fresh minced dill.
  • Fold the sides of the foil over the trout. Cover it completely.
  • Bake for about 13 minutes or until the fish flakes easily with a fork.
  • Then, open the foil, and broil for 3 minutes.

2 8oz portions of trout skin removed
salt and pepper
12 stalk(s) asparagus trimmed
1 large lemon juiced
3 Tbsp butter
4 c garlic minced
1 small onion sliced
parsley for garnish

Steps:

  • 1. Preheat oven 375 degrees. Spray two sheets of foil big enough to cover fish and asparagus with cooking spray. Place 6 stalks of asparagus in the middle of each piece of foil. Season the trout with salt and pepper and place on top of the asparagus. Top the trout with sliced onions.
  • 2. Repeat with the with the other portion of trout, asparagus and onion. Squeeze half a lemon over each piece of trout. Melt the butter with the garlic and pour over each piece of trout.
  • 3. Fold up the foil over each piece of asparagus and trout and bake for about 20 minutes. Serve garnished with parsley.

Rainbow Trout Baked in Foil With Tomatoes, Garlic and Thyme image

My friend Christine always makes salmon prepared this way when I arrive at her home in Provence after my long trip from California. It's a great dish to make when you don't know exactly when guests are going to arrive, as everything can be prepared in advance and the fish can be baked at the last minute. I've adapted Christine's salmon recipe to rainbow trout, which are farmed in a sustainable way and less expensive than wild salmon.

Extra virgin olive oil for the foil
4 small rainbow trout, boned
Salt and freshly ground pepper
1 pound ripe tomatoes in season, peeled, seeded and chopped
2 garlic cloves, minced
1 tablespoon extra virgin olive oil
4 to 8 sprigs fresh thyme
Chopped fresh parsley or thyme for garnish
Lemon wedges for serving

Steps:

  • Preheat the oven to 450 degrees. Cut 4 sheets of heavy-duty aluminum foil, or 8 sheets of lighter foil, into squares that are 3 inches longer than your fish. If using lighter foil, make 4 double-thick squares. Oil the dull side of the foil with olive oil and place a trout, skin side down, on each square. Season both sides with salt and pepper and open them out flat.
  • In a bowl combine the tomatoes, garlic, 1 teaspoon olive oil and salt and pepper to taste. Spoon over the middle of each trout. Place 1 or 2 sprigs of thyme on top, and fold the two sides of the trout together. Drizzle 1/2 teaspoon olive oil over each fish.
  • Making sure that the trout are in the middle of each square, fold the foil up loosely, grab at the edges and crimp together tightly to make a packet. Place on a baking sheet and bake for 10 to 15 minutes, checking one of the packets after 10 minutes. The flesh should be opaque and pull apart easily when tested with a fork.
  • Place each packet on a plate. Carefully cut across the top to open it, taking care not to let the steam from inside the packet burn you. Gently remove the fish from the packet and pour the juices over. Sprinkle with parsley or thyme and serve, passing the lemon wedges.

You can make this speedy dish casual and after-work-friendly or fancy enough for company. It all depends on how you garnish it. Using trout or salmon roe turns it into something quite deluxe, with the small pearls of caviar popping in your mouth. But a sprinkling of saline capers is nearly as delicious, at a fraction of the cost. No matter which you choose, the fish itself a snap to prepare. The butterflied whole trout broils up in under five minutes. After that it's smeared with a garlicky compound butter, which melts into a fragrant, savory sauce. Serve this dish with boiled new potatoes, crusty bread or rice to catch all the buttery juices.

4 whole trout, butterflied
Fine sea salt, to taste
1 garlic clove, finely grated or minced
1/2 teaspoon fresh lemon or lime juice, more to taste

Steps:

  • Heat the broiler. Place trout, skin side down, on a rimmed baking sheet. Sprinkle with salt.
  • In a mini food processor, or using a mortar and pestle or a bowl and a fork, stir together garlic, lemon juice, pepper and a pinch of salt. Add softened butter and chives and mash or process until well mixed.
  • Broil trout until just opaque, 2 to 5 minutes depending upon your broiler.
  • Drop spoonfuls of butter on top of the fish; it will melt immediately. Top with more chives and with roe or capers, and a little more lemon juice if you like.

Steps:

  • Combine marinade ingredients and pour over trout that are in single layer glass or other non metal dish. cover and refrigerate a minimum of 30 minutes.
  • Place butter and other ingredients in bowl and mix together with a fork until well blended.
  • Over hot coals or medium heat grill place trout and cook 3-4 minutes per side, turning only once.
  • Serve immediately with butter.

This is one of my mom's recipes so it's better than good . . . it's the best.

Yield 4 servings

Number Of Ingredients 14

2 tablespoons EVOO (extra-virgin olive oil)
1 teaspoon fennel seeds, 1/3 palmful
4 garlic cloves, chopped
1 shallot, sliced
2 pounds haddock fillets
Salt and black pepper
2 tablespoons capers, drained
1 14-ounce can diced tomatoes
2 tablespoons balsamic vinegar (eyeball it)
1/2 cup fresh basil, 10 leaves, torn or shredded
1/2 cup clam juice
Crusty bread, for mopping
1 pound thin asparagus, tough ends trimmed
Juice of 1/2 lemon

Steps:

  • Preheat the oven to 400°F.
  • Heat a large ovenproof nonstick skillet on the stovetop over medium heat. Add 1 tablespoon of the EVOO to the pan, once around the pan. Add the fennel seeds, garlic, and shallots to the pan and cook for 2 minutes.
  • Rinse the fish fillets and pat them dry. Season the fish with salt and pepper, and set aside.
  • In a small bowl, combine the capers, tomatoes, the remaining tablespoon of EVOO, the balsamic vinegar, basil, and clam juice. Add the mixture to the skillet and cook for 2 to 3 minutes. Slide the fish fillets into the pan. Spoon the sauce over the fish and transfer the skillet to the oven. Bake the fish for 15 minutes, or until cooked through, adding the bread to the oven to warm through for the last minute or two.
  • While the fish cooks, boil the asparagus in an inch of water for 3 minutes, then drain and dress it with a little lemon juice and a pinch of salt.
  • Serve the fish with lots of juice for mopping up with crusty bread and the asparagus spears alongside.

SHEET-PAN TROUT WITH GARLICKY BROCCOLINI



Sheet-Pan Trout With Garlicky Broccolini image

The benefits of cooking trout in its whole, butterflied form go beyond visual appeal - the large piece drastically reduces the risk of overcooking, and the longer roasting time gives other vegetables on the pan, like wispy broccolini (or smashed boiled potatoes, or halved cherry tomatoes), a chance to crisp up. Once the pan is out of the oven, spoon over a punchy dressing made from raw garlic, smoky Aleppo pepper and fresh lemon juice, and let the residual heat mellow and meld the flavors before serving. Most grocery stores sell trout already butterflied (it's the most common ready-to-buy preparation), which saves you the extra step of trying to figure out how to do it yourself. If not, ask and they will happily oblige.

  • Serve directly from the sheet pan (no shame, just use a trivet). Alternatively, transfer trout to a large serving platter or divide fillets among 4 smaller plates.

1 pound medium asparagus
2 tablespoons unsalted butter
1 tablespoon minced shallots
1 1/2 cups heavy cream
1 smoked trout, skinned, boned and broken in chunks
Salt and freshly ground black pepper
1 teaspoon fresh lemon juice
1 pound fresh fettuccine
1 tablespoon chopped fresh dill

Steps:

  • Snap the ends off the asparagus where they break naturally. Peel the spears. Cut the asparagus in one-inch lengths.
  • Place the asparagus in a steamer or a pot of simmering water and steam or cook about three minutes, until they are just tender and still bright green. Refresh the asparagus under cold running water. Dry them well.
  • Bring a large pot of water to a boil.
  • Meanwhile, melt the butter in a large skillet. Add the shallots and saute over low heat until soft but not brown, about three minutes. Stir in the cream and simmer about five minutes, until the mixture starts to thicken. Add the trout and the asparagus. Remove from heat and season to taste with salt and pepper. Stir in the lemon juice.
  • When the water is boiling, add the fettuccine and boil about three minutes. Drain well and transfer to a warm serving dish. Reheat the contents of the skillet and pour over the fettuccine. Toss well. Scatter the dill on top and serve.
